Sorry for the lack of #instagramming lately. Have been preoccupied with a 1000 piece jigsaw of #VanGogh ’s ‘A Starry Night’ for the past couple of months and tonight I finished it. It’s a Wednesday so the only logical thing to do was to open a bottle of #DomPerignon to celebrate.

What a great tasting night, 1988 Winston Churchill is fully developed with lots of bitter orange, honey and toasted bread, good body structure and lingering finish. 2000 Winston Churchill is the younger version of 1988, both shows the delicacy and balance of the top Champagne from Pol Roger, 2000 has more green fruits and chalky mineral, it is nutty and buttery, intense on the palate with good concentration. 2002 Winston Churchill is the highlight of the night with an extra level of complexity and longest finish. Both 2000 and 2002 Dom Rose has consistent nose dominated with red fruits, chalky mineral and brioche, 2002 is more open up on the nose with better complexity on the palate compared with 2000, and also more approachable at this moment, but 2000 Dom Rose has softer texture and shows the austerity of young champagne in the glass.
