I find eggs and salsa to be a delicious combo. The bonus is that it’s healthy too! Here’s all that I had for lunch today:

Throwback to this perf breakfast at the beach!! (I love u @wawa) • there is nothing better than walking to  wawa with my dad to get a coffee and bagel when I'm at the beach!! I've done that with him since I was a little kid since we always seem to be near a wawa in jersey - lucky us!!! Haven't had wawa coffee in a few days and I miss it 😪

hi i’m back! w new content - finally! yay! i was so happy when i woke up this morning and had plenty of time to make, style, & photograph my food haha. like honestly this brings me too much joy but i guess i’d rather be doing something i love than something i don’t🙃
here we have: vanilla @siggisdairy (tryna get my stomach used to more dairy again bc it’s hard to find kite hill products here rip) mixed with a scoop of @vitalproteins collagen peptides + 🍓🍓s + a sprinkle of @navitasorganics cacao nibs, bee pollen, & og @purely_elizabeth granola + drizzle of @philosophielove berrybee honey (literally the only honey i like the taste of + has tons of vitamin c bc i’m sick af) & @thefreshmarket fresh ground almond butter (this stuff isn’t oily & hard to drizzle so i microwaved it for ~30 second & mixed it with some water to make it thin & runny. that way i’m able to drizzle it yay!) happy saturday!!💕🤑

•1/2 c oatmeal
•1/2 c Frozen riced cauliflower
•1/2 c grated zucchini
•1 scoop @furtherfood collagen peptides
•honey
•cinnamon
•cloves
•turmeric
~toppings: 1/3 banana, @bassenuts toasted pumpkin seeds, goji berries, @bobsredmill coconut flakes, cacao nibs, bee pollen, hemp seeds, & a spoonful of drippy almond butter!
* If adding veggies to your oats seems kinda crazy...start with just zucchini...the cauliflower had a little bit of a stronger taste..but it was nothing that couldn’t be covered up with some spices & alllll the toppings!

🍅☀️I’m finally posting this easy, popular summer salad! Guests will love it & it’s a snap to put together! Plus full of summer goodness😋 * 2 pints mixed small or cherry tomatoes
* Seeds from one pomegranate (I use the seeds from Trader Joe’s)
* Yellow bell pepper,  chopped
* 1/2 small red onion, chopped
* 1/3 cup fresh basil, julienned * 1/3 cup fresh mint, julienned * Feta cheese
Mix one part fresh lemon juice to two parts olive oil. Add 1 tsp oregano, salt and pepper to taste. Toss all ingredients together with the dressing and top with cheese. Enjoy! #summersalad #tomatoes🍅 #healthyvibes

I didn't grow #courgettes this year, but I've found that the ones I have bought over the summer have been beautifully sweet and tender. Today I'm making the most of this kind of Cinderella summer vegetable by slicing them thinly and dousing in lemon, exceptional olive oil (shout out to @morocco.gold), local honey, toasted pine nuts, and some fennel pollen from my garden. And a crunchy bit of @maldonsalt1882. I'm thinking this would be fantastic with steamed or grilled sea bass, or similar. But I'm just going to demolish it with some homemade sourdough bread (finally got the hang of it - yay!). Maybe some goat's cheese too. Happy days. 😋 🍽️ UPDATE: for something so ridiculously simple it's astonishingly tasty. If you make it let it marinate for at least 15 minutes to let the flavours mingle. I feel another plateful in my not-too-distant future. PS the two forks aren't telling the true story 😉😉😉

Used my 2sp @kodiakcakes waffle recipe (link in profile) but subbed coconut extract for the vanilla. Toasted 1tb unsweetened coconut flakes (reserved a small amount for the topping). Sautéed 1/2c diced pineapple (also reserved a bit for the topping). Mixed everything together and cooked as one big pancake. Topped with reserved🍍&🥥 and ENJOYED EVERY BITE! 😋

Being a new mom last year with a son who was constantly battling runny noses and fevers, I wanted a better solution for him than to constantly have OTC products on standby. For this breakfast veggie scramble I roasted sweet potatoes in the oven on 450 for 20 minutes seasoned with salt, pepper and cinnamon. After the potatoes were done, I heated up a cast iron skillet with @chosenfoods avocado oil spray and tossed in zucchini, yellow squash, spinach and @pedersonsfarms #whole30approved bacon 🥓 the cinnamon from the sweet potatoes mixes in well with the other veggies and it tastes like fall, and that makes me 😁 #losingitwithmelissa —-

I like to call this Saturday “clean out the fridge before it goes bad” scramble 🥓 —- Excited to have a pretty slow weekend, most weekends last month were packed full of things to do and while it’s awesome to have social things going on, sometimes it’s good to also have nothing going on. Like am I going to get out of bed today? I’ll just see what happens and we’ll go from there 🤷‍♀️ what’s on your Saturday not-to-do list? —- For this breakfast veggie scramble I roasted sweet potatoes in the oven on 450 for 20 minutes seasoned with salt, pepper and cinnamon. Happy Friday! • I have had a busy two days between moving into my house in Philly and coming home to get things I still need, I didn’t have much time to cook!! But after I finished my errands this morning, I came home and made zucchini chips! Super easy to make —> slice zucchini into small slices (I use mandolin bc it’s consistent with size), beat 1 egg in a bowl and dip the zucchini in that, and then dip that into bread crumbs of your choice - I used GF bread crumbs and added Italian seasoning, garlic powder, and Parmesan cheese to mine! Put them on a baking sheet and bake them at 350 for 20 minutes and flip them halfway through! I broil mine on low for 2 minutes because I like them to be super crisp 😇
