Hey everyone! Sorry for being MIA for the past week. I have the week off of school for Thanksgiving break, so my family and I are on vacation in Kauai, Hawaii! The food here is SO good, but I have to admit I’m kind of missing my food from back home (cauliflower gnocchi and oatmeal in particular). Here are some #eats from yesterday!

Sweet and Savory Sweet Potato Pecan Casserole 
Sweet and savory sweet potato casserole is one of my family’s favorites for the holidays. It’s a great compliment to the turkey and stuffing it’s sweet and nutty what’s not to love. 
Ingredients: 
1 bag of sweet potatoes, cleaned chopped and quartered into 1” pieces 
2 tablespoons of coconut oil 
1/3 cup water
1 cup unsweetened shredded coconut
1 cup pecans
1 tablespoon coconut sugar 
2 cups of marshmallows 
Instructions:
Preheat oven to 375 degrees F. In a casserole dish massage sweet potatoes with coconut oil and toss with water and bake till sweet potatoes are cooked through about 30 minutes. 🍛 Kidney Bean & Cauliflower Rice Chili

Another chili, stew, soup? 🤷🏽‍♀️ coming your way! I love these simple recipes; it’s so easy to just throw in all your favorite veggies with some spices & call it a day. It definitely got warm down here again but that won’t stop me from still enjoying my hot comfort meals 😋

Recipe📝
▫️1/4 cup Onion, chopped
▫️1 cloves Garlic
▫️1 can Kidney Beans
▫️1/2 Zucchini, cubed
▫️1/2 Jalapeño, chopped
▫️Frozen Corn
▫️1/2 cup Crushed Tomatoes
▫️1.5 cups Vegetable Broth
▫️1/2 cup Cauliflower Rice (@greengiant)
▫️1/4 cup Green Lentils
▫️Seasonings - Chili Powder, Cumin, Smoked Paprika, Salt & Pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Prepare all your veggies. Then in a pot, add in some avocado oil & sauté the onions, garlic, & ginger for 3-5 mins.
Then add in all the seasonings. (Add lots of everything since you will be adding a lot of veggies & liquids & you don’t want the flavor to end up being bland). Mix everything in well.
Then add in the kidney beans, zucchini, jalapeño, & frozen corn. Sauté for 1-2 mins.
Add in the crushed tomatoes, vegetable broth, cauliflower rice, & lentils. Stir together, cover, & let simmer for 15 mins. (If you have lost too much liquid, add water or more broth).
Serve in a bowl, top with green onions, & enjoy!

🌶 Beet Hummus & Avocado Toast

Finishing up the last of my beet hummus on this super filling breakfast toast 😊 Had trouble sleeping last night but hoping to make it through this day 👍🏼 Happy Monday everyone!☀️

▫️1/2 can Chickpeas
▫️1 tbsp Beet Powder (@wholefoods)
▫️1 tbsp Tahini
▫️1/2 Jalapeño
▫️1 Lime, juiced
▫️1 clove Garlic
▫️3 tbsp Olive Oil
▫️Seasonings - Chili Powder, Cumin, Salt & Pepper

Blend all the ingredients together in a food processor. It’s that simple!

Wet Ingredients-
▫️1/2 medium Sweet Potato
▫️2 Dates
▫️2 tbsp Coconut Oil
▫️2 Eggs
▫️1/2 cup Almond Milk (@lovemysilk)
▫️1 tsp Vanilla Extract
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Dry Ingredients-
▫️1 cup Almond Flour (@bobsredmill)
▫️1/2 tbsp Baking Powder
▫️1 tsp Baking Soda
▫️Pinch of Salt
▫️1/2 tsp Cinnamon
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Almond Butter Drizzle-
▫️1 1/2 tbsp Almond Butter (@justins)
▫️2 tbsp Maple Syrup
▫️2 tbsp Almond Milk (@lovemysilk)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Poke holes in the sweet potato & roast for 45 mins at 425*.
Chop the dates in a food processor for a few mins. This will make blending the other wet ingredients together easier. Then add in the remaining wet ingredients. Scrape out the sweet potato from the skin.
In a mixing bowl, pour out the wet mixture & add in all the dry ingredients. Fold everything in together. Make sure there aren’t any lumps.
Heat up your waffle iron (I use my mini waffle iron from @unprocessyourfood). Spray it with some olive oil.
Scoop out the mixture & cook it in the iron accordingly.
Top waffles with plain Greek yogurt (@siggisdairy), pecans, walnuts, maple syrup, & almond butter drizzle (just mix all the ingredients together). Also added some powdered sugar on top for some extra pizzazz 😋

🧀 Vegan Mac & Cheese Sauce w/ Sweet Potato Gnocchi
⏲ Under 30 mins | Serves 8
Finally go on board & tried some gnocchi! Unfortunately, I don’t live by a Trader Joe’s but I did find some Sweet Potato Gnocchi @wholefoods so I was super excited to finally try it. Made some vegan mac & cheese sauce to go with it 😊 Hardcore experimented with this recipe & it was pretty delicious, just needed some more salt! Also, I need to master the trick of how to cook the frozen gnocchi so it’s not soggy...any advice?🤷🏽‍♀️

▫️1 box Frozen Sweet Potato Gnocchi (@365bywholefoods)
▫️1 cup Cauliflower
▫️3/4 cup Butternut Squash
▫️1/4 cup Onion
▫️1/2 cup Cashews
▫️3 cloves Garlic
▫️1/2 Lemon, juiced
▫️1 cup Reserved Water
▫️Seasonings - Chili Powder, Turmeric, Cumin, Salt, Peppa
⠀⠀⠀⠀⠀⠀⠀⠀⠀
To make the sauce, start off by boiling some water in a pot & adding in the cauliflower, butternut squash, onion, & cashews. Cover & let it simmer for 15 mins. (Tip: it’s okay to use the cauliflower stems so there’s no waste! It’s going to all get blended anyways 😊)
Once the veggies at soft, transfer to a food processor, reserving 1 cup of the liquid. In the food processor, add in the garlic, lemon juice, reserved water, & the seasonings. Blend until creamy. Let it sit for a few mins while you cook the gnocchi.
In the same pot, boil some more water & add in the frozen gnocchi. Once they float to the top (after roughly 1 mins), strain in a colander. To make it less “soggy”, add some avocado oil to the empty pot & cook the gnocchi for a few mins so it can firm up.
Serve the gnocchi with the mac & cheese sauce poured over. Top with red crushed pepper, vegan parmesan cheese, & zesty sprouts.

Preheat the oven to 400*. Start off by prepping your veggies. Peel & dice half an acorn squash. Remove cauliflower florets from the head using your hands.
In a parchment lined sheet pan, lay out the brussels sprouts, cauliflower, & squash. Sprinkle them with avocado oil, salt & pepper.

🍳 Sweet Potato & Veggies Frittata
⏲ 10 min Prep Time | Serves 3-4
Quick, overnight prepared frittata to start off the week right! Super easy & takes very little time to prepare. I cut up the veggies last night & all I had to do this morning was throw it onto a skillet & add in some eggs. This sure will keep me full for the next few hours🤰🏽

Deets✨
▫️1 small Sweet Potato
▫️1/2 head Broccoli
▫️1/4 Onion
▫️1 Jalapeño
▫️2 cloves Garlic
▫️1 handful of Spinach
▫️1 handful of Cherry Tomatoes
▫️5 Cage-Free Brown Eggs
▫️1/2 cup Soy Milk
▫️Seasonings - Cumin, Garlic Powder, Chili Powder, Smoked Paprika, Salt & Pepper

Preheat oven to 350*.
Prep & chop up all your veggies. In a skillet, heat up some olive oil & sauté the vegetables (excluding the spinach & cherry tomatoes). After 3-5 mins, add in all the seasonings (excluding the garlic powder).
Once that is mixed in, add in the spinach & cherry tomatoes & good for 1-2 mins.
Turn to low heat & meanwhile in a blender, add in eggs, milk, & all the seasonings. Blend together. This will make the eggs nice & frothy & help make the frittata more spongey.
Spread everything evenly in the skillet before pouring in the eggs. Then place in the oven for 15 mins.
Top with avocado & zesty sprouts!

This pie...raw, vegan, no-bake, freezer, fudgey, creamy, nutty, sweet, chewy...so many ways to describe it! It is the perfect no-bake vegan pie & I am so excited to share the recipe with you guys! 😋

Crust:
▫️1 1/4 cup dates
▫️1 cup Old Fashioned Oats (@quaker)
▫️3/4 cup Raw Almonds
▫️Pinch of Salt
▫️1 tbsp Water
▫️1 tbsp Vanilla Extract
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pumpkin Filling:
▫️1/2 cup Peanut Butter (@jifbrand)
▫️1/2 cup Almond Butter (@justins)
▫️1 cup soaked Cashews
▫️1 cup Pumpkin Purée
▫️1/2 cup Coconut Oil
▫️1/4 cup Honey
▫️2 tsp Vanilla Extract
▫️1/4 tsp Cinnamon
▫️1/4 tsp Nutmeg

Crust: Blend all the ingredients together in a food processor until it starts to form a ball. (Pulse for roughly 5-6 mins). Once the mixture is fine & sticky, transfer to a 9” pie dish. Using your fingers, press the dough evenly & up onto the sides of the dish.
Filling: Blend all the ingredients together in a food processor until creamy. Pour out into the crust & use a spatula to spread evenly.
Place in the freezer for roughly 2 hours before servings! Top with shredded coconut 🥥
