Chicken Stir-Fry! Healthy eating can be so easy and quick (not to mention way more affordable than eating out)! All it takes is some planning ahead to make sure you have the ingredients on hand.
This one was some chicken marinated in coconut aminos, soy sauce & honey (save a little of the sauce for the veggies later). .
Sauté chicken in pan until cooked through. Remove from pan. .
Sauté the following veggies in 1-2 tbs avocado or coconut oil:
When done, return chicken to pan & add remaining sauce. Pro tip: make a big batch so you also have lunch or dinner for the next day!

First time trying the chocolate hazelnut @rxbar! 🌰 It actually tastes like a brownie omg 😍 The texture is similar of the other bars: soft and chewy! I would definitely recommend trying this one out..it’s maybe one of my top favorite flavors 😋
I don’t know about you, but “does it fit your macros?” is like Greek to me.🤨 As a post-partum wellness educator, I see so many women bite off more than they can chew in the nutrition and macros world that they usually give up.
Because tracking is hard. It’s daunting. And it’s not for everyone (there...I said it!) I’ve found the best place to start is right where you are. No fudging the truth, no making it seem like you are a nutrition rockstar.
We start in the PFC program by writing out what you’re eating and categorizing them as a Protein, Fat, or Carb.
Because those 3 do matter, but you HAVE to make them make sense to you.
Don’t stress about it. Don’t google things. This is a time for both of us to see where you are at, what you know and what your typical eating is like right now.

I was not feel good this morning. I think the combo of the park food, bad fish and too many rewards 🍸 last night had me with a very sour stomach 🤮
But it was too nice of a day to stay indoors. So checking a new Beach to us while the kids play! .

Dinner and dessert 🍗 🥓 🍠🍑. Spicy maple glazed chicken with roasted sweet potatoes and green beans with bacon and shallots 😋. Got this recipe from @ambitiouskitchen! It was supposed to be salmon, but my mom doesn’t eat fish, so I switched it and made it with chicken. I also doubled the recipe and it was tasty! I’m really into cooking with bacon right now; everything in moderation! I grilled peaches for dessert. They were yummy! I could’ve gone for some vanilla ice cream on top, but I didn’t have any. Overall, this dinner and dessert was 323 calories (6.2g fat, 40.8g carbs, 29.2g protein). Will probably eat a vitatop later because I anticipate myself still being hungry. I went to the gym after work tonight, which wasn’t ideal. It wasn’t my best workout, but I did what I had to do to get it in. Cooking green/yellow/string beans was never really my thing. I didn’t know what to do with them, and, honestly, they just felt so UNSEXY. (And obviously sex appeal is MOST important when it comes to vegetables! 🍆 🍆) .
I’m happy to announce I’ve found a cooking method that has rendered my anti-love affair with the string bean fam OVER! .
What we have here is the EASIEST, TASTIEST, and most super ADAPTABLE route to Green Bean Party Land. I’m only sorry I didn’t figure it out earlier. 👩🏻🍳 Hungry for the recipe? ⬇️
BEST BLISTERED BEANS
• Place de-stemmed beans in a bowl • For 1 1/2 lb beans coat with 2 1/2 TBSP olive oil to coat
• Add a pinch or two of sugar (to help the blister!) and up to 2 1/2 tsp of seasoning (garlic, red pepper flakes, cumin, paprika) + salt and pepps. MIX
• Add beans to a very hot large pan (I use cast iron, and yes, the one in the photo is too small) • Cook UNDISTURBED until those guys start to char and blister. I mean it! Don’t move ‘em! • After a few minutes, once some solid blistering has occurred you are free to toss to get those other sides
• Once they look pretty to you (don’t have to be super cooked, maybe 10 maybe, maybe less!) REMOVE and place back in the same bowl to save yourself some clean up • Now you can throw on some chopped nuts or herbs, a nice pesto, tahini sauce, lemon juice, cheese, or devour as is .
Thrilled I still have another bundle of these waiting for me 😋
Helllloooo (slightly wilty 😬) dandelion greens! I grabbed these the other day at our local natural foods store - I’ve had dandelion root tea, but I’ve never cooked with fresh dandelion greens before! Any tips for making them yummy? .

🌱SUPER high in vitamin K, and fairly high in other vitamins and minerals like vitamin A, vitamin C, and iron. 🌱 Dandelion is a very liver-protective plant, and it contains compounds with anti-inflammatory and antioxidant properties.
Lasaña de Calabacín con boloñesa de soja texturizada y falsa bechamel de Calabacín. Una adaptación de la clásica lasaña pero totalmente vegana, low-carb y apta para celíacos. Y está de muerte 😋.
🍴 Pimiento verde
🍴 Tomate triturado
🍴 Soja texturizada
🍴 Bebida de soja sin azúcares añadidos
🍴 Harina de garbanzo
🍴 Sal, pimienta, nuez moscada, orégano
Para la lasaña: corta el Calabacín en rodajas y dispón una capa en la base del recipiente. Reserva el resto. Trocea la cebolla, el ajo, el pimiento y la zanahoria en dados y sofríe con un poco de AOVE. Añade la soja texturizada, el tomate triturado y las especias y cocina a fuego suave durante unos 10'. Pon una capa de salsa sobre la base de Calabacín y añade otra capa de Calabacín encima de la salsa. Reserva.
Para la bechamel: sofríe una cebolla, un diente de ajo y un Calabacín cortado en dados en una olla con un chorrito de AOVE. Añade un vaso y medio de bebida de vegetal, añade sal, pimienta y nuez moscada y cuando rompa a hervir, baja a fuego medio y cocina hasta que el Calabacín esté muy blando. Retira del fuego, añade una cucharada de harina de garbanzo y otra de levadura nutricional (opcional) y remueve hasta integrarlo todo. Con la batidora, bate hasta que obtengas una textura cremosa. Coloca la salsa por encima de la lasaña y hornea a 220 durante 20'.
Last nights refeed was a big one 😍 but MUCH needed after a full day of training. I waited too long to eat after training so hard and not eating as much as I should have, but I surely made up for it 😍 pictured here is my trout with veggies and shrimp 🐠🦐 not pictured was some 🐙 and Greek appetizers !
Perfect quick, easy peasy and healthy lunch.
1/2 can chilli beans
1/4 can corn
Half fresh jalapeno
3/4 small to medium onion
Cumin to taste
Tiny bit taco seasoning
All seasoning to taste
Sautee till onions are tender
Baked potato in microwave
Topped with avocado
I made my client this for the week and thought I would make myself some too, although I don’t always do well with beans and quinoa - the bloat is unreal & quinoa can be difficult for me to digest. I decided to take the plunge and research the most effective ways to reduce these problems. I soaked my can of beans overnight (helps rinse off the gas-producing sugars in beans) and quick-soaked my sprouted quinoa (quinoa is covered in saponin, this protects them from insect) in hot water for a few min. then rinsed them thoroughly. I mixed the cooked quinoa with chopped up cilantro, purple bell peppers, green bell peppers, black beans, kidney beans, EVOO, lime juice, @picaflorculture chili flakes & pink salt. Also, if you saw my stories you’ll seen I drizzle some @sietefoods cashew queso blanco on top ftw! 🙌🏻

This is the truth. If you feel like everything is perfect right now it’s not gonna last your whole life. Same of you think everything is horrible rn things will get better!!
This time last week I had isolated myself. Last Wednesday I went and sat in a field on my own wishing that the ground would swallow me up. I felt trapped. Last Thursday I isolated myself from everyone around me because I was scared of getting hurt. Last Saturday I hid from everyone. If people spoke to me I would give them blunt answers. I didn’t want to be seen. I felt lonely. .
This week I have met up with people. I had really bad training sessions but I found a way to overcome them and fought past them and now I’m smashing out plyometric sessions which make me feel amazing!! This weekend I’m going out to chesington zoo with my best friend and my family. This time last year I would have dreaded it. I would have wanted to stay at home alone. When things feel tough I promise you they won’t last.
When things feel great I promise you they won’t last. It sucks I know I’ve been there but it’s the truth. .
But no matter what is happening you are strong. You are brave. And you are worthy of life and I am telling you to go out and live life to the fullest!! ❤️

Earlier this week I had someone come up to me at the gym (a male) and he started asking me questions bc I “have thick legs and look like I know what I’m doing”...while at first I was highly offended by this comment I took a minute to reflect on why I’m actually there and how I actually feel about myself.
Do I have stick thin legs? No. Do I want stick thin legs that go against my genetic make-up? Not really. Do I like feeling strong & capable & fit & all of the above? Yes.
While his comment played on one of my biggest insecurities I quickly reminded myself that I’m not there to be skinny or thin, I’m there to get stronger and if that entails having thicker thighs, so be it!

He andado desaparecida por aquí.. la verdad es que no he tenido tiempo de hacer ninguna receta nueva o elaborada que pueda compartirles. Mi día a día se ve bien simple, nada fancy y a veces no tan bonito como para una foto, pero es lo que me funciona ahorita en lo que le agarró la onda a comer contando mis macros, adaptó mis recetas o encuentro nuevas ;) Pero ahora me hice este omellete ( no lo doblé porque se quiebra de lo grande que es y no me gusta como se ve 🙈) con hongos, espinaca orgánica de @agrocumbre y carpaccio que doro antes! ¿Alguna vez han dorado carpaccio así? ¡Sabe a tocino! Quedó tan rico que tenía que compartirlo :) Si se animan a probarlo les dejo un tip: Ojo con la sal porque el carpaccio se siente más salado al dorarlo, ( se dora con un poco de aceite de coco en spray a fuego medio alto pero cuidado que se quema rápido! Para el omellete:
Mezclo en un bowl 1 huevo + 2 claras con los hongos (que doró antes) y la espinaca cruda. Luego agregó un poco del carpaccio y ya no le agrego sal al omelette! El resto del carpaccio va encima some berries on the side y listo! Es el combo perfecto ✨🍓🤤
