🥒 Cucumber & 🍉 watermelon are both mostly made from water. That help the body to keep hydrated after a long night fast.

Hi Everone. 🤗 Do you remember lentil & carrot pate I baked the other day? 😃 It was Amazing! 👌 The recipe I took it from lovely Dominika Wojciak Book. @jarzynova . I slightly change the ingredients to adapt to what I already had in my kitchen. The pate came really fluffy, easy to spread and extremely delicious.😋
But it was even yummier when I spread it on the lovely sourdough bread I bought at @greendalefarmshop and served with some full flavour tomatoes! 😍 OMG! It was a Hit!💪😍😋😃😍 I loved it so much. Ohh..my whole family was!💪 The full recipe will be added to my web when up and running. Can't wait to share it with you. 😋 Have a good day. 😚

This looks promising so far. It's a sugar free (well just natural fruit sugars & a bit of maple syrup) probiotic tomato ketchup. It's based on a hemsley & hemsley recipe with a few tweaks. It needs a week or two to be ready but if it works I'll share the recipe. I'm hoping my children will love it!

Another warm morning run requires another bowl of nicecream 🤗 💕 🍑 🌱 🍨 peaches were perfectly ripe at the farmers market so we now have a freezer full 🙌🏼!
I had some date caramel leftover from the weekend baking (by leftover I mean it took every ounce of strength not to shovel it in my face) so I mixed it with almond butter and mocha @sunwarriortribe protein and froze... chipped off little chunks make the absolute BEST topper!!! Never gets frozen solid so the texture is perfect 👌🏼 .

Made a quick blackcurrant & cinnamon compote to top some chia seeds soaked overnight in mango and turmeric kefir: so delicious and I love any cold/warm combo. These little berries are not only in season and full of vit.c but have high concentrations of anthocyanins, flavonoids with antioxidant and anti inflammatory activity, so go pick, shop, eat or freeze while you can! 
To make: put 200g blackcurrants, (de-stalked) in a pan with a quill of cinnamon and a dash of water. Cook for 5 mins until the berries have burst. I like the slight bitterness but you can add sugar to taste.

Because today was awful and depressing... and because it’s still hot, I attempted to lift our spirits with another @ottolenghi watermelon salad. This one (from Nopi), with marinated olives, preserved lemon, chili, feta and herbs, is just fantastic. While I loved both this one and the apple-cilantro one from a few posts ago, my husband declared this one the clear winner (even though he had been asking for a repeat of the apple one as well!). Beautifully balanced, grown-up flavors.

1. Canned fava beans mix with red chillies 
2. 1 cup of leftover cooked rice
3. Green beans
4. Grilled chicken slices
5. Salt & pepper 
Takes about 10 mins to do when you have your above ingredients ready. Grilled chicken, I make sure I have them prepped and stored from before so during the week I won’t have to bother with cooking and prepping again.

In order to control my high cholesterol level, I have (wait: NEED) to take oats every day and when plain oats are getting boring, I decided to spice my oatmeal up this morning with some frozen blueberries, smooth @jobbienutbutter, raw cacao nibs, @vivesnack.my dark chocolate, raw sunflower seeds, almonds and milled flaxseed. While I do enjoy each of them separately so much, what was supposed to be an awesome antioxidant loaded bowl turned out to be blerh. I know, I know, laugh at me now. Truth I was always a french toast person growing up.  Pancakes were great and toasted waffles were totally a thing but on the weekends my mom would also make a big batch of french toast using that thick Texas toast bread and I sit an eat about an entire loaf worth of toast with no guilt. -
Now a days I don’t eat a ton of bread based foods after dealing with years of digestive issues and finally finding some relief when I went gluten free. -
Recently, thanks to @lilsipper and my love for my friend @tonimarraccini  sourdough bread  I’ve some to release that not all bread is created equal and my system seems to tolerate good quality sourdough. -
So this past weekend I made up a big batch of french toast using @berlinnaturalbakery spelt flour sourdough and went to town! No regrets here this stuff brought back all the childhood memories!

Want to make some of your own?  It’s super easy!  In a dish big enough to dip your bread in, place 1 large tbsp ground chia seeds, 1/2tbsp maple syrup, 1C @elmhurst1925 hazelnut milk or milk of choice, 1tsp vanilla powder, 1/2tsp cinnamon & nutmeg and musk with a fork.  Let sit for a few minutes to thicken.  I use frozen bread so that it doesn’t get soggy!  Pull out 6 pieces of bread and dip one at a time making sure both sides are coated and then transfer to a non stick skillet on medium heat.  Cool for 4-5 minutes on one side and flip and cook 4-5 minutes on the other side until browned.  I served mine with @artisanaorganics cashew butter, @sunandswellfoods lemon coconut bliss balls, pitaya jam and berries!

I worked out...for the first time...in a LONG time!

I've been ashamed of how far off path I've got from my health and fitness goals for the past...year.  I didn't even realize it had been that long. Last July and August I was excited to be accepting a new job, I was so happy! Then I was told my offer was rescinded because the company was moving the department to Nashville, TN. Then I decided to relocate for the position. As exciting as the time was, it was extremely stressful! .

Finding a new place to live, in a city 1,000 miles away from where I've lived my whole life. .

Packing all of our belongings in the back of a Uhaul truck, driving to Nashville .

Moving into an apartment .

Selling our first house after we already moved .

Leaving my family and friends .

Starting a new job .

It was A LOT. .

BUT! I never was alone. I was never in the fight alone. My people never gave up on me. I continued to have my coach check in on me. My fitness and nutrition groups continued to run and inspire and motivate me. I may not have been ready or able to dive in 100%, but I had the tools available whenever I was ready. Let's be honest, weight loss is such a mental game! But it helps to have support, encouragement, and motivation surrounding you! .

This past week, I helped the someone, the first person in a long time, start their health and wellness journey. .

And if I'm being honest, it lit a fire inside of me! I missed that feeling. I missed being a part of that. I've struggled for so long with my weight. It encourages me and helps to keep myself accountable when I'm there for others! We're in this together after all, aren't we? #weightlossjourney .

Anyways, the point of all this rambling is that THIS is why I love coaching. It's a journey! And we're all in it together. And nothing feels better than to help someone else start to pursue their goals, to be happier and healthier! .

But in reality salads don’t have to be boring if you know how to make different kinds of salad; they are delicious if you have the right ingredients and right salad dressing; you can add all kinds of proteins and carbs to them (protein: steak, chicken, salmon, shrimp, scallops, tofu, lentil, mushrooms, chick peas, etc. / Carbs: brown rice, apple, pear, sweet potato, whole wheat bread, etc.); and they can be served as a meal, as a starter, or on the side. Tonight’s healthy dinner: Turkey Taco Salad. 
1 lb ground turkey, 1 can of corn, 1 can of black beans, onions, garlic. Sautéed with ground chili pepper, cumin, garlic salt, crushed red pepper. Top on  bowl of mixed greens and veggies. Top that off with plain nonfat Greek yogurt in place of sour cream, avocado, and some hot sauce. 
The turkey taco meat is very versatile and great for meal prep.
