One fabulous way to make it through the holidays is to CHEAT!

I got this root vegetable mix at Whole Foods today.  It has carrots, turnips, parsnips, and rutabaga (I think) in it.  It already came chopped up. 
What's even more fabulous is that there's also garlic, thyme, shallots, and rosemary in the mix.  All I had to do was toss in olive oil, salt and pepper, and throw it in the oven for about 45 minutes.

You can still eat healthy, cut corners on time, and make it through the holiday season with some of your goals intact!  I even got my kids to eat some of it....and they didn't die!

Just spiced things up with some cumin, salt, garlic and a sprinkle of curry powder- we love that Indian food but you could really add any spices you fancy 👌🏻 sarayo is the sauce we love on our tacos, and only a couple bucks to buy!

~ Avocado, Tuna, Chickpea salad with lemon dressing ~

FOR THE SALAD
15 oz (425 grams) Tuna, canned in brine or olive oil
14 oz (400 grams) can Chickpeas drained
2 large Avocados, pealed and pitted
2 large vine ripened tomatoes, cut into wedges
1 large cucumber, halved lengthwise and sliced
1/2 of a red onion, sliced thinly .
FOR THE DRESSING
1/4 cup olive oil
2 tbsp fresh squeezed lemon juice 
1 tbsp fresh chopped parsley (plus extra to serve)
1 tsp minced garlic (or 1 large clove of garlic, minced)
1/4 tsp salt

INSTRUCTIONS 
Whisk together dressing ingredients in a jug or a jar.
Mix together all salad ingredients in a large bowl. Toss with dressing. Season with pepper and extra salt if desired.

Back to basics 🧶
I’ve tried to become vegetarian for last couple of weeks. After having been pescatarian for 4-5 years, I found it quite easy. Still, I had difficulties to maintain my protein intake and low carb due to the poor planning. I am definitely not saying you can’t eat enough protein if you’re vegetarian, I’m saying I just couldn’t handle the change. I’ll definitely try going vegetarian very soon!

GUYS I MADE A MISTAKE 😥😩 so yesterday as you saw I was very thoughtful about my finances and lunches and made two lovely and filling lunches for the last two days of the week. Today my fat-ass then went ahead and ate BOTH the lunches in one sitting 😂😬😷🐋🐳 so then I was left with a very full tummy wondering what on earth I was going to have for lunch tomorrow. The easy option is obvious: grab that pack of noodles at the back of the cupboard at work and crack an egg and mix a lot of processed flavour satchets into it. The hard option? Once I started, it wasn't that hard. It took about ten minutes to sauté onions with spices and salt and pepper, toss in some chickpeas and gently fry, mash together some cayenne pepper, avocado and lemon with salt and pepper, chop some tomatos and sprinkle feta over the whole lot. And when you think about it, it's actually the easy option: easy on my conscience, easy on my wallet (albeit not as cheap as noodles, but let's face it, I probably still would have been hungry after all those empty carbs and spent money on more food), easy on my gut, which is in turn easy on my mental state and energy levels, and easy on the eye! The creation looks extremely delicious and I'm going to enjoy it a lot more than a pack of noodles tbh. ❤😇😋👌tag someone lazy like me to show them it's not that hard! Ok everyone, we know Christmas is coming, and the mad dash has already begun.  I truly believe however, we don't have to do it hard.  So, over the next 2 weeks, I'm going to share some easy to prep, serve and share dishes with you.

They can be organised into easy celebration menus for small or large groups, also, I'll advise dishes you can prep, cook, freeze and serve on the day too - so no hassles and more celebrating.

This incredible parfait, is divine, beyond heaven (if you're a vegetarian, change the chicken to a selection of mushrooms) and can be frozen once cooked and chilled.  It will last in the freezer for up to a month too. 💋💋

As we eat with our eyes first, it's best to choose veggies that gives a variety of colors and that are lower in carbs such as bell peppers or paprika, cauliflower, brocolli and button mushrooms. By roasting the chicken together, the drippings from the chicken will flavor the veggies at the same time.

Happy Wednesday! It’s more than halfway through the week & only 2 days away from the weekend. It’s been way nicer here in STL hitting 58º today & lower 50’s just the last couple days before so there is not much to complain about.. expect the pups wanting out every few minutes causing me to behind at work, but I’m letting them enjoy it while they can☀️. Swipe left to see the pups in their natural habitat in my office, they love to be up & personal with me at work.🤪 .

Ingredients:
•1 cup quinoa
•2 cups beef broth- you can use water but broth of any kind gives it more flavor
•1 lime-juice
•1 avocado .
•1 jalapeño .
•1 can corn (15oz.)
•1 can diced tomatoes (14.5oz.)
•1 can black beans (15 oz.)
•1 tablespoon olive oil
•2 tablespoon minced garlic .
•2 tablespoons cilantro-fresh
•1 teaspoon chili powder
•1 teaspoon sea salt
•1/2 teaspoon black pepper
•1/2 teaspoon cumin .
—> I added hot sauce on top, you can also add sour cream & shredded cheese too.

You can either bake at 350º for 30-40 minutes with tinfoil on top or cook on low to medium for 30 minutes with lid, stir often! If need be you can add more broth.

Simple and clean Enchilada "fries"
If your lifestyle allows, some cheese and sour cream would take these things to the next level! 
I always have shredded chicken in the fridge and red potatoes in the pantry. I was just looking for a way to put a different spin on some of our "go-to"  ingredients. 
This may not be mind blowing but it mixed up our could be boring meal prep!
🌮 🌯
-2 cups enchilada sauce(I made my own)
-4 cups shredded chicken
-5 cups red potatoes cut into "fries" -1 tsp salt
-1/4 tsp pepper
-1/2 tsp garlic salt
-3 TBS olive oil

Preheat oven to 375°
-Toss potatoes with olive oil, salts and pepper in a 9x13" baking dish
-Bake for 20 min
-Remove from heat and stir
-Cover with chicken and enchilada sauce -Return to oven for 15 more minutes or until potatoes are tender.

Pulled BBQ Chicken Seriously the easiest dinner ever! Can’t believe I haven’t shared yet. 
You can use either chicken thighs or breasts. Put them on the crockpot, add some barbecue sauce (homemade or store bought) and cook for 4 hrs on high or 8 hours on low. 
When it’s done, I pull the chicken apart while still in the crockpot with two forks and then add more barbecue sauce. I put the crockpot on “warm” until we are ready to eat. 
For the kids I serve on buns or a better option is with veggies or salad on the side. 
If you make a big enough batch it can be used all week as it is easily reheated. 
Nice to have on a cold winter day!

Hey, hey, it’s Wednesday! Who could use a 4 STEP recipe for tonight’s Hump Day dinner? 🙋‍♀️🐪🍽

When I’m not in the mood or don’t have the time to clean up too many dishes after cooking, I tend to think of recipes that provide a bowl or serving plate within themselves! Stuffed peppers are a favorite dinner in our house as they can be customized according to theme- do them Spanish, Greek, or Moroccan style- and you easily take care of a vegetable portion this way!

Italian Stuffed Peppers were on the menu for this week as these chilly temps have us craving all things warm and saucy. Here’s a breakdown of my 4-step process:
1️⃣Prep your fillings- cook 1 cup of quinoa on the stovetop, and while that’s going clean out your peppers, roughly chop some kale, rinse a can of chickpeas, and open a jar or can of tomato sauce- I like to add dried basil and chili flake for added flavor.
2️⃣Mix the filling- in the same pot that the quinoa just finished cooking, add in the kale, chickpeas, and tomato sauce. Heat it up until kale starts to wilt.
3️⃣Stuff peppers- pretty self explanatory…
4️⃣Top with some shredded mozzarella and bake for 10 minutes in a covered baking dish that has a small amount of water in the base- this creates some steam and helps the peppers soften up.

Depending on how hungry you both are, I recommend one full pepper per person, or you could split a pepper and serve your half alongside more veggies.

I unwrapped the pork loin, put it in a dish, inserted it into the oven and went about my business. 
An hour later I sliced the meat up, unwrapped the greens and cooked rice, and assembled them as so. 
Legit, less than 5 minutes in my kitchen. And this meal is lean, simple and complete.

LEMON GARLIC BUTTER SHRIMP WITH ASPARAGUS🍤🌱

1.5 lbs (700g) medium raw shrimp, peeled and deveined
1.5 (700g) asparagus (1 bunch) rinsed and trimmed
3 tablespoons butter
1 tablespoon olive oil
5 clove garlic, minced
1 teaspoon Italian seasoning
2 teaspoons onion powder
Salt and fresh cracked pepper, to taste
1/4 cup (60ml) vegetable stock
1 tablespoon Sriracha (or any hot sauce you like)
Crushed chili pepper flakes, optional
Juice of 1/2 lemon
Fresh chopped parsley or cilantro, for garnish
DIRECTIONS

1. Place a large non-stick skillet with 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the asparagus and season to taste. Saute until the asparagus is crisp-tender, 4-6 minutes. Remove from the pan and set aside.

2. In the same pan, add remaining 2 tablespoons butter and add shrimp. Season with salt and pepper, cook 1-2 minutes on one side.

3. Add the minced garlic, Italian seasoning, and onion powder. Stir to combine and flip the shrimp to cook on the opposite side.
Cook for 1 minute then add 1/4 cup vegetable stock and Sriracha. Allow the sauce to reduce for 1 minute, making sure not to overcook the shrimp.

4. Push shrimp on the side and add asparagus back to the pan. Stir asparagus to coat them into the sauce and squeeze half of a lemon over the top of the shrimp and asparagus. Allow reheating for 1-2 minutes. Remove from heat, garnish with parsley, lemon slices, and red crushed chili pepper if you like. Serve the shrimp and asparagus immediately, enjoy!

Snacks are usually thought of as something QUICK that can be eaten on-the-go amidst the hustle and bustle of daily life 👩‍💻🏃‍♂️Even as I recommend snacks to my patients my first thoughts are often a healthy packaged option (such as a low sugar protein bar) or non-perishable things (think nuts and fruits) that are quick and easy.

But think about the number of times you’ve been at home, or maybe at the office, and you’re hit with a snack attack...this could be your chance to prepare something equally FAST but that doesn’t have to be the same ol’ room-temperature standbys!

The snack I made at home the other day HIT THE SPOT and I just had to share this fast, filling, and delicious TWO MINUTE TACO! 🌮While I’m a big supporter of the “eat the egg yolk!” 🍳message, I tried egg white patties from @goodfoodmadesimple for a no-mess substitute and I can vouch that they work great in a pinch and still provide a hearty dose of protein. All you have to do is place the patty on a plate, microwave for 2 minutes-but with 30 seconds left, open the mic and lay on the cheese to melt- then serve it on a warmed or griddled tortilla and top with your favorite salsa. Ta-da- a warm snack in 2 minutes! 🎉

⭕️1 block extra firm tofu (I prefer organic)

⭕️1/4 C. Bragg’s liquid aminos, coconut aminos or low sodium soy sauce .
⭕️1 TBSP peanut or canola oil

⭕️1 TBSP corn starch
.

-Pre-heat oven to 425 . -Cut tofu into bite size pieces.

-Put in mixing bowl with above ingredients and gently combine until all pieces of tofu are coated .
. -Line baking sheet with parchment paper and arrange tofu on the paper in a single layer .
. -Bake for 25-30 min. turning half way through .
