It was wet and cold, I didn’t train enough and it was above all a mental challenge to keep going till the end. Happy fall! It’s officially fall as of a few days ago and I thought I was going to be sad about summer ending, which I kinda am, but I’m also totally loving the crisp, cool air and cozy sweaters. There’s something magical about the seasons changing. It feels like a fresh start.
And with this fresh start usually comes a new wave of busy-ness. Does anyone else feel this way? I know for me fall means school, which means my schedule is a lot more packed and I have way less time to cook. So I need simple, easy, filling, and satisfying meals to eat, preferably that can be taken on-the-go. Aka peanut butter and figs on quinoa toast.
Details —> •toast any bread or base of your choosing, I’ve been super into this quinoa bread from @traderjoes •top with peanut butter, or any nut butter you love •slice fresh figs and place on top •add any other toppings you want (I add cinnamon, hemp seeds, and sometimes a drizzle of honey if I want to add sweetness)
I love this combo so much that I think I’ve eaten it 3/5 days this past week. You get all macronutrients and it keeps you feeling full for a while. Perfect for all my fellow fall busy bees 👌🏼🐝
