Many of you have been asking us about ‘Wagyu Beef’ so we thought we would help clear the air and provide some insights for everyone! ‘Wagyu’ refers to any cattle that is bred in Japan OR the Japanese style, the meat is then given a Beef Marbling Score (BMS) based on its level of Marbling (visible fat found between muscle fibres assessed within the meat). The Australian grading system is similar but different to the Japanese grading system the BMS used by the Japanese are rate 1-12. We have 2 systems that we use: AUS-Meat [AA] & MSA [MS] (Meat Standards Australia) both of which have a marble score grade of 0 – 9. The AUS-Meat grading system is primarily used for wagyu grading, MSA on the other hand is used to grade other red meats.
If the quality exceeds 9, in order to grade the other 9 levels of intramuscular fat our domestic producers starting using descriptions like Ultra, Gold, Black, Silver, 5 Star and so on to describe the marbling degrees. In general, they broke it down into 3 groups, BMS of 3-6, BMS 6-9 and BMS 9/Up or 9-12. In Australia, the grading is completed between the 10th and 11th rib, whereas in Japan it is between the 6th and 7th Rib.
The most sought after strain of Wagyu is the ‘Kobe Beef’, it is a very particular strain of Wagyu called Tajima-Gyu that is raised and monitored to meet strict standards in the prefecture of Hyogo (Hyogo is the capital city of Kobe, thus the name).
