Such a wonderful day today. Sophia had an amazing Christmas PJ and Waffle party this morning which an amazing bunch of girls. Followed by Link’s birthday party with family. We love it when family can get together for happy occasions and just spend time together.
We had a 💯 egg free party so Mr. Link could enjoy all of the food. His favorite thing is Maui from Moana right now so we made him heart of Tifiti Cookies and had all the kiddos decorate Christmas cookies for fun.

Took my mom’s classic gingerbread cookie & turned it healthy(ish). Now I can feast on these without stress! And wow, this cookie smells like Christmas morning!! Only using 1 flour blend (the paleo baking mix from @bobsredmill) which makes this a simple recipe + easy to roll out & cut into fun shapes! 🎄These have a small amount of blackstrap molasses which has so many beauty boosting benefits. OH MY GORSH. Vegan choc orange brownies for your delectation. 🍊🍊🍊 Following last night’s cinnamon and clementine rice success I’m going to put citrus and cinnamon in everything. It’s just so damn Christmassy. 🍊🍊🍊 I’m off dairy and eggs (the baby has a bit of eczema) and needed a treat today. Inspired in part by @minimalistbaker via @gkstories I whipped up these awesome brownies. 🌲Christmassy Brownies 🌲
5 tablespoons oats
1.5 tablespoons coconut oil
7 tablespoons hot water
3 tablespoons peanut butter
2 tablespoons cacao powder
2 large teaspoons honey or maple syrup
1/2 teaspoon orange zest
1 teaspoon cinnamon
1. Soak the dates in the hot water for a few mins.
2. Whizz everything up, including the date water. Add more oats or water if too sloppy or stiff.
3. Spoon into a lined tray and bake at 200 for 12 minutes. (I poked in 4 extra walnuts before popping in the oven as I love crunchy bits! 🍫🍫🍫
This has totally sorted me out and I think I’ll be making these on a regular basis. So quick and easy and relatively healthy! 👏👏👏

Crispy on the outside with a chewy meringue on the inside and piped with lots of smooth @mayversfood peanut butter.
They are so good, you wouldn't even realise these are egg free! .

I mixed up a x12 batch of sourdough biscuits yesterday. This isn’t even half of them. And they taste delicious FYI. They are gluten, dairy, egg, and coconut free. I base my recipe off one from Cultures for Health and then adapt for us.
Starting to make my bran muffins again. Filling, full of fibre, not too sugary, eggless, sort of fatless and potentially gluten free, dairy free and vegan.
2 cups 'all bran' or generic equivalent (check the fibre content and get the higher option)
2 cups milk lite or normal (soy, cows, lactose free...i haven't tried almond milk with this recipe so do that at your own risk). Keep extra on the side.
1/4cup brown sugar
1/2-1 cup chopped dried apricots or dried fruit of choice
1-2 cups sifted self raising flour (haven't tried gf with this so not sure how that will turn out)
Ground cinnamon to taste (optional)
1. Place all bran, sugar, milk, dried fruit in a bowl. Mix well till the bran is soaked through. Leave to expand for 4hrs or overnight.
After soaking. Pre heat oven to 180 degrees c.
2. If the soaked bran looks a bit dry add a little more milk.
3. Add 1 cup flour to start with and mix with a wooden spoon till just combined and no dry pockets of flour left. Here is where you need to eyeball everything and use your judgement. If it's too wet, add more flour. Too dry looking, add more milk. Aim for a thick batter that slowly falls off the wooden spoon. Add cinnamon if using.
4. Grease and line a muffin pan (should have about 12 medium muffins plus extra). Pour mix to pan to 3/4 full.
5. Bake 20-30 mins or until a skewer comes out almost clean. The inside will be slightly gooey but will continue to cook after it leaves the oven.
Good to freeze and be part of a meal prep plan, or to keep things 'moving' if metamucil isn't your jam 😀
