A time-honored tradition, dry aging gives the beef a rich, distinctively meaty flavor that’s perfect for the meat connoisseur. All it takes is one bite to fall in love with the robust taste of dry-aged beef!

250118 Day 7. Headed to La Shomon for Kobe Beef. We ordered the Yume No Set (¥7722 for a 2-person serving. Comes with 50g Wagyu sashimi, 100g Here (Tenderloin), 50g Kainomi (Rib), 50g Uchi Harami (Inside Skirt), 100g best marbleised cut of the day). We also had some preordered dry-aged beef (can't remember the weight and price). This piece was dry-aged for a 2 month period. They take their dry-aged beef very seriously. We had one of the shop employees help us grill the dry-aged beef. We were told that the beef had to be cooked 3 times -- cook for 20min, rest for 5min, repeat.
The whole meal including 2 beers, some rice, and complementary ice cream (choice of matcha/yuzu/vanilla) cost us ¥34649. So worth it for good beef though 😋. A quaint little shop with good Kobe beef at affordable prices 😊
I also really like how they put in effort to write the names of the beef (calligraphy style) and display them with the served beef cuts 👍🏻.
The most epic of meal times was had. The house dry aged prime rib roast was finally deemed ready after 42 days in the dry age fridge. Came out spectacular! Little bit of funk but super tender and juicy. Of course we had to match the extravagance with the sides. Lobster Mac and cheese with sharp cheddar and gruyere cheeses. Roasted bone marrow from @naughtypigbutchershop and potatoes duchess. What a feast!!
The Sunday roast at @blacklockchops Soho is a must try. It is so popular you have to book at least 4 weeks in advance. Our favourite is the roasted 55 day aged beef 🥩, cooked perfectly medium rare. We couldn’t resist the pig head on toast and scallops with blood sausage for starters. Stop reading, go book your visit NOW! #notapaidpromotion#sundayroast#dryagedbeef#blacklock#london#foodie
