Super easy sweet potato apple soup. The nice thing is that the sweet potatoes add body to the soup, making it luxuriously silky, without even the slightest bit of guilt-inducing heavy cream. Now, I have to admit that I’m one of those people who look forward to fall. The thought of comfort food and cozy clothes does make it more bearable. So go ahead and think of this soup as that soft knit sweater you can’t wait to put on at the first sign of a chill.

About 2 big tablespoons of Greek yoghurt. Roast some nuts- almonds, pistachios, cashews, walnuts and pecan nuts. Once slightly cooled, add to the yoghurt. Add some fruit- my fave is pomegranate. Some torn mint leaves for the green in it. And chia seeds for extra protein. Et voila! Simple, easy & healthy breakfast full of goodness is ready! Yumsky!

Lucky for us, chia seeds are packed with these three properties! That is why they are a great ingredient for making something nutritious. You know like an energy-filled breakfast or go-to snack for us health conscious folks💁🏻‍♀️.
Now, I have set my eyes on making a yummy, creamy chia seed pudding for weeks. But for some reason, I wasn’t able to get my texture right🤦🏻‍♀️.
However, I had my ‘eureka’ moment💡 when I added coconut milk @earthsfinestme to my list of ingredients. The milk produced the thick consistency I had been looking for💪🏼. Once I got that right, I was ready to flavor up my recipe with a fresh fruity combo.
As you can see, I chose kiwi 🥝 and berries for my #chiapudding 😋.

That is why they are a great ingredient for making something nutritious. You know like an energy-filled breakfast or go-to snack for us health conscious folks💁🏻‍♀️. Now, I have set my eyes on making a yummy, creamy chia seed pudding for weeks. But for some reason, I wasn’t able to get my texture right🤦🏻‍♀️. However, I had my ‘eureka’ moment💡 when I added coconut milk @earthsfinestme to my list of ingredients. The milk produced the thick consistency I had been looking for💪🏼. Once I got that right, I was ready to flavor up my recipe with a fresh fruity combo. As you can see, I chose kiwi 🥝 and berries for my #chiapudding  😋. Vegan Chocolate Peanut Butter Balls
Gluten free, dairy free, refined sugar free🙌

In a food processor combine:
1 cup peanut butter of your choice 
1/2 cup coconut flour 
1/3 cup maple syrup 
Process the mixture till all ingredients are thoroughly combined and then place in freezer to set for 5-10 minutes 
Roll into balls and place on baking paper on a pan and return to the freezer for 1-2 hours 
Chocolate coating
Combine all ingredients in a food processor and mix for 10 seconds 
1 1/4 cups of coconut oil 
1/2 cup of cacao 
4 tablespoons of maple syrup 
Place the chocolate mixture in a deep dish so that you can coat the peanut butter balls. Once coated place them back on the baking paper and place in freezer for 5 minutes. Take them out of the freezer and dip them again placing them back on the paper and store in the freezer 😊😋👅

Not the best example of what and how to eat. I post this because none of us are perfect. Period! When I disclose that I eat junk food there are people who are in disbelief. They truly believe that I eat like a champ all the time. Well let me tell ya something....i don't. .
I have spent many years figuring out what works best for me and I had that pretty dialed in. Until recently. As those who know me I had a really rough summer and guess what....I turned to food. Yup. All the way baby!!! I actually thought that I had my food demons beat but when shit got real and life got hard I turned to the only comfort I had. Food!

And you know what, I let it happen. Consciously.  I knew what I was doing and I knew that I was in a time of my life where I felt it was ok to use food. It's not always the answer and I'm not telling everyone to go and use food as a way of coping. It can be a slippery slope. I'm saying that I have enough education and awareness that I knew what I needed to get me through something really hard knowing that when I was ready to get my shit together I could go back to the way I would normally chose food. It's not always easy, and I have struggled, but being a little more clearer is helping me make better choices. .
The point of this story is to not beat yourself up when you make a less than perfect food choice. Shit happens. Don't let it own You, or define you. Don't give up all together and eat your entire house after you eat a bag a chips thinking, well wtf I blew my diet anyway. If we make choices we're not happy with it doenst mean we need to continue making those choices forever. We can come back from them. So you had a piece of chocolate cake....i hope you enjoyed it. Like really....enjoyed it. Now move on, don't let it haunt you and have something healthy as your next meal. I know the all or nothing mentality. I do. I've been there. I've battled those demons. Now I'm in a place where I fully own my food choices.
My dinner last night....chicken, grape tomatos, and what you can't see, well those are delicious little Annie's bunny crackers. All wrapped up in a little old yogurt container...being eaten in a rush while on my way to work. . . Not the best example of what and how to eat. I post this because none of us are perfect. Period! When I disclose that I eat junk food there are people who are in disbelief. They truly believe that I eat like a champ all the time. Well let me tell ya something....i don't. . I have spent many years figuring out what works best for me and I had that pretty dialed in. Until recently. As those who know me I had a really rough summer and guess what....I turned to food. Yup. All the way baby!!! I actually thought that I had my food demons beat but when shit got real and life got hard I turned to the only comfort I had. Food! . And you know what, I let it happen. Consciously. I knew what I was doing and I knew that I was in a time of my life where I felt it was ok to use food. It's not always the answer and I'm not telling everyone to go and use food as a way of coping. It can be a slippery slope. I'm saying that I have enough education and awareness that I knew what I needed to get me through something really hard knowing that when I was ready to get my shit together I could go back to the way I would normally chose food. It's not always easy, and I have struggled, but being a little more clearer is helping me make better choices. .
