Healthy and easy soup recipe today🍲... Perfect for cold days ❄️. Ridiculously easy because I used fresh frozen veg🌬️.🙌. Half a bag of frozen spinach, half a bag of frozen diced onions, one frozen leek. (BTW  much more fun to chop frozen😂😂) battered with a knife and it went into lots of lovely little frozen flakes. Frozen whole. Baby potatoes skin on, 1/4tsp dried. Mixed herbs and 4 chicken stock cubes. Cover with water, boil and simmer for. 30 mins.... This meant I didn’t eat Sunday, I barely ate Monday. I couldn’t stomach the thought of eating any of the food I prepped. What a waste! But wait...

When our bodies are stressed, from sickness, from working out, a move, multiple jobs, a full class schedule, whatever! When we are stressed, our bodies actually can’t digest the food we eat as well as when we are not stressed.

My body was in a state of stress. Even if I ate that food, I wouldn’t have been able to digest it to the point where it was beneficial and nutrients would be absorbed. I realized this and made a new plan. Suck it up, go to the store and make some soup. THIS IS WHAT MY BODY NEEDED. 🌟
Soup is easily digestible, smoothies are easily digestible, protein shakes are easily digestible. 🌟
Man, this soup touched my soul Tuesday. I ate it and my body rejoiced for real. 🌟
Know what your body needs and when, make a plan and be okay with having to make a new plan because life happens. Eat for the season of life you are in. 🌟

INGREDIENTI:
30g Farina di avena bon bon @prozisitalia 
20g Farina di riso @fiordiloto1972 
100 ml latte scremato 
50 ml acqua 
5g Burro di nocciole @damiano_organic 
Mezzo cucchiaino Chocobella @damiano_organic 
Melograno q.b.
3g cacao amaro .
PROCEDIMENTO:
•Metti tutti gli ingredienti in un pentolino tranne le creme, il cacao e il melograno, accendi il fuoco e cuoci a fuoco basso mescolando continuamente fino a quando non addensa.
•Versa in una tazza e decora con burro di nocciole, ChocoBella e melograno.
•Gusta subito o se lo mangi il giorno dopo metti in frigo.
•Ho aggiunto poi il cacao amaro perché questa Farina per me era troppo dolce.

COMFORT FOOD ♥️
My breakfast almost always consists of eggs 🍳 but I’m feeling a little sorry for my myself this morning due to a horrible winter cough and cold so I wanted something warming and comforting. This spiced protein porridge really hit the spot and is full of fibre, vitamins and good quality protein. Recipe is super simple and takes no time at all. I cooked my @flahavans organic oats on the hob with @alpro unsweetened almond milk but you could also do them in the microwave. Once cooked, I mixed in a scoop of vanilla chai latte organic whey protein by @theproperfoodproject and topped with a sliced banana, desiccated coconut and a mix of ground flaxseed, almonds, brazil nuts and walnuts by @linwoodshealthfoods

Creamy rose filling and chewy pistachio crust for these No bake vegan Rose pistachio tartlets 💕⠀

Crust⠀
INGREDIENTS⠀
Makes: 6x10 cm tartlets ⠀
100g oats ⠀
40g almonds⠀
40g pistachios (unsalted)⠀
30g puffed amaranth ⠀
Pinch of salt ⠀
15 pitted date⠀
1 Tbsp maple syrup⠀
1 tsp vanilla bean paste ⠀
1/2 Tbsp coconut oil, melted ⠀

METHOD⠀
Place the oats, nuts and salt in a food processor and grind into a coarse powder.⠀
Add the rest of the ingredients and blend until a sticky dough forms. ⠀
Press the dough firmly into the tart tins and place them in the fridge whilst making the filling.⠀

250ml almond milk⠀
150g coconut cream (the thick part of one can)⠀
2 tsp rose water ⠀
3 Tbsp pomegranate seeds (optional, for the color)⠀
2 Tbsp agave or 1 Tbsp stevia ⠀
1 Tbsp corn starch ⠀
1 tsp agar agar ⠀
___⠀
METHOD⠀
Blend the almond milk with coconut cream and pomegranate. Pass the mixture through a sieve and pour it on a small saucepan. ⠀
Add the sweetener, rose water and corn starch and stir well until everything is dissolved. ⠀
Heat on medium and when the mixture is lukewarm, add the agar powder. ⠀
Bring to a brief boil and keep stirring until it starts to thicken. ⠀
Pour the mixture into a bowl and let it cool down a little before filling the tartlets bases. ⠀
Place the tartlets in the fridge to set for a couple of hours. ⠀
Toppings: rose blossoms, pistachios, pomegranate, little meringues, puffed amaranth. .⠀

RECIPE- about 1 cup of dairy free milk add to a pan and simmer, add 1tspn raw cacao powder and 1-2 squares of @benefitchocolate 85% dark chocolate, add fresh cinnamon sticks and cardamom pods and a dash of orange essence allow to simmer until warm. This breakfast is definitely a renourish meal packed with vitamins, fibre snd minerals just what my body needs on a cold and busy day ahead! Happy Thursday all!

☝🏻Rich in sugar - either through lots of dried fruit (not a bad thing in context/sometimes) or syrups such as agave or maple & honey (similarly not terrible in small quantities/in context but usually this is not the case).
✌🏻Low in fibre/protein/fat - which we want! These are the elements that will sustain our energy much better, keep our blood sugar & moods level & generally imbue us with all kinds of happiness & healthfulness 💛.

So yes here the balance is RIGHT 🙌🏻 There’s plenty of fibre, there’s no dried fruit & we’ve got a gorgeously smooth #plantbasedprotein & #healthyfat rich #nutbutter filling 🤤.

Simple thoughtfulness but that then delivers both a convenient option for us busy bees AND something that is conscious of our wellbeing too 🤗 .

Artichoke and Celery ~ Let’s start today by being honest. I do not list the art of cooking among my skills and I am definitely not what you call a Master Chef. In fact, only my kids call me MC and it comes out almost as a joke since it is not true at all. But I guess that to their eyes I am a true cook and also a devoted mother that will try every trick she has in her hat to make them take their medicine “the Food”. The true thing is that as an Herbalist, my vision and thoughts about food has completely changed. I do not look at veggies, plants and fruits the same way. I used to think of it as a tasty vitamin filled nutrient that mixes well with this or that but today, I only see it as medicine. My perception of the vegetal world has completely shifted and I love that. Here photographed is an artichoke and a bunch of fresh celery. I’ve been having a love affair with artichokes since my early childhood. My grandmother used to steam them and served them warm with a side of dressing. We used to peel the leaves and dip them into the dressing before putting them into our mouth. So delicious. At that time I only saw something green that I loved. But my grandmother already knew what I was getting out of it. Artichokes are packed with vital antioxidants making them a cancer fighting food. They are known to help fighting cardiovascular disease  and also help managing weight gain. And the list keeps going on and on...
Lately, I like to shave it and sautéed it with a bit of olive oil, garlic and parsley. I also like to mix it with celery. The astringent taste of artichoke mixes very well with the salty celery. Celery contains antioxidants and polysaccharides that are known to act as anti-inflammatoires. If you are dealing with ulcers, think celery. It also protects the liver, boosts digestion and reduces bloating... Well, you now see where I’m going. In my dish are two amazing plants that are not only a real treat for my tummy but a powerhouse in terms of medicinal properties. The time that I spend in the kitchen concocting meals for my loved ones is as important as putting my nose in my books. I am grateful 🌿✨

Dinner has just gone into the oven... Late one tonight.. Time got away with me today.
I made  frittata tonight . I love these  as they are fabulous cold, for the next few days. 
The 'egg'  component is made using chickpea flour, ground Flaxseed, coconut oil, spices, ground sesame seeds, kelp powder and some almond milk. 
I layered potato, onion and once sauce was poured over , added 2 handfuls of Chopped nuts and seeds, nutritional yeast and decorated with tomato and capsicum I had left over from last night.

BANANA BREAD DOUGHNUTS

Ingredients:

125g plain flour
1/2 tsp bicarbonate of soda
1/4 tsp salt
1/2 tsp cinnamon
55g dairy free butter
35g light brown sugar
35g white sugar
1 tbsp maple syrup
1.5 ripe bananas
30ml soy milk
1/2 tsp apple cider vinegar
1/2 tsp vanilla extract
25g sultanas

Icing:
100g icing sugar (sifted)
1-2 tbsp warm water
1/4 tsp vanilla extract

Topping

30g pecans (broken)
15g dark chocolate (grated)

Equipment

Food processor
Donut trays

Method:

1 Pour all the Donuts ingredients into the food processor and whizz them all up into a thick batter
2 Remove the food processor blade and scrape off the excess batter back into the food processor container
3 Pour the sultanas into the food processor and mix them into the batter
4 Grease your donut tray with some dairy free butter
5 Fill the donut tray holes with the mixture and put them in the oven for 170℃ for 35 minutes
6 Take the donuts out of the oven, let them cool to room temperature and place them on a serving slate
7 Put all the Icing ingredients in a small mixing bowl and stir them until they come together and form a thick, pourable icing (use moire water if it's too thick)
8 Use a spoon to artfully drizzle the icing sugar over the donuts
9 Sprinkle the Topping ingredients over the top of the donuts
