I was so happy to hear that Piadina Genuina had reopened as Antonio’s Vegan Kitchen @antoniosvegankitchen ! Perfectly cooked fresh pasta is so hard to find when you’re vegan.
My favourite dishes here are the carbonara and tiramisu. No nut base here. Just proper coffee soaked sponge with perfect vegan cream.

El viernes pasado fui a cenar a al Allende en Gran Canaria. Tienen un apartado vegano y de tantas cosas ricas, elegí este Poké bowl de arroz jazmín, zanahoria, tofu, col lombarda , kale, aguacate, albahaca, wakame, rabanillo, endamame, pipas de girasol, sésamo y aliño de soja.

En una palabra: espectacular.

Ich liebe cremige, sämige Saucen 😍 Vegan ist das etwas schwer außer ich habe literweise Kokosmilch hineingegossen 😄 Seit ein paar Wochen ist das alles Schnee von gestern denn Rama hat eine vegane Kochcreme pur sowie mit Kokos herausgebracht die auf der Basis von #Fababohnen (#Ackerbohnen) produziert werden. Und damit verfeinere ich momentan quasi einfach ALLES 😁 I love eating creamy sauce 😍 That's difficult when you live vegan except you use a lot of coconutmilk 😄 But that's water under the bridge because Rama produces vegan cookingcreams based on #broadbeans and now I can refine EVERYTHING 😁

🍋¼ cup fresh basil or Italian parsley

SHEPHARD'S PIE on a bed of fresh baby spinach and sauteed kale 🌱 A winner dinner!

The shephard's pie was made with onion, garlic, @funkyfields_official mince ((😍)), 2 tins of crushed tomatoes, 2 tbsp tomato paste, 1 cup of veg stock, 1 tbsp Worchester sauce, 1 cup red wine, 2 bay leaves and salt, pepper, chilli, thyme and mixed herbs to taste.

The mash was made by boiling and mashing potatoes, and combining them with vegan butter, almond milk and salt to taste.

I then put the mashed potato mixture on top of the mince mixture in a large Pyrex dish. Finally, I topped the dish with a sprinkle of vegan parmesan, and baked at 200°C for 20-30 minutes. The trick is to let it bake long enough so the top becomes golden and the edges become nice and crustyyyyy!

Pénteki ebéd Grazban. Teljesen véletlenül találtunk rá a Café Era nevezetű helyre, ami alapjáraton egy kávézó ahol napi vegán menüket szolgálnak fel. Eszméletlen finom volt ez a zöldséges enchilladas, és a vegán sajt a tetején valami fenomenális 😋

Ingredients: 
Crust:
→ 200g cashew bits
→ 150g oat flour
→ 350g dates paste or soft pitted dates
→ 60 ml maple syrup

Filling:
→ 300g cashews, soaked overnight
→ 250 ml oat milk
→ 125 ml rice syrup
→ 8 tbsp pumpkinpurée
→ 1 heaping tsp cinnamon
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method:
1. Start by mixing all crust ingredients in your Omni until it forms a sticky dough. 
TIPS: Use the low speed or pulse, use your tamper to move ingredients around.  Add a splash of water if needed. 
2. Press dough into a pie mould (suggested 26 cm) and set aside in the fridge
3. Now blend all filling ingredients until super smooth and creamy. Pour filling over crust and freeze for a few hours (at least 5!)
4. Take out of the freezer 30 minutes before serving

For the gnocchi just heat some oil or butter in a pan add some crushed garlic and evenly lay pieces of gnocchi in the pan. Cook for about 3-4mins or until golden and crispy then flip and continue cooking until it is evenly cooked on both sides. Add a handful of spinach leaves and sliced mushrooms and cook until soft.
For the avo pesto blend 1 avo, 1 cup of fresh basil, 1/3cup of pine nuts, 2tbs of oil & 3 cloves garlic in a blender until smooth (may have to add water💧) 👅🥑

Weer zo’n nieuwe ontdekking. 😊 Het is familie van de gewone boerenkool en heeft minstens even veel gezondheidsvoordelen; de groente bestrijdt kwaaltjes die gepaard gaan met het verouderen en heeft een ontstekingswerende werking waardoor het super gezond is voor de darmen. Het lijstje gaat nog even door, maar Google hier kopiëren heeft niet veel nut denk ik. Kern van het verhaal: het is lekker & het is gezond. Het wordt veel gebruikt in Toscane, en zo kwam ik op dit stoofpotje; look, ajuin, tomatenblokjes, witte bonen, cavolo nero, selder, oregano, chilivlokken, amandelen en een restje zwarte quinoa. 👌🏼
