Today was a busy Sunday! I started off the morning at church, then played tennis 🎾, watched some soccer games ⚽️ and then went to the driving range⛳️. I am so tired and ready for a good night of sleep tonight 😴
With such a busy day, I was glad I had a prepped sweet potato leftover from last week. Thanks to the meal prep and Trader Joe’s microwaveable meatballs, I pulled this lunch together in less than 5 minutes and it gave me the fuel I needed to keep going 🏋🏻♀️
Having a day in the home office, so taking advantage to do a bit of cooking. First up, a master stock that will be used later with some beef cheeks. I’m sure there’s a marketing metaphor in there somewhere!

I threw this super easy, yummy & balanced dinner together the other night with mostly frozen & canned stuff.😳 I had just gotten back in town & didn’t have much in the kitchen & I was CRAVING a nutritious meal! Luckily I had frozen veggies, canned chickpeas, a sweet potato & an uneaten avocado that traveled with me all week.
Here’s what I did👇
👉I roasted the frozen brussel sprouts & canned chickpeas (drained & rinsed) in the oven with some salt, pepper & other seasonings. 👉I then threw in the whole sweet potato 🍠 into the oven to let it cook with the other stuff. 👉While everything was cooking, I steamed the frozen broccoli 🥦 on the stove & sliced the avocado 🥑. I’ll scramble them with eggs, put them on pizza, toss them in spaghetti sauce, put in a fish taco, or just sauté for a side of veggies. Actualmente, los tiburones son uno de los pescados más consumidos en Costa Rica, y los consumidores a menudo son engañados y no saben que comen carne de tiburón, ya que comúnmente se vende con nombres falsos como "bolillo" y "cazón", o en platos nacionales como como Casado con Pescado o incluso Ceviche.

We ended up selling far more than I thought and my lovely partner stayed later than we were supposed to be there (because we literally made all of the food) so I could go home and cry over the grossest cramp pains.🥕We had loaded potato skins, amazing sushi rolls with all the sauces, pizza bites in gluten-free focaccia (incredible), cinnamon rolls, miniature cookie sandwiches with vanilla cream, ice coffee with almond-coconut milk, and coconut-orange blossom macaroons with drizzled chocolate.🍅So excited to provide the Nashville community with plant-based, Whooolleee Foooddss with no worries to the excess sugar, salt, and processed crap!
