Meet Jim! Jim lives in south Louisiana... and it's spring...Here is his story:

He walks into his local retail pharmacy because it's been snowing like crazy..... the yellow snow.... aka pollen. He asks his pharmacist for the best OTC medicine because he's miserable.... pharmacist says "no problem" here's an antihistamine ($9.88), a nasal spray ($23.79), and a decongestant ($8.97) for you. His wife also calls and asks for him to grab a can of disinfectant spray ($7.97), an extra bottle of household cleaner ($4.97) and some chest rub ($8.99). Total: $64.57
.
On his way home Jim realizes his whole body hurts from mowing the yard (the start of the whole allergy fit) and he stops at the next corner at another retail pharmacy and grabs an anti inflammatory ($4.88) and some pain relief cream to help with his body aches and pains ($9.87). Better to be safe and get his whole cooties and under the weather stuff nipped in the bud at once, right? Total: $14.79

Shucks.... Jim has been married 17 years and since he wasn't feeling well he completely forgot that today is his wedding anniversary. He stops at his wife's favorite store and gets her favorite lavender bath soak ($24.50) and some peppermint lip balm she loves there too ($13.50). Remember, Jim wants to stay married another 17 years. Total: $38.00

Since Jim isn't feeling well he decides to go home and grab a nap before his date with Mrs. Jim. Oh no, he can't fall asleep.... he tosses and turns and wishes he would've gotten something to help him sleep while at the pharmacy. Now he's all stressed out so he tries to relax with a new book ($24.99) and some fancy candle ($12.97) his wife had in their living room. He knows by bringing his stress level down he can cruise through this spring crud quicker. Total: $37.96

Now, thankfully Jim's decongestant seems to be helping but now his nose is raw from all the blowing.... he has to grab a box of the fancy lotiony soft tissue ($4) and his skin is all irritated but thankfully he knows that will pass with time (too bad he couldn't get quick relief, right?!). They didn’t think I could do it, I found an almond milk latte in Costa Rica 👊🏽 it was absolutely delicious! 🙌🏽 the coffee down there is the absolute best so you know I brought a ton back with me! since I can’t drink any 🥛 dairy I’ve been drinking my coffee black ☕️which is the norm for me any way, but sometimes a girl just needs a latte with a flower design 🌺

2️⃣ Apart from protein, natural yogurt contains probiotics that have been shown to have some promising effects on health. 
3️⃣ Strawberries and blueberries are low in sugar and high in antioxidants and vitamin C.

Los champiñones Portobello son tersos y sabrosos, cortados bien finos absorben el sabor de una vinagreta suave, y el conjunto de texturas queda impregnado en el paladar. .

Esta receta de Carpaccio de setas con trufa  es un entrante ideal y muy sencilla de preparar: .
. ✳️ R e c e t a : * 200 gramos de champiñones Portobello
* 2 c.sopera de aceite de oliva virgen extra ( donde previamente he macerado unas rodajas de trufa negra )
* 1 c.postre de vinagre de manzana
*  Unas gotas de limón *  Hojas de Rúcula 🍃
*  Piñones salteados .
. ✅ Limpia bien los champiñones Portobello y corta el sombrero en finas láminas con ayuda de una mandolina. ✅ Vierte en un cuenco el aceite de oliva virgen extra macerado, el vinagre y un chorrito de limón , mezcla bien y reserva. ✅ Colocamos en un plató  las láminas de champiñones, y a continuación aderézalos con la vinagreta de trufa. Deja reposar para que las setas vayan absorbiendo los sabores.
Servimos acompañados con unas hojas de rucula 🍃 y unos piñones salteados. .

Chocolate is one of my favorite food groups and even when I’m trying to cut back on sugar I include it in my diet 💁🏼‍♀️ I made this low carb Chocolate Tahini Fudge using 5 simple ingredients and proudly ate the entire batch [by myself] 🙊 in 3 days!

Chocolate Tahini Fudge
- 4 oz @bakerschocolate unsweetened chocolate
- 2 Tbsp coconut oil
- 1/4 cup tahini
- 1/4 cup @lakantosweetener monk fruit
- 1 tsp @simplyorganicfoods vanilla
.
(1) Melt chocolate + coconut oil on low heat in a small frying pan, stirring frequently (2) once melted, remove from heat and add remaining ingredients, stir well (3) pour mixture into a lined 8” x 4” pan. Optional: add toppings {I drizzled a bit of tahini on top and @beekeepers_naturals bee pollen } (4) Place in freezer to set

Make sure you drink enough water! The general guidelines are to drink 2L a day but this can be not enough depending on the size of your body, your activity levels and how much you sweat. What happens if you don’t drink enough water? Will you die? Probably not. But you will be slightly dehydrated all the time which means your body will be that much more stressed all the time. 73) Stamattina 🌅 in palestra 💪🏻 mi sono allenata 🏋🏼‍♀️ benissimo! Ho fatto un’ora e mezza di palestra sala pesi + cardio.
Devo ammettere che mi è mancata un sacco.. facevo gli esercizi in casa 🏠 ma non è per niente la stessa cosa! L’unica sorpresa è stata scoprire che stavano rifacendo le docce e quindi sono dovuta tornare a casa tutta sudata 😅
Appena sono arrivata a casa 🏠 mi sono fatta una bella doccia 🚿 e poi mi sono preparata il pranzo!

Ora mi rilasso 🧘🏼‍♀️ poi sistemo gli armadi e faccio il cambio di stagione 👗 siccome ora qua da me fa freddissimo ❄️ e poi mi preparo per andare a lavorare perchè stasera 🌠 mi tocca l’inventario 😒

Baked Oatmeal Cups: Breakfast is served. I absolutely love these because it makes over a dozen, they’re portable, and they store all week in the fridge. A quick 30-second warm up in the microwave and you are good to go. Who can ask for more with the morning rush to work and school? Okay, so to entice my children I toss mini chocolate chips on top of half of them (who am I kidding, they’re for me), and on the other half I put shredded coconut, or pecans, or swirl in some peanut butter. Whatever you think goes good with bananas and oats. 🍌 #youdoyou Throw them in a baggy, put them in your purse, eat them at your desk while you’re reading your morning e-mails. Send them to school in your kid’s lunchbox. They are so good!

Baked Banana Oatmeal Cups (Yield: 16)

•3 medium ripe bananas
•3 cups old-fashioned oats
•2 Tbsp maple syrup
•1 tsp cinnamon
•2 Tbsp coconut oil
•1/4 tsp salt
•2 tsp baking powder
•2 eggs
•1 tsp vanilla
•2 cups unsweetened almond milk (or dairy of choice)
•1/4 cup toppings (chocolate chips, unsweetened shredded coconut, peanut butter, chopped pecans, etc.)

1. Preheat oven to 350°F. Line muffin tins with paper liners or spray with cooking oil. 
2. Placed two bananas in large microwave safe bowl, heat on high for 2 minutes. Mash with fork.
3. Dice third banana and add to bowl with oats, maple syrup, cinnamon, oil, salt, baking powder, eggs, vanilla, and milk. Stir well to combine.
4. Using a 1/4 cup measure, scoop batter into prepared muffin tin. Sprinkle with choice of topping, use a fork or toothpick to swirl into batter. 
5. Bake for 20-25 minutes until set. Serve immediately or store in airtight container in fridge up to one week. Heat for 30 second in microwave to serve warm.

Today's (and tomorrow's!) lunch- Roasted aubergine and tomato soup with a slice of protein packed paleo bread.  Very easy to prepare around getting my daughter to nursery this morning- I love things you can just chop and roast and whizz in the blender.  Looking forward to lunch tomorrow already!
