I have been 😷🤧sick since Thursday night and really needing comfort foods. So, portioned, homemade saimin with wontons it was. I made soooo many that I froze two separate baggies of wontons for other meals later! -------------------------------------------------------------

‼️Do Carbohydrates cause Weight Gain?‼️ With all the bad press about carbohydrates , Im going to shed some light on this question.

The simple answer is NO! eating carbohydrates in moderation and providing it fits in with your recommended calorie intake then they will not cause weight gain. However eating TOO MUCH carbohydrates or any other macronutrient (fats and protein) can lead to weight gain. 
Weight gain is caused by an excess of calories to energy expenditure. Weight gain can be due to too many calories from any food in excess of energy expended through exercise.

One gram of carbohydrate provides your body with 4 calories. Eating more calories than what your body needs of any macronutrient - carbohydrates, protein or fat - will cause you to gain weight. In order to maintain a healthy body weight, regular exercise is recommended and carbohydrates are the preferred source of energy used during physical activity.

Be wise when choosing ALL foods, and in particular, consume high quality carbohydrates such as those contained in plant-based foods such as fruits, vegetables, beans and grains. Also make room for the carbohydrates contained in dairy, as they bring a good amount of nutrients to your diet. Combine those foods with appropriately portioned lean protein foods and healthy fats. 
Minimise your intake of high carbohydrate foods that provide little to no nutrition like high sugar or highly refined grains, breads, cereals and baked goods (cakes, pastries etc). Also be aware of the your portion sizes as too often we are unaware of the portion size of the foods that we are consuming. 
Calories from drinks also need to be taken into consideration.  Fizzy drinks, alcohol and many hot beverages are high in calories, carbs, and fats and need to be taken into account when analysing our calorie intake. 
The take home message here is that Carbs are not the enemy!! The fact of the matter is that as a society we eat to much carbohydrates and the wrong types of carbs and fats, and many of us are unaware of portion size.  Live by the 80-20 rule, if you are good 80% of the time we are allowed a treat, everything in moderation. 💪

HOMEMADE MUESLI
Did you know that oats are a superfood? 
They are 100% wholegrain, contain vitamins & minerals and are a great source of fibre. Oats have a low glycemic index and are a complex carbohydrate, which means that a bowl of muesli will provide a slow and steady release of energy to your body.  This will help to regulate your blood sugar and can curb cravings by keeping you feeling fuller for longer.

Ingredients: 
1 cup Oats 
½ cup Activated Almonds (roughly chopped)
½ cup Activated Cashews (roughly chopped)
½ cup Shredded Coconut or Coconut Flakes
½ cup Goji Berries
1/3 cup Pepita Seeds
1/3 cup Chia Seeds
4 tbsp Linseeds
2 tsp Cinnamon
¼ cup Cold Pressed Extra Virgin Coconut Oil 
Method:
1. Combine all ingredients in a large bowl.
2. Spread the mixture evenly over a large baking tray and place in the oven for 10 minutes at 200 degrees.
3. Check the oats after the first 5 minutes and mix with a spatula to make sure they don’t burn.
4. Once the oats are golden and crunchy remove from the oven and allow to cool.
5. Store in an air-tight glass jar.

Tips:
My favourite way to enjoy a bowl of muesli is with almond milk, coconut yoghurt and toppings of fresh seasonal fruit and bee pollen!

Oats have a low glycemic index and are a complex carbohydrate, which means that a bowl of muesli will provide a slow and steady release of energy to your body. This will help to regulate your blood sugar and can curb cravings by keeping you feeling fuller for longer. Ingredients: 1 cup Oats ½ cup Activated Almonds (roughly chopped) ½ cup Activated Cashews (roughly chopped) ½ cup Shredded Coconut or Coconut Flakes ½ cup Goji Berries 1/3 cup Pepita Seeds 1/3 cup Chia Seeds 4 tbsp Linseeds 2 tsp Cinnamon ¼ cup Cold Pressed Extra Virgin Coconut Oil Method: 1. Combine all ingredients in a large bowl. 2. Spread the mixture evenly over a large baking tray and place in the oven for 10 minutes at 200 degrees. 3. Check the oats after the first 5 minutes and mix with a spatula to make sure they don’t burn. 4. Once the oats are golden and crunchy remove from the oven and allow to cool. 5. A couple weekends ago I had the honor of throwing a baby shower for my sister and sweet niece-to-come. I put on my party planning/catering hat took the Peter Pan theme and took off in a dead sprint. It was a huge privilege to do, and I loved every minute of it. Granted, it took me a good week to recover, but the pictures and edited and the recipes are written so I can’t wait to start sharing them with you. The best thing about these recipes is not only how easily they are, but how all of them would be excellent appetizers and/or mini desserts for your Thanksgiving spreads next week! This cake was the thing I was most proud of though. Any picture I was in, I made sure the cake was in it too. Not even close to sorry about it either! Watching the food disappear as the room filled up with pink onesies and pandas made this a special experience I can’t quite get over. 26 days ago my favorite pair of jeans was a size 14. Yesterday I was wearing a very cute size 11! I had 3 pairs of size large leggings, had to buy 2 more size mediums and they are now too big! My size Medium shirts are now loose as well! But for those of us that have a love/hate relationship with our scale, we can be deceived about the progress that is happening. 
THE TWO WEEK CHALLENGE STARTS TODAY THOUGH!!! October has been my month! Smaller jeans, medicine free, quit smoking and vaping HEALTHY! HAPPY!!! But for those looking to shed those pounds, lets see what happens when I really put forth some effort!!! GUT HEALTH MATTERS! It is the 2nd brain!

Can’t rate @readingeggs highly enough. The girls love it and ask everyday to move on. I’m pretty strict with screen time and so we limit it to about 3 times a week but it’s all they’d choose and they’re now onto the second map. They know all their sounds and are now blending to start reading. It’s quite exciting to watch them learn like this as it’s not something I’d have previously considered.

It's all in the prep: knew that I would finish later than usual today due so prepped the Meatballs sauce yesterday and it's been slowly cooking in the Instant pot all day.
All I had to do was to changed the settings to "sauté" for 30 mins and cooked some wholewheat tagliatelle, et voilà!!

While everyone is putting up Christmas trees, I am over here working on my pie game for our Friendsgiving 😋. I love pumpkin pie, especially mini’s. These are super easy to make, and less the calories of a traditional slice of pie....unless you grab three or four....then its the equivalent 😜

As for the “fancy” whipped cream, simply use a ziplock bag with a decorating tip (you can find them @michaelsstores by @wiltoncakes )top with sprinkle of cinnamon. This is based on a classic spinach/rice dish we make in Greece, and I pretty much just replaced rice with cauliflower cause I really like the flavour. This is great when you want a nice comforting bowl of yummy food but also want to fit in your jeans by the end of the week. I use all washed packaged veggies here so it’s super easy and quick, vegan ( if you don’t add yogurt at the end) and super healthy. - 2 bags of washed organic spinach - 1 bag or organic cauliflower rice - 1 bunch of spring onion finely chopped - 1 bunch of dill, washed, stemmed and finely chopped - Juice of half a lemon ( or more if you like) - 3/4 cup of olive oil 
You can add a dollop or Greek yogurt, some crumbled feta, pine nuts and/or pepper flakes at the end if you wish.

🥦The way I see it is, in the world of whole foods the top two sources of protein per calorie is chicken breast and shrimp. The thing about shrimp though, it's not as filling as chicken breast. Eating 130g of shrimp I'm hungry by the next few minutes.

This really hit home for me today. Now that my body is finally starting to change and people are beginning to notice and comment on it, I’m having a lot of trouble catching up mentally. Every time someone says I look like I’ve lost weight, my automatic response is “it’s just the angle of the mirror” (sorry, @melissahoffies). I’ve become so conditioned to hating how I look and attributing any picture I like to a trick of the camera, that learning how to appreciate and love my body is really a struggle. Confidence is easy to portray through a caption on Instagram. It’s a lot harder to show you guys the breakdown I had in the dressing room last night when a pair of pants didn’t fit or the amount of times I’ve covered my body even from my fiancé, because I’m still not happy with the rolls and pudge. I’m trying to get there. I’m trying to look in the mirror and feel grateful for my body and the lengths to which I can push it in the gym. I’m trying to see the muscles developing and the way new clothes now hug my curves. But it’s a journey. Mentally and physically. I’m trying to love myself as I am, honestly. But I’m not perfect and it doesn’t happen overnight. Loving your body doesn’t come with weight loss, and that’s a realization I’m still adjusting to. .

Carbohydrates are what affect a diabetics blood glucose (BG). “Sugar free” can be put on a food label if the food doesn’t contain any sucrose or sucralose (table sugar). However, a sugar-free food may contain complex carbohydrates, fructose (fruit sugar), and a variety of sugar substitutes such as sorbitol, maltodextrin, maltitol, xylitol, mannitol, lactitol, and isomalt. All of which may or may not affect a diabetics BGs (up to you to figure that out for your self). Any of these sugar alcohols may cause stomach aches or keep you on the toilet longer than you’d like. 💩🚽

Btw, T1ds can eat anything any non-diabetic can, within moderation, as long as they bolus accordingly and time it precisely before consuming anything with CARBOHYDRATES. 🎓

Thats the #luxuraV5 wich uses #UV reflector lamps dat help develop a beautiful golden tan(years ago, i got "burnt" once coz i took the maximum time which was 15 mins 😬😝😂 and No it wasnt at this salon).
So For my package, i was given only 12 minutes. Hopefully by doing this, it will at least give my skin some "color"(Tbh, its abit hard for me to get "dark" or get a nice tan and even when i do get it, for sum reason, it never lasts 🤷🏼‍♀️🤦🏼‍♀️😢😞 dunno why)
