Yum! Cabbage Lasagna🥬
3/4 pound cabbage or 3 1/2 cups, leaves separated (7 Greens)
1 cup leeks, chopped or 2 Greens of your choice such as mushrooms, zucchini, sweet peppers, tomatoes, etc (2 Greens)
2 cloves garlic, minced (2 Condiments)
1 1/3 lb. ground turkey or beef, uncooked (3 Leans)
1 (28-oz.) can crushed tomatoes (7 Greens)
1 tbsp. balsamic vinegar (3 Condiments)
1/4 c. torn basil leaves (1/2 Condiment)
1/2 tsp Kosher salt (2 Condiments)
1/2 tsp Freshly ground black pepper (1 Condiment)
2 c. part-skim ricotta (2 Leans)
2 eggs, beaten (2/3 Lean)
1/4 c. grated fresh Parmesan (4 Condiments)
2 1/3 c. shredded reduced fat mozzarella (2 1/3 Leans)
Preheat oven to 350°. In a large skillet over medium heat, heat oil. Add leeks or veggies of your choice and cook until leeks are soft, about 5 minutes. Stir in garlic and ground turkey or beef, breaking up meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes; drain excess fat. Add crushed tomatoes and balsamic vinegar. Bring mixture to boil then reduce heat and simmer for 20 minutes. Season with salt and pepper then stir in basil.
In a medium bowl, combine ricotta, eggs, and Parmesan.
Grease a large baking dish with olive oil. Spoon a thin layer of sauce into bottom of baking dish. Add a layer of cabbage leaves, then top with more sauce, ricotta mixture, and mozzarella. Repeat layering twice more.
Bake until cabbage is tender and mozzarella is bubbly, about 25 minutes. Garnish with more basil.
Yield 8 servings

Step 3: Stuffing!
Don’t get me wrong, I love a good bread #stuffing
But with so many people avoiding gluten, I typically make #glutenfree recipes when I’m hosting. .
Make this once the carrot and sweet onion potato casserole is done. Your chicken and fennel should be almost ready, or resting. .
I made it using ground turkey, because that’s what I had on hand, but I bet this would be great with ground pork or chicken too!
✨ 1 lb ground turkey
✨ 1 tbsp avocado oil
✨ 1 onion, finely diced
✨ 1 medium sized potato, grated
✨ 1/4 cup #epicure chicken broth
✨ 1 tbsp Epicure sage and apple stuffing seasoning
✨ 2 macintosh apples, diced
✨ 1/4 cup raw sunflower seeds
✨ salt and pepper to taste
✨ saute the onion and potato in the avocado oil until the onion starts to brown
✨ add ground turkey and break apart with a spoon while cooking
✨add broth, apples and seasonings when turkey is almost cooked, and stir until the broth has evaporated, then add pumpkin seeds
