Truth moment.. I used to hate cooking.. I don’t mean dislike, I mean... the thought of moving out of my parents house and having to cook for myself for my WHOLE LIFE! gave me anxiety... yes, I was a bit of a drama queen... but seriously... cooking is so time consuming, and there were like a million other things I’d rather be doing then be in the kitchen.... but... when I turned 20 and moved out, I had to start adulting... which meant cooking 🙄... After lots of practice, screwing stuff up, taking tips from my mum, and mother in law, I actually started to get good at it... I used to think, “how the heck to people just “throw stuff together” and have it taste good”... and now that’s me 😂. I spent some time following recipes, and now I usually just make stuff up, or make healthier versions of recipes I find 🤷🏼♀️. About a year ago I decided to actually start writing down recipes that I came up with, so I could repeat things that turned out to be delicious... .
These chicken cheese balls were one of those delicious inventions.. I’m glad I wrote this recipe down, because this picture I took about a year ago has me wanting to make them again.
They’re also great for paleo and keto diets!
To make 30 of these little ones, get a big bowl and mix together:
400g ground chicken
85g cooked spinach (let thaw, and drain, if using frozen)
1/2 cup egg whites
1/4 cup finely chopped red onion
1/4 cup tzatziki (homemade or store bought)
1/2 cup whole wheat Panko crumbs
90g cheddar cheese (or dairy free alternative)
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
Bake at 400 degrees for 20-24 minutes
Macro count: 35 calories P5/F1/C2
When in doubt, make a salad! 🥗
Balsamic Tomato 🍅 Chicken Salad
Makes 5 servings
Per serving with 2 teaspoons dressing
1 Leaner protein serving
1 ¼ vegetable servings
1 ½ condiments
• 12 ounces cooked chicken breast meat, shredded
15 ounces cooked chicken dark meat, shredded
• 1/4 cup chopped green onions
• 1 cup chopped fresh cilantro
• 1 red pepper sliced into thin strips
• 1 yellow pepper sliced into thin strips
• 1 large tomato seeded and diced
• 2 tablespoons toasted sesame seeds
For The Dressing – 2 teaspoons count as one fat
• 1/2 cup balsamic vinegar
• 2 packets Splenda or Stevia
• 1/2 teaspoon ground cumin
• Salt and cracked black pepper
• 3/4 cup extra virgin olive oil
Put the shredded chicken in a large bowl making sure the pieces aren't to large.
Add the green onions, cilantro, red peppers, yellow peppers and tomato.
In a blender combine the balsamic vinegar, splenda, cumin, salt and pepper.
Blend on high speed and slowly add the olive oil until it starts to thicken slightly.
Add about half of the dressing to the chicken and toss well.
Add more dressing if you prefer.
Taste and season with more salt and black pepper if desired.
Transfer to a large serving bowl and sprinkle with the toasted sesame seeds.
Serve at once.

Enter... my spinach quesadilla on a @bfreefoods tortilla. Sometimes I add some @beyondmeat crumbles (not because I’m a vegetarian, but because it is quick protein), pop it all assembled into the micro for about 1 min 30 sec. Depending on my mood, I top with salsa or my fave marinara sauce.

Wanna hear Penny's cute bark? She has been trying to get me to feed her dinner for the past hour. After distracting her with playtime, she started to get stir crazy. I wanted to capture some of her playful behavior and just happened to catch the rare Penny bark! (I usually do not feed her right away if she barks at me for food... But, I was kind of teasing her into a frenzy to get a cute vid.😂) Apologies for the dark video. Penny gets stage fright when you turn the flash on. lol

Pret a Manger - 'Pret's Christmas Lunch'
This Christmas sandwich was the first on our list because we had very high hopes for it. If you're sneaky and have scrolled to the rating you can see we were not disappointed!! To begin with aesthetics: for a pre-packed sandwich, Pret have clearly done us justice in the filling department, its a chunky sarnie and like me on a Monday it is pushed right to the edge. Requires a good chomp to eat, it's not for the small or meek mouthed. On that note it can be a slightly messy affair and requires a good solid grip on it or she'll get away from you, but we shan't be descriminating on that. If anyone did cast judgement at a "too full" Christmas sandwich then they would be no friend of mine.
The orange and cranberry sauce is just delightful, and a constant throughout, not to say it's overbearing because it isn't, think of it like Pimm's in summer: always there, and the best addition to any meal. Tangy yet sweet, it coats everything inside the sandwich in what can only be described as a hug.
What I believe to be the star of the show is the sausage stuffing, there is lots of it and yet you still want more. It is soft in texture but cleverly juxtaposed with crispy onion.
As you can see pictured there's spinach in the sandwich, which from my stance doesn't add anything but maybe, perhaps, possibly could be seen to add a small addition to texture and makes the offering look healthier on the shelf. Could happily live without.
The bread. Oh the bread! It's soft like a pillow but adorned with seeds to add even more texture as if they haven't given us enough with this masterpiece!! We detected an irregular (but exciting) taste here, could perhaps be onion bread. Either way. Top marks for bread.
Overall rating: 8/10.
Would I recommend to a friend? Yes.
Would I ditch the spinach? Yes.
Will we find a better sandwich this year? We will see.
