Insta-Pot Mexican Chicken Soup

INGREDIENTS

1 1/4 lb raw boneless skinless chicken breasts (about 3-4 Breasts)
10 oz. diced tomatoes with green chilies
14.5 oz. diced tomatoes (no salt added)
1 cup frozen corn thawed
1 cup black beans (no salt added), drained & rinsed
1 medium onion, diced
1 jalapeno, diced
2 cloves garlic, minced
4 cups of organic, low sodium Chicken or Vegetable Broth
1 tsp. ground cumin
1 tsp. chili powder
1 tsp. Himalayan salt
1/4 tsp. black pepper

Optional toppings – avocado, cheese, lime, Greek yogurt, cilantro 
INSTRUCTIONS

Put all the ingredients for the soup into your Instant Pot and give it a stir.
Turn onto to manual setting for 15 minutes. It will take about 10-15 minutes to come to pressure. When the timer is up, carefully switch to quick release.  Once the the steam stops, carefully open the lid and shred the chicken.

This makes 6 servings – 1/2 RED 1/2 GREEN 1/2 YELLOW each. 1.5 cups

Don’t forget to count the toppings!

This was a quick and simple breakfast casserole recipe! You can easily modify this recipe by adding more vegetables and protein. It’s loaded with spinach, bell peppers, mushrooms, and we added in some onions for that touch of flavor! It makes 10 to 12 “servings” so you will have leftovers...maybe. Check out the recipe below and save the post so you can make it yourself! .
INGREDIENTS:
2 tablespoons oil
8-10 mushrooms, sliced
2 teaspoon minced garlic
2 bell peppers, diced
2 cups packed baby spinach, chopped
20 ounces shredded potatoes, thawed
10 eggs
⅓ cup milk
1 cup shredded cheese .
Directions 
1. In a large skillet over medium heat, heat 1 tablespoon of oil. Add the mushrooms and sauté them for 4 minutes or until they start to brown. Add onions and garlic and let cook for 2 minutes. Remove to a plate. 
2. Add the second tablespoon of oil, if needed, and sauté the peppers for 1 minute. Add in the baby spinach and allow it to wilt, remove from heat, set aside.
3. Spray a 9×13 baking dish with nonstick cooking spray. Lay the shredded potatoes in the bottom of the dish and press to make sure they are spread out evenly. Add the veggies (the mushrooms and the pepper mixtures) over the potatoes, set aside.
4. Preheat the oven to 375ºF. 
5.In a large bowl, whisk together the eggs and milk. Pour the egg mixture over the prepared veggies. 
6. Sprinkle the cheese over the top.Bake the casserole, uncovered, until the cheese melts, and the top gets in and golden, 45-50 minutes. Enjoy! .

4 garlic cloves, minced
1 lb pound chicken breasts, sliced into strips 
1 cup broccoli 
2 tablespoons ginger, minced 
1/2 mushrooms, sliced
1 large carrot, peeled and chopped 
1/2 jalapeño, finely diced 
2 baby bok choy, sliced 
3-4 tablespoons low sodium soy sauce 
1/2 onion, diced 
1 cup snow peas 
1/2 cup green onions, chopped 
Black pepper, to taste 
Rice, for serving 
Preparation:

Heat sesame oil in a wok or saute pan over medium heat. Add ginger and garlic and stir. Place the chicken in the pan and sauté for about 5 minutes Add the vegetables and soy sauce. Stir-fry quickly until the vegetables begin to soften. Serve over rice

После щей у меня осталось половину кочана капусты и я решила сделать, как сказала мой папа, «ленивые голубцы». Запахи во время готовки стоят просто нереальные!👍🏻 А коллеги на работе делают комплименты и просят рецепт😋

Ингредиенты:
🍂Половину кочана капусты 🍂600-700г говяжьего фарша 🍂1 болгарский перец 🍂1 лук 🍂1 морковь 🍂2 зубчика чеснока 🍂2 перетёртых с томата
🍂Соль/перец/специи (у меня кориандр, но можно взять любые). Способ приготовления: 🍂В разогретую с небольшим количеством масла кастрюлю (или глубокую сковороду) кладём фарш и жарим под крышкой пока не «схватится» на среднем огне, минут 10-15.
🍂Далее к фаршу кладём мелко нарезанные болгарский перец, лук, натертую морковь и выдавленный чеснок. Томим под крышкой на медленном огне минут 5-10, переодически помешивая.
🍂Далее добавляем в кастрюлю два перетертых томата (с томатов снимаем шкурку, положив в кипяток на пару минут, трём на терке и смешиваем с 2-3 ст л томатной посты и чуть-чуть водички) перемешиваем и накрываем крышкой буквально на 2 минутки. 🍂Добавляем в кастрюлю нашинкованную капусту, соль, перец и кориандр по вкусу. Перемешиваем все, тушим под крышкой на среднем огне пока капуста не приготовится. Минуток 15-20.

BROWN SUGAR CRUSTED FLANK STEAK 🍷
We made this for our anniversary dinner this weekend and it was SO flavorful & delicious, I had to share with you ❤️
* Place the flank in a baking dish & season with a generous amount of salt + pepper. Then cover both sides with 1/4 cup brown sugar. Let it sit for about 15 minutes or until the sugar soaks in.
* Meanwhile make the marinade:
* Combine 1/2 cup of light soy sauce + 1/2 cup brown sugar + 2 cloves garlic (minced) + 2 TBS grated ginger + 3 chunks pineapple (minced) + 2 TBS onion (grated) + 1 TBS Sriracha + 1/2 TBS sesame oil
* Once the sugar is soaked into the steak, cover completely with the sauce. Cover and refrigerate  for 4-12 hours.
