Happy Monday everyone, let’s make some healthy choices this week🤩💪🏻🏆
I’ve gone back and forth with my start date over and over again. Start September 1st or maybe 3rd since it’s a holiday weekend, start last week or this week but nothing seemed to be the perfect start day. If I pushed back to this date then it would interfere would this activity. So, I dug into it and decided it’s time to start with no more delays! I’ve got a girls night tomorrow night then I’ll wake up ready to go Wednesday. If I keep pushing back I’m likely to never start so Wednesday is as good of a day as any. I’m glad I’ll be 10 days in when a lot of my friends join me for the journey. I’m glad I’ll have the extra time to continue on an extra 15 or 30 days if needed. I’m glad I’ll have the time for a slow reintroduction. I’m so ready for this journey. Round 4 coming at you! .

Skyr is an icelandic strained yogurt even more thick than greek yogurt with a whopping 21g proteins per portion (!!!) If you don’t have an allergy/sensitivity to dairy, its a wonderful food to incorporate.
So skyr it is on toast this morning. W/ walnut butter, honey, banana, dried figs, drizzle of dark chocolate, cacao nibs and granola. Wow. That was a lot 😬

Raspberry (from the yard) and peach cream cheese protein muffins for breakfast. There are some for the week and some for the freezer.  There are also two loaves to serve as dessert for dinners with friends this week. 
Back to school done right.  We stopped buying sugary breakfast cereals years ago, but I think the kids get something way better in muffins and goodness like this.  Back to school tomorrow. At least breakfast is ready!

This weekend has been busy, filled with getting ready for school and trying to enjoy this last weekend of summer as much as possible 😭 Started with getting my nails done and trying sushi for the first time (i LOVED!!!!) on Friday, did a little shopping and went to a new restaurant with Ryan yesterday where I got the best veggie burger & waffle fries (pic coming soon 😋), and then today made breakfast in bed for us and what better way to end summer than with a huge stack of the fluffiest pancakes E.V.E.R.😍 Found this gluten free, dairy free and grain free mix at a little local market in Delaware and thought it sounded interesting so I gave it a try and it was honestly so good!!! Might even like it better than regular pancakes bc of the fluffiness🤤 
My classes start tomorrow but just wanted to do a quick little update before I head to bed, see ya bright & early, gn gn 😴💙 •

- Lentils & diced Red Onion - Chickpeas with lots of spices
- Sautéed zucchini & mushrooms (husband ate that, too)🤦‍♀️
- Roasted brussel sprouts - Roasted kale & broccolini - Tahini dressing -
My Buddha bowl has the kale, broccolini, chickpeas, sweet potato & tahini dressing.💗

That zucchini I bought from the farmer’s market made a great simple dinner tonight 🌿
ZOODLE MARINARA :
Cook 1 lb. ground sweet Italian sausage + break into small chunks. 
Add 2 cloves of minced garlic. 
Pour in a jar of marinara sauce + let simmer. 
Spiralize some raw zucchini. 
Top zoodles with meat sauce, mozzarella cheese + fresh basil 🌱

The recipe that I loosely used was @ohsheglows Vegan Banana Bread. I’ve stuck to her recipe exactly before and it’s absolutely delicious!👍So, definitely give it a try! 
I made a few tweaks (notes below) this time b/c I didn’t have all of the ingredients and I wanted to add some of my leftover beet & carrot pulp from juicing. So, here’s what ingredients I ended up using... Almond & Coconut flours (instead of spelt flour & oats)

Here I mixed a can of white tuna with avocado mayo and a slice of sharp cheddar. Pile it on some Ezekiel bread and toast it up!!! Was super tasty and I’m so full!!

All throughout high school and honestly up until last year I was scared to show off my legs because I neglected training them for YEARS!

I’ve been training legs now twice a week and as you see, it’s paid off in some way 😏

The point of this post is, challenge your limits. If you don’t like your flabby arms, train them not.

We all know that calories in, calories out shit that we get caught up with! The I won’t eat all day so I can binge all night. The I will eat clean Monday to Friday and then abandon everything on the weekend.
The I will never get to my goal weight so I might as well give up.

I say, when you are ready to stop listening to all the noise about food and diets and restrictions, the best place to start is with this model. I have been following it and it works!

Lately, I’ve been eating a lot of pb + banana toast or waffles/pancakes (along with a smoothie) for breakfast, I haven’t had oatmeal all week so I decided to make some for breakfast this morning. The oatmeal is my typical gingerbread oats made with blackstrap molasses. Ever since making these, I have not wanted to make oatmeal any other way.

Have you ever tried doing a icecream from vegetables? No? You should definitely try this out! 😍🤩 Today I made this chocolate icecream, out of a frozen (cooked) sweet potato and a frozen zucchini 🙈 I blended them with a splash of soy milk and some cacao powder - that's it! This is such a simple way to make healthy icecream and also to add more vegetables into your diet 😜🙏🏻❤️

Craving for some fast food but in need of healthy options? Well, this tacos are just the right combo - quick and delicious, ready to be enjoyed and shared with all your loved ones 😍
Have a beautiful Sunday foodies 💕

🗝 you’ll  need chicken strips, bell pepper, feta cheese, cucumber , carrot , salat , tomatoes, avocado and spices.
Cut the bell pepper in slices and golden in a pan together with the chicken, salt, pepper, nutmeg, chili and oregano, until cooked though.
Whilst, cut the green veggies into pieces and set aside.
Take your tortillas, layer the veggies, bell peppers, chicken and cheese. 
You can make the tortillas yourself, will share the recipe soon, but if you are in too much of a haze, store brought ones will do also a great job. Add sauces or substitute with some fresh herbs and voila, lunch / dinner is served 🤤

When it comes to making #healthful adjustments to someone’s diet I find the concept of nutrient dense foods a hard sell a lot of the time 😑 Yes these delights will appear more calorific from the exterior BUT their wealth of health supporting benefits are EQUALLY as abundant 🙌🏻.

In a society where what we eat has long been dictated by numbers this change of mindset is a process, & yes we must be aware of the quantities we consume BUT a handful of nuts coming in at 100kcals or so is ENTIRELY DIFFERENT in terms of what it gives your body than a 200g pot of low fat yoghurt coming in at 99kcal 👍🏻.

The hormonal responses triggered by the GOOD QUALITY calories, #healthyfats & #plantbasedprotein in #nuts & #seeds mean you feel satisfied for longer, your blood sugar is more balanced & generally you are entirely better off 💛 So if I can encourage you this #weekend to start to whittle away at those preconceptions then I’ll be 1 very happy #nutritionaltherapist (& bunny 🐰😜).

🥥1c raw #coconut chips - this gives a natural sweetness & makes for a funnier result.
🌰1.5c mixed nuts - I’ve used 2/3c cashews, 1/3c hazelnuts, 1/4c brazils & 1/4c walnuts as I like the balance of the sweet & slightly more bitter flavours.
