Buckwheat spaghetti with "puttanesca" sauce 🍽
This plate is so easy but will leave you really satisfied 😋
I have ditched white pasta since ages now and after removing gluten from my diet, my gut health improved even more.
Best gluten free option so far? Buckwheat pasta 😁
Ingredients for 5 people: - 1 onion
- 20 cherry tomatoes
-500 gr of tomato sauce (no ketchup) 😅
- 1-2 cups of pitted olives
- 1/2 cup of capers -Salt
- 400-500 gr buckwheat pasta
1.Heat a medium pan and add the onion finely chopped.
2.Add some water for prevent burning( I watersaute as I try to avoid oils for cooking)
3.Add the cherry tomatoes, cover and let it cook for 5 minutes.
4.Add the tomato sauce, olives, capers, basil and salt and cook covered for 20 minutes on low heat (if you have more time let it cook for longer, more it cooks better will taste)
Maybe because I'm Italian 😅 but pasta is one of the best food ever to enjoy and there is many healthy option free from gluten and other nasties. 😁

Smettendo di mangiare la pasta bianca e dopo aver rimosso il glutine dalla mia dieta, la salute del mio intestino è migliorata ancora di più.
La migliore opzione senza glutine fino ad ora? Pasta di grano saraceno 😁
Ingredienti per 5 persone:
- 1 cipolla
- 20 pomodorini
-500 gr di salsa di pomodoro
- 1-2 tazze di olive snocciolate - 1/2 tazza di capperi
- 400-500 gr di pasta al grano saraceno Preparazione della salsa: 1.Riscaldare una padella media e aggiungere la cipolla tritata finemente. 2.Aggiungere un po 'd'acqua per evitare che bruci (uso l' acqua per evitare gli olii per cucinare)
3.Aggiungere i pomodorini, coprire e lasciare cuocere per 5 minuti.
4. Aggiungere la salsa di pomodoro, le olive, i capperi, il basilico e il sale e cuocere con coperchio per 20 minuti a fuoco lento (se avete più tempo lasciate cuocere più a lungo, più cuoce più viene saporita)

*RECIPE* So this is one of my all-time favourite ‘healthier’ sweet snacks! Mainly because it is so easy to make and it doesn’t have a long obscure list of ingredients! I have a confession though, it’s not exactly a new recipe, but I have tweaked it a little to reduce the amount of coconut oil in it. So for anyone wanting this ultra-smooth peanut buttery chocolatey goodness then read on! I promise you will not be disappointed... PEANUT BUTTER CHOCOLATE BAR
1 tblsp honey
140g organic 100% natural peanut butter
1 pinch salt (I used pink Himalayan salt)
20g organic coconut oil
100g ultra dark chocolate (or cacao), I use 95% dark chocolate
1 tblsp coconut oil
1. Line a loaf tin (cling wrap, baking paper or alfoil). 2. Place peanut butter, honey and salt in a bowl and mix together.
3. Melt the coconut oil and pour into peanut butter mixture until smooth. If you need to heat the mixture up because your honey has crystallised you can. Just enough to allow all the ingredients to mix together.
4. Pour into prepared loaf tin, cover and chill in the freezer for at least 30 minute or until set.
5. Then in a separate dry bowl, add chopped up chocolate and coconut oil. Heat in the microwave for 30 seconds at a time string in between until smooth.
6. Pour over the top of peanut butter layer. It should set quickly from the cold.
7. Chop into bars or bite size squares.
You can store it in the fridge or freezer. I recommend the freezer as its way tOo tempting sitting in the fridge and won’t last long! ENJOY!
Tacos Tuesday on a monday! These were so simple to make and yet so delicious and filling! corn tortillas, puréed sweet potatoes, scramble tofu, avocado, cashew cream cheese, some purple sprouts and a huge side of green salad 👌🏻 Its pretty quick to make, which makes it a perfect meal after a busy day ☺️
Zoodles with Meatballs 🍝
Could eat this every week & not get tired of it! (I make spaghetti noodles for the kids.) I took leftover salmon and sauteed bell pepper, red onion and jalapeño. I made quesadillas using these awesome corn/flour tortillas from HEB! Nothing short of delicious and I had a full belly! •

My vegetarian replacement for the chicken breast is a pack (4 pieces) of @gardein Chick’n Scallopini. 😋
Chicken Fajita Salad
1 lb raw boneless skinless chicken breast
1 medium red bell pepper, thinly sliced
1 medium yellow bell pepper, thinly sliced
¼ teaspoon salt
½ teaspoon chili powder
½ teaspoon cumin
¼ teaspoon garlic powder
2 teaspoons olive oil
2 tablespoons lime juice
¼ teaspoon chili flakes
3 cups chopped romaine lettuce
1.5 oz sliced avocado
Heat pam in a pan over medium-high heat. Cook the chicken, bell peppers, onion, salt, chili powder, cumin, and garlic powder for five minutes, stirring constantly. Flip the chicken, and cook for another five minutes, until chicken is cooked and vegetables are slightly soft. Remove from heat and slice the chicken into strips.
In a small bowl, combine the olive oil, lime juice,splenda, chili, and salt, stirring until evenly mixed.
In a large bowl, toss the romaine lettuce with the chicken, peppers & onions, avocado, and dressing. Serve!
Per Serving: 1 leaner, 1 healthy fat, and ~3 condiments

Macarrão cremoso com peito de peru: (rende duas porções)
* Meia cebola picada em cubos * Um dente de alho * Dois peitos de peru (a carne, não o presunto) ou peito de frango. * Uma colher de chá de ketchup
* Uma colher de chá de mostarda
* 250 ml de leite de coco * Sal e pimenta a gosto
* Páprica a gosto
* 250 g de macarrão integral (spelt)
* Abacate para decorar (opcional)
Modo de fazer:
Frite a cebola, o alho. Quando estiver tudo douradinho coloque o peito de peru cortado em cubos. E logo em seguida a mostarda e o ketchup. Coloque o macarrão pra cozinhar com um pouquinho de sal. Quando o peru estiver cozido, acrescente o leite de coco e leve a fervura. Deixe em fogo baixo até o macarrão ficar pronto! Escorra a água do macarrão e coloque ele (sem a água) na panela com o molho. —

Creamy pasta with turkey and coconut milk:
* Half chopped onions * 1 garlic clove * 2 turkey breasts * 1 teaspoon of katchup
* 1 teaspoon of mustard
* 250 ml coconut milk
* Salt and pepper * Pinch of páprica * 250 g spelt flour
* 1 avocado (optional)
Put the onions and garlic to fry on with a bit of olive oil. When the garlic became golden, add the chopped turkey, the ketchup and the mustard. While the meet cooks put the pasta to cook in another pan. When the meet is cooked add the coconut milk e de rest of the ingredients. Leave it to boil and then keep it in low power oven until the pasta is ready. When the pasta is ready and drained add it in the pan with the sauce. Add avocado chunks to serve.
Lunch time 🤗 I needed something quick and easy to whip up while heading out the door for work- so here it is!
• light English muffin (my obsession)
• 1 tbsp almond butter
• 1/4 banana
• sprinkled on top- nature valley granola!
