If you are looking to try a light and summery dish try this Tuna with FRESH Avocado Salsa! It is to die for! And a great way to use some of your freshly harvested tomatoes! I thinly sliced it and served it over a nice big bed of spinach! If you don’t like fish you can even try this with chicken! Now back to my “BORING Keto Lunch”🤣
🐟 Seared Tuna Steaks With Summer Salsa 🎣 -
Makes 2 Servings
1 Serving:431 Calories, 26g Fat, 3g Carbs, 42g Protein
2 tablespoons olive oil
2 tablespoons lime juice
1 clove garlic minced
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons minced fresh cilantro
10 oz tuna steak
1 medium avocado pitted ,diced
6 grape tomatoes , diced
2 tablespoon minced fresh jalapeno pepper
1 tablespoon minced fresh cilantro
2 tablespoon lime juice
1 teaspoon garlic powder
Salt and pepper to taste(about 1 tsp salt and ½ tsp pepper in my opinion)
1. Make the tuna: In a small shallow bowl, whisk oil, lime juice, garlic, salt, pepper, and cilantro until smooth. Place tuna steaks in bowl, turning to coat both sides. Let tuna stand in marinade 15-20 minutes.
2. Remove tuna from marinade and discard marinade. Heat a grill to high heat and grill tuna steaks 2 minutes on each side (tuna should be a nice pink inside---do not overcook). 3. Once cooked set aside to sit for 5-10 mins.
4. Make the salsa: In a small bowl, combine all salsa ingredients. Season with salt and pepper to taste.

If you didn’t know this yogurt only contains 7carbs per cup (that’s a lot of yogurt).
My yogurt parfait recipe
•1/2 - 1 cup of yogurt
•1/8 tsp Vanilla extract
•4 or 5 little raspberries or blueberries (I know it’s not much, but those carbs do add up. Don’t add them if you don’t have to 😄)
•sweetener to taste

This recipe can be made in top speed, probably before you can load the kids up to go to the store and buy bread......and it’s KETO FRIENDLY...yes your heard that right!
I created this recipe because as a kid I remember going to my Mammaw’s house for Sunday dinners and I remember the smell and taste of her homemade bread! My Keto Journey was in honor of her because she gained her angel wings at the age of 76 after a long battle of diabetes!

Makes 6 slices
Serving size: 2 slice
Carbs: 2g net
3 Tbsp of Coconut Flour
6 Tbsp of Almond Flour
3 tbsp of melted butter
4 tbsp of water
1 tsp of baking powder
1 tsp of xantham gum
1/8 tsp of sea salt
DIRECTIONS: Mix all ingredients together then spread evenly in a bread pan lined with parchment paper, bake 400 degrees for 40 min!

•1 cup coffee
•2-3 tablespoons of any cream (I used coconut)
•1/2 cup of milk sub (you can add more or less depending on how creamy you like it)
•1-2Tablespoons of pumkin (I used 1tbls and it was delish, but you can always add 1 more 🤤)
•1/2 tsp Pumkin spice
•1/2 tsp Cinnamon
•Sweetener to taste

I just got back in town and my amazing @ketokrate was waiting for me 😍. This box is LOADED with keto sweets, and since you probably know from my posts how big of a sweet tooth I have, it automatically is one of my favorites. There’s also @choczero Keto bark in here which sounds delicious, but unfortunately I can’t do corn fiber so I’ll be sharing this one with a friend.

After a long weekend of holiday festivities, a simple meal was needed for dinner tonight. Chicken bacon ranch casserole fit the bill. Cubed chicken and cooked it on the stove. Once fully cooked, I melted in cheddar cheese and the ranch dressing. Then I added the bacon crumbles. I put it in a casserole dish, topped it with more cheddar and bacon.
