It's #AfternoonTeaWeek here in Instagram-land, and what better way to celebrate than combining our two great loves (tea and cake, obviously) in a single recipe! 
@Karolinevice vegan tea bread recipe is a firm fave of ours, so we decided to use one of our herbal tea blends (linden, lavender and ginger) to make it, instead of the usual black tea. The result was wonderful: the perfect treat for both breakfast and afternoon tea.

The general advice isn’t wrong in the sense that [in isolation] fruit contains nutrients, fibre and hydration which benefit our overall health more so than a processed snack. The problem lies though, in the depiction of what state the fruit is in. For example, both sets of fruit in my graphic contain the same food and equal weight. Yet one side is drastically higher in calories and sugar than the other side. How?

Whereas dried bananas lose around 95% of water content, making them a far more concentrated calorie source. The same logic applies for any dried fruit. Essentially, per 100g, you’re eating the calorie and sugar worth of what would be a LOT more fresh fruit. That is literally how simple it is. -

Snacking on fruit is beneficial. But you still have to be smart about it. If fat loss or reducing sugar intake is your aim, you can consume a greater volume of food per calories when the fruit is fresh. Consuming more food & less calories is a logical idea.

My 1st chacurtire board creation for my brothers 40th!

Food boards are great for parties filled with a few or many ingredients. You can even create a theme board example Greek, Italian, Spanish etc.
Ingredient list consists of:
4 Cheeses: 2 soft and 2 hard cheeses (go to traders Joe's & try their cheese made with wine delish!)
5 Fruits: 2 dried fruits figs, apricots & 3 fresh fruit granny smith apples, grapes, blackberries
Meats: dry salami, salami made with wine, prosciutto, candied bacon 
4 Crackers: all seasoned crackers, flat plain cracker, rosemary flat cracker, pita crackers
Condiments: honey, jam, fresh roasted garlic

TIP: If you do not have a cutting board get brown Kraft paper and wrap up a cooking tray. It will give the same feel as a board. Plus the tray will keep everything tucked in. 
Be creative with food and have fun with your next charcuterie board.

The amalgamation of the different ingredients was brilliant and a huge shout out to Executive Chef Manisha Bhasin and her team for this lovely creation. All proceeds from the sale of this chocolate would go towards @makeawishindia foundation, so all Delhi peeps - quickly head to the @fabellechocolates boutique in ITC Maurya and support the noble cause. Nuts and dried fruits are delicious and, more often than not, satisfy the sweet/snack craving that can be niggling away at us. Luckily,  they also have significant nutritional and health benefits:

1) Nuts, especially almonds and walnuts, have a cholesterol-lowering effect as they have a high level of HDL, 'good cholesterol'.
2) Nuts can help with weight control. Yes, they are calorific, but they are also rich in protein and fibre so help to keep you full until your next meal and stop you from reaching for that chocolate bar!
3) Nuts and dried fruit can help to reduce your risk of Type 2 diabetes. Pistachios in particular, can help to reduce rises in glucose and insulin levels and dried fruit is a much better alternative to processed sugary snacks.
4) Dried fruits help with gastrointestinal function. Being high in fibre they help to regulate bowel function.
5) Dried fruits, in particular prunes, can reduce the risk of osteoperosis by preventing or even reversing bone loss.

Next time you're feeling the need for a snack or sugary 'treat', give nuts or dried fruit a go. Remember though, they are quite high in calories and so portion control is recommended. 25- 30 grams should be enough to satisfy that craving and get those benefits without hi-jacking your daily calorie intake!

Germany's cake is a delicious combination of dried fruit in a gently spiced cake. 
Ingredients
For the marzipan
1/2 cup almond meal 60g ground almonds
1/2 cup confectioners sugar 55g icing sugar
1 tbsp egg white approx 1/2 of one egg white
For the stollen
2 3/4 oz dried plums 75g (prunes), pitted
1 egg
1 pinch saffron
1 3/4 cups all-purpose flour 250g plain flour
2 tsp baking powder
1/4 tsp ground cardamon I tend to crack open a few pods and grind the seeds in pestle and mortar
1/2 tsp ground nutmeg
1 lemon zest
8 oz quark 225g, 1 tub or replace with ricotta with a little sour cream (approx 9:1)
2 oz unsalted butter 55g, 1/2 stick, just melted
1/2 tbsp milk
1/4 cup chopped walnuts 30g
To top/for dusting
1 tbsp butter approx
1 tbsp confectioners sugar approx
