Keto Kids - Huxley wanted nothing to do with the nachos. I tried it deconstructed and also tried giving it to him like everyone else. We even tried including these little guys to see if it helped. My goal never changes no matter how many times we “fail”, I’m always willing to try other ways to reach that goal. Penelope tried shoving food in his mouth 🙈 which I’m not a fan of because I think it makes the situation way more upsetting. It gets super frustrating sometimes, but I’m able to be patient because I always remember where we started. A boy who hadn’t any type of meat or protein in almost 18 months. A boy who ate only whole wheat goldfish (because I’m a good mom lol), whipped cream, Cheetos, tootsie rolls, fruit loops, ONLY the crust of pizza, ONLY the crust of a grilled cheese, syrup, French toast, and slushees. He didn’t eat your “standard toddler diet” of Mac and cheese, nuggets, hot dogs, pizza, chicken fingers, McDonald’s, ice cream, fruit, yogurt, pudding, pasta or cakes. None of that. He didn’t even drink juice. So he might not be eating my Ribeye 🥩 Pepper Nachos, but I praise God that He has been faithful to His promises and answers my relentless prayers of asking him to give me the endurance to run this marathon before me of raising of children and changing their diet. Ohhhh you didn’t think you could pray about food? You only pray OVER your food?? Why wouldn’t God care about that? Why couldn’t He help you stay disciplined, focused and determined? Just because He is a big God it doesn’t mean He doesn’t care about the “small things”.

If you need a simple, light healthy breakfast in the morning that tastes great but is simple and portable, try this banana peanut butter (or almond butter) with berries and granola .
The most magical thing about this berry banana treat is that it is completely balanced with its macronutrients. You have your carbohydrates (banana, berries and granola) and protein and fat (peanut butter).
Long story short, you love it, your kids will love it, you’ll stay fuller longer and be able to keep your summer figure. You are welcome 😜.
One of the questions I get asked the most is how do I track my calories, carbs etc? I don’t. BUT, I did when I first started, for the first 2 or 3 months I tracked to become familiar with carbs in food I ate on a regular basis and recognize how many hidden carbs are in everything. I used an app called Senza and I love it, it sets your macros based on your goals. I still use it when I go out to eat, but not on a daily basis because eating #lchf is a lifestyle for me now and I don’t want to be a prisoner to tracking.

🥣No Bake Brownies🥣
🍴Preparation time: 15 minutes
😊Total Time: 35 minutes
1/3 cup coconut flour
1/3 cup unblanched almond meal
1/4 cup unsweetened cocoa powder
1 cup confectioners Swerve
1 cup almond butter
1/4 cup coconut oil
3 tbsp. water
Pinch pink or sea salt
1/4 tsp. vanilla extract
1/2 cup sugar-free chocolate chips
1 tsp. coconut oil
1 Line an 8" square pan with parchment paper.
2 In a medium bowl, whisk dry ingredients.
3 In a separate bowl, microwave almond butter and coconut oil for 1 minute and stir until both are liquid and well combined. Add the vanilla extract.
4 Add the liquid ingredients to the dry ingredients and whisk until well combined.
5 Transfer the dough to the pan and refrigerate for 30 minutes.
6 Melt the chocolate chips with 1 tsp. of coconut oil and spread evenly over the dough. Keep refrigerated.
Fat: 17.2 g
Carbs: 8.3 g
Fiber: 5.1 g
Protein: 5.6 g

Keto Ribeye Pepper Nachos ❕
1 lb thin sliced beef ribeye
2 tbsp ghee
Flavor God Taco Tuesday Seasoning
15 sweet mini peppers
8 oz Monterey Jack cheese
1. Heat ghee in skillet on medium heat
2. Add ribeye, salt and taco seasoning.
3. Cook until it is done and set to the side.
4. Wash and slice peppers in half.
5. Place on baking sheet and salt them.
6. Bake for 5 -7 minutes at 350
7. Remove peppers from oven and place a little bit of cheese in each pepper.
8. Place back in the oven for 2 minutes to melt the cheese.
9. Remove from oven and top with ribeye and remaining cheese.
10. Bake for 8-15 minutes or until Cheese is melted.
Makes 4 large servings- macros for 1 .
441 calories / 27g protein/ 35g fat/ 7g net carbs .
Top with your favorite Keto friendly toppings - salsa, guacamole and sour cream. I used more cheese in our nachos, because I don’t use any of the other toppings. .
You can use any meat that have on hand for this simple recipe and cook the meat in something other than Ghee. My Keto family can have the extra fat because my husband is in maintenance and my children don’t need to lose weight. .

KETO BURNT BUTTER VANILLA SOFT SERVE ICE CREAM

Super fast & easy to make. Delicious as heck!
The burnt butter really takes this humble dessert to NEXT LEVEL YUMMINESS! This is GORGEOUS. Believe me.
You will need to have some pre-made BURNT BUTTER on hand. The recipe and method, I have already posted up. Just go back one post behind this one (Posted 16 August). INGREDIENTS:
HEAVY WHIPPING CREAM (HWC) 2 cups
BURNT-BUTTER CUBES 2 nos (2 Tbsp)
ERYTHRITOL 3 Tbsp (or to taste)
VANILLA ESSENCE 2 tsp
1. Stick your mixer bowl & whisk into the fridge to chill for at least 30 mins if you can (makes whipping up the cream so much easier).
2. Whisk HWC together with erythritol. When it starts to get stiff, add vanilla + BURNT BUTTER (it should be in a very soft state, but not completely melted).
3. Whisk until everything is properly mixed together. The finished ice cream should be fluffy.
4. Place into bowl, saran wrap. Put in freezer for 45- 60 mins. You want the ice cream to be very cold, but still soft enough to scoop or pipe out.
I used a piping bag for neater finish. Of you don’t have a piping bag, just fill ice cream into a ziplock bag, cut off one end at the tip, and use as a make-shift piping bag.
NOTE: The above will easily be enough for 5 people. HALVE it, if you don’t need that much.

Mmm, steak. Day 5 of carnivore is done! I finally wasn’t as hungry as I have been lately. I’m not sure if I’m finally adjusting or if it was that giant pile of meat and cheese I had last night. I fasted through breakfast, only had two pieces of cheese and coffee with heavy cream for lunch (I guess coffee isn’t technically strict carnivore, but I’m not ready to make that sacrifice yet. 😂) Dinner is this beautifully rare steak, seared in butter. My preference is grilled, but living in a condo with the grill at a clubhouse, it’s kind of pain. So as long as it’s rare, I’m still happy, no matter how it’s cooked. I’m still feeling great!
