I can’t help but enter a @lecreuset store when I see one. The displays are always so beautiful. The medley of colours and cooking equipment evokes a mixture of feelings for me. There’s pure blissful joy, a sense of longing and a hope of owning some of the equipment one day. Investing in a few quality pieces of equipment and taking care of them can make a huge difference in the kitchen. It saves me the trouble of having to replace things in the kitchen and it saves the planet from extra non recyclable waste. That’s why I prefer glass containers to plastic as well.
My idea of meal prep is to have stuff prepped that I can put together easily. I rarely do boxes of entire meals prepped. The only time I make those kind of boxes is when I have to go to work very early and know that I won’t be home until very late. So I take a box with me and leave one at home ready to heat or eat straight from the fridge when I get home super tired.
Part of the reason I prefer my meal prepped for me to put together on the spot is that I find the cooking/assembling of my meal therapeutic. The other reason is that I can mix it up and not eat the same combo everyday.
This is a picture of a quick smoothie I made with frozen bananas, frozen berries, yogurt, flax seed and milk.
I blended up the following ingredients:
-one small frozen banana -1/4 heaped cup of raspberries and blackberries mixed
-1 tbsp ground flaxseed
-1/4 cup yogurt -1/4 cup milk.
Red snapper with lemon and caper butter sauce.
For the fish, I dusted them with seasoned flour and fried them in about a tablespoon of oil.
For the lemon and caper butter sauce, I added olive oil to a clean pan, fried finely chopped onions and capers for about three minutes. (Careful not to brown the onion) and then added lemon juice to the pan and let it reduce. Then whisked in small cubes of cold butter.
For the beans, just blanch and sautéed in garlic and olive oil.
For the potatoes, cut up small cubes of red potato and spray them with olive oil and season with salt and pepper. In the same cookie tray, I also added some zucchini slices, before putting it in the oven.
