Scones are by far one of my favourite baking treats. Never too sweet, perfect mix or crunch and softness. Like a muffin and cookie combined!
Today I made some delicious scones, and the perfect flavour for fall 🍂 with fresh macintosh apples.
CARDAMOM APPLE CINNAMON PECAN SCONES. 🍎 🍏
1 1/4 cups Buckwheat flour
1 cup almond flour
1/2 cup arrowroot starch
2 tsp cinnamon
1 1/2 tsp cardamom
1 1/2 tbsp baking powder
1/2 tsp salt
2 tbsp ground flax + 6 tbsp water (let sit for five min - makes two flax eggs)
3 tbsp coconut oil (not melted! coconut oil should be hard and will soften when you bake)
1/2 cup dairy free milk
1/4 cup maple syrup
1 tsp vanilla extract
Add 2-3 chopped apples into the dry mix (do not add wet ingredients then apples, they will not evenly separate) add in chopped pecans and wet mix and fold everything together.
Scoop out scones evenly on parchment paper. Sprinkle with coconut sugar and more pecans.
Bake at 425 degrees for 16 minutes
