How I’ve been using all the zucchini and tomatoes from my garden. 1- chicken, tomatoes, zoodles and feta over quinoa then a squeeze of lime juice. 2- one of my favorite snacks, cottage cheese and tomatoes 3- scrambled eggs, left over insta pot potato, deli ham, red pepper, cheese and zoodles. This bowl is also so good topped with salsa! 4- potato, grilled chkn, zoodles, sliced tomatoes. 5- chicken, zoodles, red pepper, feta, lime juice. 6- chicken, avocado, corn, tomatoes, yellow pepper and salsa. Chicken Pakoras/Spicy Chicken Fritters for those Friday evenings when you want to indulge a little.. well the combination of approaching weekend and some light rain was the perfect setting for some Friday night Pakoras.. yeah I did miss a good glass of wine but well 😬😬😬😬!

And like always these were super easy to whip up.. 🌶Simply marinade the bite sized chicken pieces with finely chopped onions, ginger garlic paste, minced green chillies, finely chopped coriander leaves, curry leaves, garam masala, red chilli powder, lemon juice and seasoning for approximately 30 minutes .. .🌶 Just add chickpea flour and semolina and mix with the marinated chicken before frying and heat the oil in a pan..
.🌶These lovely crisp Pakoras were shallow fried because I don’t personally like deep frying much but please feel free to deep fry them
.🌶Sprinkle some chaat masala, sliced onions, chilles, finely chopped coriander leaves and just pop them into your mouth with a side of chilled beer.. .

Necesitas:
1 huevo 
2 claras 
50 gr de harina integral
50 gr de avena triturada 
4 cdas de miel 
5 sobres de edulcorante 
1/2 taza de granola
1/2 taza de frutos secos 
Mezcla todo, distribuí la mezcla en placa cuadrada, previamente enmantecada y enharinada y lleva al horno medio durante 45 min aprox .
Deja enfriar y corta en rectángulos .
Las podes guardar en frasco de vidrio y te duran un par de días !!! Súper sanas, ricas y fáciles !

Siempre qué hay un plátano medio feo lo congelo, luego solo batiendo en mi Thermomix por 2 minutos se hace helado solo con los plátanos, sin azúcar ni algún tipo de grasa!. También tenía unas ricas frutillas congeladas que también en 2 minutos prepare el helado, en este caso incorpore un poco de crema para que quedara con una consistencia rica, pero no le añadí azúcar! Con el dulzor de las frutillas es más que suficiente!.

En un par de minutos estábamos comiendo helados muy fácilmente, solo ensuciando el vaso de mi Robot de Cocina y la espátula.

Siempre qué hay un plátano medio feo lo congelo, luego solo batiendo en mi Thermomix por 2 minutos se hace helado solo con los plátanos, sin azúcar ni algún tipo de grasa!. También tenía unas ricas frutillas congeladas que también en 2 minutos prepare el helado, en este caso incorpore un poco de crema para que quedara con una consistencia rica, pero no le añadí azúcar! Con el dulzor de las frutillas es más que suficiente!. . En un par de minutos estábamos comiendo helados muy fácilmente, solo ensuciando el vaso de mi Robot de Cocina y la espátula. . I dont do measures, but here is my #recipe

Steel Cut #Oats (They won't keep you as full for as long)
Lite Milk - whatever you chose, cows, soy, almond. (Personally I am a big cows milk fan)
You can add half water if you like
Add a tbs or so of full fat natural #yogurt
Add the milk to it is a sloppy consistency (reminder much of the liquid will be absorbed overnight, so if it is overly sloppy dont fret too much. Personally it makes a creamier texture, but it is personal choice 
Nativa or stevia to taste
Frozen Blueberries 
Frozen redcurrants
Dried Cranberrys if you like (not too many as they are pretty sugary and therefore increase the GI )

Leave refrigerated overnight

Add thinly sliced green apple and a few roughly ground  raw (not roasted) almonds (I bang them with a rolling pin) 
Spoon into #recycled peanut butter jars and voila

Great for a uber healthy, low GI #morningtea #snack to keep you fuelled up or as a wholesome brekky .

How to Perfectly soft and silky fried eggs, ready to eat in just 5 minutes

Ingredients
1 Tbsp vegetable oil
Large eggs
Pinch of sea salt
freshly ground black pepper, to taste

Method
Get your frying pan on a low heat and add enough oil to lightly coat the bottom of a large nonstick pan.

Crack the eggs into the pan. As the oil gets hotter you’ll see it start to change the colour of the egg white. If the oil starts to spit it’s because it’s too hot, so turn the heat right down. Cook until the tops of the whites are set but the yolk is still runny.

When they’re ready, remove the pan from the heat and take the eggs out using a spatula. Place on a plate and dab them with some paper towels to soak up any excess oil. Serve with a sprinkling of the sea salt and freshly ground black pepper.

Grilled Chicken Stuffed with Cheese and Peppers
Serving Size: 4
Per serving
1 Leaner protein
3 vegetables
3 condiments
1 fat
Ingredients
• 4 chicken breast, boneless, skinless – total weight 27 ounces
• 8 sweet peppers, sliced – total weight 1 ¾ pounds
• 4 slices low fat pepper jack cheese – total weight 2 ounces
• 4 slices low fat colby jack cheese – total weight 2 ounces
• 1 tablespoon creole seasoning
• 1 teaspoon black pepper
• toothpicks
Instructions
 Rinse chicken and pat dry.
 Mix seasoning blend together and set aside.
 Cut a slit on the side of each chicken breast, do not cut all the way through the chicken.
 Drizzle the inside and outside of chicken with olive oil, rub well.
 Season chicken on both sides and inside the slit with seasoning blend.
 Slice peppers into rings and slice cheese and half.
 Place cheese on bottom of chicken, top with peppers and top with another slice of cheese.
 Secure chicken with 3-4 toothpicks.
 Prepare grill and grill chicken for 8 minutes per side. Or until chicken reaches a internal temperature of 165 F degrees.

Enchiladas are a surefire family favourite taking just 20 minutes from start to finish. Kids can help by filling the rolled tortillas in the bottom of the baking dish. Use your leftovers again during the week: Cut corn tortillas into quarters, and bake until crisp; then use the shredded chicken and any other ingredients you have on hand to build nachos on a baking sheet. Serve the enchiladas with a salad and sour cream.

100g of cheese 
3 Tbsp vegetable oil

1 tsp ground cumin
Chilli powder (as much as you like)
1 red pepper, sliced
1 can chopped tomatoes

Method
Add vegetable oil to a frying pan and heat it up. Chop the chicken into chunky pieces and add it to the pan to brown. Turn it over occasionally so it gets cooked on all sides.

While the chicken is cooking, slice the onion and pepper. Throw this in with the chicken and let it cook for 5 minutes. Add the spices and add lots of salt and pepper. Pour in the chopped tomatoes, mix it together and simmer for 5 or 10 minutes.

We're ready to assemble everything. Lay out the wraps and fill them up with the chicken and sauce, before wrapping them up and placing in an oven dish. Pour over any remaining sauce, add loads of grated cheese on top and get them in the oven for about 25-30 minutes at 160℃.

I was bad this weekend and suffered for it this afternoon, & my body wanted something simple after my gym sesh, so I made soup! The potatoes I had were off, so I just made a simple carrot soup, but omg it’s amazing (added #quark after too)! 😋 I’ve found something healthy and tasty that I really enjoy again - gonna make loads more and get freezing some too 😊

INGREDIENTS
2 avocados, pitted
1 can albacore tuna
1/4 red onion, minced
1-2 celery stalk, chopped
3 Tbsp Greek yogurt
1 Tbsp Dijon mustard
Juice of 1 lemon
Salt and pepper, to taste
Chopped parsley, for garnish
INSTRUCTIONS
Scoop out avocados, leaving a small border. Dice avocado and set aside.
In a large bowl mix together the tuna, red onions, celery, Greek yogurt, Dijon mustad and lemon juice. Season with salt and pepper. Fold in the diced avocado
Spoon the tuna into the crevice of the halved avocados. Garnish with parsley, and enjoy!

POTATO 🥔 FRITTERS
Ingredients:
About 2 tbsp vegetable oil 
1 onion, finely chopped
4 medium potatoes 🥔, coarsely grated
1/3 cup sesame seeds, toasted
1 tbsp cornflour
Salt and pepper
2/3 cup extra vegetable oil 
Sauce :
1 teasp cornflour 
2 tbsp water 
1/3 cup soy sauce
1/4 cup rice vinegar 
2 teasp sesame oil

1. Heat the 2 tbsp oil in a pan and cook the onion until soft, remove and leave it to cool.
2. Combine grated 🥔 potatoes, onion, sesame seed and cornflour in a bowl 🍲 season with salt and pepper.
3. Heat about 2 tbsp from extra oil in fying pan, spread about 2 tbsp potato mixture and cook on both side until well brown and crispy, drain on kitchen paper. Serve fritters with the sauce.

1. Preheat the oven to 200 C.

2. Remove the small inner chicken fillet from the breast, lay the breast flat and carefully slice it down the length, opening it up like a book. Marinade with juice from one lime, olive oil, and salt for about 20 minutes.

3. Arrange the Garlic Roasted Sweet Potato Chunks on a single layer on an oven tray. Bake for 23 minutes.

4. Grill the chicken on a hot barbecue for about 4 minutes each side.  Slice and keep warm.

5. Grill the tacos.

6. Combine harissa, avocado and Créme Fraiche with a hand blender until smooth.

When it comes to carpaccio you should know that it's always about the finest cutting. The thinner you cut the food, the more exquisite the dish will be. To reveal the full potential of these raspberry-scarlet tomatoes I suggest using a high-quality extra virgin olive oil, a little sea or Himalayan salt and necessarily freshly ground black pepper!
