🍆🌱In case you’re interested on how we eat a plant based diet in the van! 🌱🌶I must eat small meals often, but every person is different. Ed prefers to eat more, but less often. Also, each day I try to listen to what my body needs, but I like to make a general guideline the night before. I try to keep in mind food combining (not mixing proteins + starches, fruit only with seeds), drink water in between not during meals, and bouncing between protein + veggie meals, starch + veggie meals, and 2 pieces of fruit.  Obviously easier said than done 😝. For my sugar levels, fruit is eaten best for me with a few seeds or pecans (or sometimes the whole bag lol). I also do eat fish 3x a week, but I’m hoping to eliminate that, and it’s obviously hard to eat quality fish in a van! Last, I aim for a variety of colors and unique organic/local veggies,fruits,nuts, and seeds. *soak buckwheat/lentils the night before 
Breakfast 7:30:  buckwheat overnight bowl, chia seeds
Snack 10:30: fruit + seeds and shake

👉Reduce your calorie intake if you have to stop exercising for a longer time to prevent gaining weight during your recovery phase .
👉Keep your protein intake high to prevent loss of muscle mass and support wound and tissue healing .
👉Keep your fruit and veg consumption at a good level to ensure you get a good amount of antioxidants to support you against the inflammatory response that follows an injury (supplementation is not advised as it may blunt the body’s own ability to adapt and recover) .

CHICKEN DUM PUKT BIRYANI.....made at slow heat with providing dum to it which means it's simmered on low flame with container's top sealed with a thick layer of whole wheat dough. It takes time to cook this version of Biryani....but trust me it's worth an effort. All the flavours get beautifully mixed and compliment the taste.

Recipe of DUM PUKT  BIRYANI
.
1. Boiled pre soaked rice and kept aside.
2. Cooked chicken in Onion Tomato Masala.
3. Took one big karahi/ Container and spread ghee/ clarified butter all over.
4.Made a layer of rice on bottom and spread chicken layer on it.
5. Spread few chopped coriander leaves and poured pre soaked saffron/ kesar strands in lukewarm milk.
6. Added another layer of rice followed by chicken . Sprinkled little Garam masala.
7. Spread another layer of rice , chicken and poured saffron containing milk.
8. No of layers depends on amount of rice and chicken but the top layer should be of rice.
9. Garnished this layer with chopped coriander, chopped ginger slices, roasted Zeera powder/ cumin powder and chopped green chillies.
10. Now closed the container with lid and sealed with dough.
11. Let it simmer on tawa kept on low heat for good 30 minutes. Served hot.

(a play off on yesterday’s post- why not stick to the morning routine topic since I’m getting back into mine this week 🎉) so here’s my simple, yet impactful tip... because I know many who struggle to prioritize eating in the hectic/rushed first hours of the day (myself included🙋‍♀️) however, I think it sets an important mindset for the day - to take care of yourself- starting with fulfilling one of your most basic needs, food. 
EAT BREAKFAST! Think of breakfast as literally a way to break-the-fast that your body is in from a night long sleep💤 if you think about it, from the last point you eat the night before- until breakfast, that can be up to around 12+ hours that it’s been since you’ve had something to eat 😱 meaning our bodies are ready for food when we wake ☀️ remember, food is our “fuel” source - we don’t want to be running into our days tasks on E. (or in hangry mode 😅🤦‍♀️). It feels so much better when your body is being properly nourished and cared for versus being in a semi- starved state. & your body will appreciate the reminder that you are going to feed it & nourish it today. This toast, is an example that breakfast doesn’t have to be elaborate to be nourishing and energy providing. It’s a quick, easy, yummy,😋 & a realistic breakfast option for my early mornings.
