I am always on the lookout for recipes where I don't have to use refined sugar AT.ALL! Stevia is fine, but natural is best, and when it tastes this good you will know what I mean😊
I plan on turning slices into Baked French Toast in the morning😋 Since it is a moist bread, baking it helps it to be stabalized as it cooks vs. Trying to flip it!
So you'll need:
4 medium bananas, very ripe
4 lg eggs
1/4 cup butter, melted
1/2c almond butter
1/2 c coconut flour
1tsp baking soda
1 tsp baking powder
1 1/2tsp vanilla extract
1/4tsp sea salt
350 oven*greased and parchment lined breadpan (9×5 or if smaller cook extra 25 min)
Cream 1st four ingredients in stand mixer or hand mixer. Add the rest. Mix well till smooth.
Bake 45min, or if smaller pan 25 extra minutes till middle is set. Cool 40 minutes then lift out parchment paper. Cut with a serrated knife!
To make french toast, make usual batter, dip in egg mixture then coat in a dry mix (can use shredded coconut)
Coating is optional but adds texture!
Bake 15 min in 350 oven
