This has Chocolate Chip Banavocado Bread (the recipe for that is below, so save this post for your upcoming #hiberbaking adventures 😘), plus dried and fresh fruit, and a sweet and salty bounty of chocolate and cookies. All totally #nutfree 💚

Chocolate Chip Banavocado Bread * 3 medium very ripe bananas
* 1 cup all purpose flour
* 1 tsp. baking powder
* 1 tsp. baking soda
* 1/2 tsp. salt
* 1 tsp. cinnamon
* 1 ripe avocado, pitted
* 1/4 cup neutral oil
* 1/3 cup maple syrup
* 2 eggs
* 2/3 cup chocolate chips (I like 60% chips here)
* *note: some avocados are less creamy than others, and some bananas are slightly more starchy. If the batter seems a little dry, add 2-3 tablespoons of milk (any kind) and go from there. If it seems too wet, add 1-2 tablespoons of flour and reevaluate.
Preheat oven to 350°F. Grease a 9×5-inch loaf pan, and line the bottom with parchment paper.
This recipe is perfect for the blender! First, purée the avocado and bananas together until they are as lump free as possible.
Add oil, maple syrup, eggs, vanilla, baking soda, baking powder, cinnamon, nutmeg and salt until thoroughly combined. Next, add the flour, blending a little bit at a time, and making sure to scrape down the sides. Finally, add the chocolate chips and use a spoon to combine, not the blender.
Pour into the greased and lined loaf pan and pop into the oven.
Bake 55 to 65 minutes, until a tester or toothpick inserted into the center of the cake comes out clean (melted chocolate is okay but batter is not). Set aside to cool for at least 15 minutes. This should easily come out the pan. .

I even managed to find some sulphur free sultanas. I don’t use ‘mixed fruit’ as I don’t like the orange peel, so I make up my own mix. This year I couldn’t find glacé pineapple so I am adding glacé ginger, wonder how that will go? 🎄Quick and Easy Christmas Ice Cream Recipe🎄
1/2 cup coconut milk
1/2 cup raisins
1/2 cup curants
1/4 cup cranberries
1/4 cup dry roasted almonds, roughly chopped
1/2 teaspoon concentrated natural vanilla extract
1/2 teaspoon mixed spice
1/2 teaspoon cinnamon
1/4 teaspoon cloves
2 tablespoons coconut oil
2 frozen banana, chopped (approximately 250 grams)*
4 medjool dates, seeds removed
Place the coconut milk, raisins, currants, cranberries, almonds, vanilla and spices into a medium sized saucepan. Bring to a gentle boil. Reduce the heat to low, cover and simmer for 5 – 10 minutes. Remove from the heat and stir through the coconut oil.
While the dried fruit, nuts and spices are simmering place the bananas and dates into your food processor and blend at high speed until the mixture is smooth, well combined and resembles an ice cream consistency.
Combine the two mixtures and pour the ice cream into a freezer safe, air tight container. Place in the freezer to set for 6 – 8 hours. If you are making this days or weeks in advance it will still be delicious but the consistency will change. We often double the recipes and eat it over several days.
Serve. Eat. Enjoy!
