✔️Gotujemy makaron spaghetti aldente.
✔️Kurczaka (pierś, bądź udka bez skóry) kroimy na mniejsze kawałki, oprószamy solą i pieprzem.
✔️Pieczarki obieramy i kroimy w plastry.
✔️Rozgrzewamy patelnię z odrobiną masła wrzucamy kurczaka, po chwili pieczarki, smażymy wszytsko, dodajemy śmietanę 12-18%, solimy, pieprzymy, dodajemy troszkę czosnku w proszku.
✔️Wrzucamy na patelnię ugotowany makaron, podgrzewamy całość ok 2 min. Posypujemy natka pietruszki i gotowe:)

Our “no questions asked” meal that needs no discussion or approval is Acorn Squash Quesadillas! If you caught my stories last night, you can see how EASY they are to throw together- that’s one reason why I love ‘em as the chef- but what’s better is that even if I don’t tell Danny that’s what we’re having for dinner he will HAPPILY go along with these.

Besides being easy and picky-eater (formerly, in my husband’s case) pleasing, some other recommendations I have for what makes a great “no questions asked dinner” are:

👉 no overly fancy ingredients. You’ll want to be able to make this meal in a pinch, and if you have to take a trip to a specialty shop for that one condiment you ran out of, then that takes the ease out 🤷‍♀️
👉 it’s not something seen too often in your dinner rotation. When this meal comes to the table, it should still be exciting and fun. No chef wants to hear, “ I know I love this dish, but do we really need to have it again?” 🤦‍♀️
👉 there’s no questions about nutrition. It’s a dish that contains carbs, protein, veggies, and healthy fats in an easy to accomplish package 💁‍♀️

Ebi-Katsu, fried Panko-breaded shrimp cake....I think I perfected my Ebi-Katsu recipe today!  Big chunks of shrimp in shrimp paste with raw onion and dried onion.  If it's with only raw onion, it takes more starch to get stiff, so I use dried onion also to suck moisture out....I didn't measure any of it, so I cannot share the recipe, but I will do next time!

Hearty Chicken Vegetable Soup
4 servings

Ingredients:
•2 lbs raw, boneless, skinless chicken breast, cut into 1” pieces (should yield four 6-oz cooked servings)
•32 oz reduced-sodium, fat-free chicken broth
•2 cups (18 medium) mushrooms, cut into quarters
•2 cups celery (7 large stalks), thinly diced
•1 cup (1 medium 2-¾” x 2-½”) yellow bell pepper, cut into 1” pieces
•1 cup (1 medium 2-¾” x 2-½”) red bell pepper, cut into 1” pieces
•1 cup (1 medium 2-¾” x 2-½”) green bell pepper, cut into 1” pieces
•½-1 cup (4 to 8 oz) water (optional, add extra water depending on how thick you ½ cup scallions (3-4 scallions), chopped
•2 Tbsp cream
•2 Tbsp dried parsley or ¼ cup fresh parsley, finely chopped
•4 tsp olive or canola oil
•½ tsp dried thyme leaves
•¼ tsp black pepper, freshly ground
•want your soup)
•2 cloves garlic, finely minced

Directions:
Trim all visible fat from chicken and cut into 1” pieces; clean and cut mushrooms, pepper, celery, and scallions. Heat oil in a large saucepan over medium heat. Add minced garlic and chicken; cook until chicken is no longer pink, about 5 minutes. Add bell peppers, celery, and mushrooms. Cook until vegetables are tender, about 7 minutes. Add scallions, broth, water (optional), cream, thyme, black pepper, and parsley. Simmer until ready to serve.

Super easy to make once you have your protein meal prepped and satisfying too!

Ingredients:
Mozzarella 
Low carb wraps 
Sour cream 
Guac or avocado 
Pulled chicken (can be rotisserie jazzed up with a little salsa but I threw  about 2lb of chicken breast, with 1 jar of low carb salsa with mushrooms and onions into the crock pot and left it for 8 hours)

Assemble  and  place in pan with butter on medium to low heat until cheese is melted, flip to warm the other side.

#TacoTuesday!

I whipped this up in 15 ish minutes!

Here’s how:

1. Cut up chicken into bite sized chunks, throw in a frying pan with a wee bit of oil or cooking spray. Season with garlic salt, chilli powder and cayenne pepper. Stir occasionally.

2. Peel and cut mango into bite sized pieces.

3. Dice onion and red pepper (jalapeño if you want). 4. Mix the mango, onion, peppers in a bowl with some cilantro and lime juice.

5. Heat up your taco shells for a few seconds, add chicken to taco, top with mango salsa and ENJOY!

See! Eating healthy doesn’t have to be difficult, time consuming or boring!

#TacoTuesday ! I whipped this up in 15 ish minutes! Here’s how: 1. Cut up chicken into bite sized chunks, throw in a frying pan with a wee bit of oil or cooking spray. Season with garlic salt, chilli powder and cayenne pepper. Stir occasionally. 2. Peel and cut mango into bite sized pieces. 3. Dice onion and red pepper (jalapeño if you want). 4. Mix the mango, onion, peppers in a bowl with some cilantro and lime juice. 5. Heat up your taco shells for a few seconds, add chicken to taco, top with mango salsa and ENJOY! See! Tonight I recreated my BBQ PULLED JACKFRUIT FAJITAS which I first made a couple of weeks ago (the full recipe is written up in my original post 🙈) Once again I had it with some guacamole, @nushfoods chive cream cheese and GF tortillas! I thought I had some @oldelpaso GF tortillas left in the cupboard but sadly when I went to get them there wasn’t any there 🙃 luckily I had some @freeefoods GF bread flour so I managed to quickly make some tortillas instead!

Making tortillas is actually really simple and quick to do! All I did was use 40g of the flour, add a pinch of salt and finally added water until a thick but pourable dough was made. I then used a nonstick pancake pan to cook them up (cooking them for a few minutes on each side) and then voila you have your tortillas! 💕 I’ll def be making my own again in the future.

Our “no questions asked” meal that needs no discussion or approval is Acorn Squash Quesadillas! If you caught my stories last night, you can see how EASY they are to throw together- that’s one reason why I love ‘em as the chef- but what’s better is that even if I don’t tell Danny that’s what we’re having for dinner he will HAPPILY go along with these.

Besides being easy and picky-eater (formerly, in my husband’s case) pleasing, some other recommendations I have for what makes a great “no questions asked dinner” are:

👉 no overly fancy ingredients. You’ll want to be able to make this meal in a pinch, and if you have to take a trip to a specialty shop for that one condiment you ran out of, then that takes the ease out 🤷‍♀️
👉 it’s not something seen too often in your dinner rotation. When this meal comes to the table, it should still be exciting and fun. No chef wants to hear, “ I know I love this dish, but do we really need to have it again?” 🤦‍♀️
👉 there’s no questions about nutrition. It’s a dish that contains carbs, protein, veggies, and healthy fats in an easy to accomplish package 💁‍♀️

How do you serve a meal that has new food for your kids?

Shrimp is a fairly new food for my kids. We don’t eat it often but I’d like to change that to help provide some variety in our meals. Plus, you can cook shrimp really fast, I’m talking 10 minutes in the oven at 450F and it’s cooked perfectly. Paired with leftover cooked veggies, fresh fruit, microwavable brown rice, and fresh greens from the garden, this meal took all of 15 minutes to pull together after a long work day.

But the easiest of meals makes no difference if the kids don’t eat it. So I let the kids pick and choose what they want. The plate pictured was that of my four year old. He chose every element himself, even the shrimp that he loudly proclaimed “I don’t think I’ll like this.” It was the first thing he bit into, he made a sour face, it went back to the plate, and we had a pleasant meal. No fighting, no stress, no bargaining. We talked about his school day, his new best friend (they change weekly), we cleaned up spilled milk from sister. And wouldn’t you know, he ended up eating all the shrimp, then took two off my plate too. Swipe to see what his plate looked like at the end of the meal.

When we take the pressure off kids, allow them to have a say in their meals, let them to choose what they want and how much they want from what’s offered, we create a stress free environment for everyone. And I don’t know about any other mama’s, but less stress in any area of my life is always appreciated.

Also, please note that I would never want anyone to fall into a comparison trap here. I always hesitate showing how much my kids eat because frankly this changes from meal to meal and day to day. And that’s ok. We’re all parent’s doing the best we can so please never let a picture on Instagram or anywhere make you feel less than 😘

Flakey buttery crust with juicy soft and cheesy meatballs inside. These meatballs are one if the first official recipes I ever made. They also are the most made recipe on my blog. Since becoming a Mom, I always feel short on time. There’s never enough hours in the day (especially to complete any adult related tasks) and this includes making a nice, healthy, sit down dinner (not that I don’t enjoy chicken nuggets off the floor 🤷🏼‍♀️). We’ve tried a few of the different meal prep services but never felt satisfied due to cost, menu and/or time required. But I had read great things about @meez.meals and decided to give it a whirl. “Healthier” taco-style pizza! Too brown rice tortilla wrap with tomato/black bean dip and @sietefoods cashew cheese. Throw in the over 400 degrees 10 minutes. Top with sautéed green peppers, tomatoes, lettuce, avocado and @yellowbirdsauce. These tortillas crisp up nicely and hold their form to eat more like a pizza.

Anyone ever get to dinner time and realize you’ve had ZERO veggies for the day?! Fun fact: I’ve eaten 3 servings of veggies today and I still needed all of these to complete my “daily” amount! Also cooked up some chicken sausage & sautéed them with leftover cauliflower rice! Topped it with a cilantro garnish. YUM!

dinner tonight was baked salmon, asparagus and barley with mushroom (regular white and oyster). I bought something called better then bouillon in mushroom flavour today and I used it to enhance the flavour of the mushroom and barley mixture that I cooked: it turned out amazing! I also used it on the salmon; since it has a wonderful salty umami flavour. Then I sprinkled on some dill and cooked it for 15 min in a 375 convection oven. The asparagus cooked along side the salmon and they were both done at the same time! Putting things in the oven are always so easy for dinner!

In spite of cauliflower being ridiculously expen$ive right now, he managed to keep it affordable by using dried lentils and bulk cashews. There was enough for 2 dinner 🥘 meals (for 3) and a couple of lunches— making the cost per meal very affordable!!!✅😊

➡️Red layer: Saute onions on olive oil. Add vegetarian minced meat, diced tomatoes and spices (salt, pepper, garlic powder, Italian herbs)
➡️White layer: Ricotta & Cottage cheese ➡️Layers: Lasagna sheets, red layer, raw zucchini cut in thin slices, lasagna, white layer, zucchini. Repeat everything one more time, finish with the lasagna sheets and top with grated cheese 😍 you can't really go wrong with the layers so feel free to change it up.

🍝PRZEPIS na 2 porcje:
✅150-200g makaronu spaghetti @barilla
✅100g wędzonego boczku/pancetty
✅2 jajka ✅3 ząbki czosnku ✅2 łyżki startego parmezanu (Grana Padano lub Reggiano) ✅świeża natka pietruszki, ok. 2-3 łyżki ✅pieprz, sól
Makaron gotujemy al dente w osolonej wodzie. Odcedzamy. (Nie przelewamy wodą❌)
Jajka przelewamy wrzątkiem, roztrzepujemy w kubku.
Na patelni podsmażamy drobno pokrojony boczek, po chwili dodajemy posiekany czosnek i pietruszkę i smażymy jeszcze chwilę. Dodajemy odcedzony makaron i zostawiamy na wolnym ogniu co jakiś czas mieszając. Gdy makaron będzie już gorący zdjemujemy patelnię z ognia, dodajemy parmezan, mieszamy i dolewamy jajka. Energicznie mieszamy całość tak, aby jajka nam się nie ścięły - powinien powstać z nich kremowy sos, który otuli całe spaghetti. Gdy zacznie gęstnieć to znak, że carbonara jest gotowa!
