Time for a cart highlight 🎉 COCONUT AMINOS. Lots of you ask what they are, why they’re in my cart, and what the heck I do with them; this is your post. Coconut aminos, are a sauce derived from coconut sap and have a light touch of sweet mixes salty. The taste resembles soy sauce, yet it tends to have ~ 500-600 mg less sodium per serving (this adds up quickly, especially since a serving is 1 TBSP, which no one ever uses) compared to most soy sauces. I probably wouldn’t have tried it if it wasn’t for having a soy intolerance (i was craving Asian inspired recipes using soy sauce and was in search for an alternative), but i recommend it to everyone because it rocks. ————————————————————-

So I tried this great new recipe last night and had to share it with everyone - Roasted Garlic Cauliflower Hummus!  It’s a super clean low carb recipe that’s great if you need a snacky type of food.  I even modified the recipe a bit and removed the pepper, paprika, and tahini so that it was Autoimmune Protocol compliant, and it turned out amazing!  Served it with baby carrots, sooo delicious 😋.

Instructions:
	1	Preheat oven to 375.
	2	Combine oil (2Tbsp), cauliflower and salt and pepper. Spread over a baking sheet and roast for 40 min or until cauliflower is cooked through and slightly browned.
	3	Throw cauliflower and remaining ingredients in a high-speed blender. Blend until well mix.
	4	Taste and add extra seasonings or water until desires taste and texture.
	5	Serve cold or room temperature.

I even modified the recipe a bit and removed the pepper, paprika, and tahini so that it was Autoimmune Protocol compliant, and it turned out amazing! First cherry tomatoes this season!!! I brought this plant back from the dead, seriously. It was so dried up with dark brown/black branches, no leaves & dry soil...I was worried about it. I decided to transplant into a new tomato box (I found a cute one from @sloatgardens) and new wire growing frame. I added new soil and moved to a location with tons of direct sunlight! Over the last few months, I’ve been really careful about over watering (apparently, tomatoes do not like a lot of water). I already learned my lesson by almost over watering earlier this Spring. If the plant sits in too much water, the roots will begin to decay and it cause mold and a ton of other issues! Well, this baby is back on track after some TLC!  Juicy bursts of summer tomatoes, YUM! 🍅

I nearly forgot to post an update about this brilliant book! 🙌🏼I stared reading it before I went on holiday and decided to pack it with me as it was such a good read I couldn’t leave it behind me.
@fadelawellbeing knows her stuff about emotional eating and she walks her talk in a non nonsense way, without academic/scientific jargon which often puts me off from reading anything of educational nature. Her book is well structured (like, like, like!) and provides answers to questions you might have about the subject. I have to admit it I was sceptical as my relationship with food was (or more: I thought it was! 🤦🏻‍♀️) always brilliant but Fadela made me realise that there are bits of my love affair with food which I never addressed  or thought through. Thought provoking, easy to digest, I’m stuffed! Thanks @fadelawellbeing what a feast! 💗😋

Made my own [messy] peanut butter cups last week!! • So, originally I was going to follow a recipe for these but I didn't, so I don't have exact measurements!! I melted dark chocolate chips using the double boiler method and added 2 tbs of coconut oil so it would get all smooth and creamy! I also mixed up about 4-5 tbs of @smuckersbrand all natural peanut butter with 1 tbs of coconut oil! I have silicone cupcake molds (these make it a lottt easier to pop them out when they set!) and I lined them with some of the dark chocolate, layered in the peanut butter and then put more chocolate on top! (Added unsweetened coconut flakes to some for my mom) When I finished I put them in the freezer to set! • these were actually super fun to make besides me not melting enough chocolate originally which is why they turned out messy and why I probably should have just followed the recipe 😬 I don't really eat chocolate too much but I thought these would be a nice treat when I do want some!
