After a very long and very rainy day, I was excited to try my hand at bulgogi (Korean grilled beef) for dinner. Last night I sliced some sirloin steaks thin and marinated in pureed Asian pear & onion, ginger, garlic, coconut aminos, sesame oil, scallions, honey, S&P. Seared them for a few minutes in a cast iron pan over high heat. Turned out delicious and was SO easy. Bulgogi recipe (and soybean paste dipping sauce recipe) from the Maangchi's Real Korean Kitchen cookbook.

I’ve been making yogurt cream cheese icing for my carrot cake for decades…I cooked my way through “The Silver Palate Cookbook” years ago…needed every chance I had to lighten up those recipes! Did I know I was making “labne?”…ummm…noooo…I just called it “strained yogurt cheese.” lol Was I living under a rock?…noooo…I was living in Pennsylvania! haha I’m guessing there are people out there rolling their eyes…just like the time I referred to lentil soup as well…lentil soup and I was condescendingly corrected that it was “dahl”…ok…it’s lentils and it’s soup…sounds like it’s the same thing to me!

This recipe from “Dining In” by @alisoneroman for “Frozen Blackberries with Labne and Honey” however…is “strained yogurt cheese” on steroids! The yogurt is strained through cheese cloth for 24 hours in the fridge (yep…just like I used to do!) You can use whatever kind of fruit/berries you want to. I used blackberries and raspberries this time. The berries are cooked down in a small pot with 1/4 cup of honey and then left to cool completely. While the berries are cooling you spray a 9x4 inch loaf pan and then line it with plastic wrap, left hanging over the sides. You whip one cup of heavy cream…with your mixer or by hand.

Ok…ok!!! I confess…I used my mixer! When the cream is whipped to medium peaks, you fold in the labne, 1/2 cup of honey and a small pinch of kosher salt, until just blended. Then…(drum roll please) you gently fold in the cooled fruit until just mixed, leaving fruity streaks throughout, especially on the top! Spread those beautiful fruity streaks around and smooth the top…leaving it oh so pretty!

Pop it in the freezer for a couple of hours. If it’s in longer, the recipe suggests putting it in the refrigerator for about 15-20 minutes to soften it a little, but I found leaving it on the counter for a bit worked best. It is SO delicious! Creamy, fruity, not overly sweet. It was a big hit! This is for our online #rainydaybitescookbookclub

I have a confession to make. This is not the first chicken recipe I’ve tried from Dining In 🤭🤫 I fell in love with this cookbook from two recipes my friend shared with me before I even got the book, one of which was the Paprika-Rubbed Sheet Tray Chicken. I looooove the paprika chicken so much, that it was really hard for me not to make it with the chicken I bought. But I pressed on hoping I would find another favorite chicken recipe. Happy to say I did, and that this will be added to my go to chicken recipes.

This recipe was not only supppppper tasty, but it was soooo easy! Slice up some shallots, smash some garlic, mix in some buttermilk and dump it on the chicken. I love the paprika chicken but it is pretty labor intensive to rub spices between the skin and meat. The prep for this chicken was 1/4 the effort for 100% of the flavor. It reminded me of a sophisticated ranch brined chicken. The milk also helped to make sure the chicken stayed juicy and tender!

 TIPS: I made the mistake of getting HUUGE chicken breasts and smaller thighs. They ended up tasting really good, but the breasts had to cook so much longer than the thighs. If I were you, I’d try to avoid this by getting relatively similar sized pieces of meat or cutting pieces if you have to!

RECOMMENDATION: The recipe says you can let the chicken marinade for 2 hours to overnight. I definitely recommend marinading your chicken overnight. The marinade is seriously so tasty and it makes for easier weekday prep so you can come home from work and just pop the chicken in the oven!

NEXT TIME: I want to try this with a whole roasting chicken or boneless/skinless thighs and breasts. I know those are opposites but I am curious to see how different chicken sizes turn out and how it affects the cook time.

Before we go any further, I have to tell you that this contains zero pistachios. I made the sanctioned substitution of almonds in this dessert from Dining In, due to only being able to find salted pistachios. But you know, it was still pretty amazing. ⠀

Plums are tossed with sugar, cornstarch and lemon juice, put in a baking dish and topped with a mix made of flour, brown sugar, butter, salt, nuts and (surprise!) cardamom before baking. ⠀

First of all, that cardamom is the key to this whole thing. I love plums and can't get enough of them at this time of year, but I don't think I had ever tried them with cardamom. Game changer, people! We had this with my friend's kick-ass home-made frozen yoghurt and the tang was the perfect balance. The only thing I would change here would be to scale back the sugar, because there's really quite a lot in here. ⠀

Meal prep travel tip!! If you caught a glimpse of my stories over the weekend (or just swipe right!), you saw I was down exploring @zionnps. It was all sorts of amazing. We hiked a lot and ate a lot. Doing an @airbnb this weekend provided the luxury of having a homemade meal after a long day of hiking. To make things easy, I prepped all the food ahead of time including this pork & red chile stew with tomatillos. All we had to do was heat it up & dig in. But!!! I also made plenty of leftovers, knowing that coming back from the trip late Sunday would leave no time for meal planning or prep before diving head first into the work week.

My tip?! Have a prepped meal already waiting for you when you come home! It can be dinner that night or lunch/dinner the next day and you’ll be so thankful for the bit of leg work before you headed out of town. This stew not only fueled us after a day of exploring over the weekend but it also made today’s dinner a breeze. I might just get a tattoo that says: leftovers=bestovers.

I’ve always been a fan of a big old knife and fork salads. This salad hits all the marks! You start by cutting into a big wedge of crisp lettuce, dressed lighting with tangy dressing, studded with hunks of salty, crispy bacon all served over a big smear of sour cream and topped with delicate herbs. I don’t think I spoke a single word as I devoured every bite. This salad is absolute perfection. I’m pretty sure I could eat this every day for the rest of my life. Mmmmmmm!

Chicories with Anchovy Bread Crumbs and Egg Yolk (pg. 79) 🥗 🍞🥚 This is not a dessert!! (See my last couple of posts if you're confused 😋) It's quite the opposite actually. The radicchio makes this salad quite bitter and the bread crumbs are obviously a little fishy and garlicky. I'm obsessed with the bread crumbs and kicking myself for not making fresh crumbs sooner!💢 As for the salad itself... it's not one of my favourites. I followed the recipes exactly, but omitted the endive since there weren't any at my local @wholefoods and I was feeling too sick to run to another grocer. Turns out, I totally underestimated the size of the radicchio!! Brown butter-buttermilk cake. I realize that it is now autumn, but there are still local berries that I cannot resist buying. They were lovely alongside this cake by @alisoneroman from her book, “Dining In”. Not only is there brown butter in the cake, but it is also featured in the icing which gives the whole dessert a delicious caramel-like flavour. Once the summer berries have truly disappeared, I’ll be giving this recipe another go as an apple upside-down cake. Yum!😊

Fall means soup weather, my fav. 🍂 Yesterday I tried my hand at @cookingclassy ‘s recipe for “Italian Wedding Soup”. It came out wonderfully. I love the addition of carrots to make it a bit healthier. The only changes I made were doubling the recipe- I like freezing a few soups during the Fall so there is always a quick dinner option when life gets busy. I also added a spoonful of Chili- Garlic paste because I like a little heat and it pairs so well with the meatballs.

COSTILLAS CON AMOR 🍖🍖💜💜
INGREDIENTES 
1 Baby rack de costillas de cerdo 
1 raíz de jengibre picado en láminas 
5 dientes de ajo grandes  picados en láminas
1/4 taza de salsa soya (utilizo baja en sodio)
1/4 taza de vinagre de arroz (lo consiguen FÁCIL en un supermercado, ¡prometido!)
½ taza de miel (la cantidad puede aumentar) 🍯
5 estrellitas de anís 
3-4 tazas de fondo de pollo (en #MantequillaTips encuentran cómo hacerlo)🍗
3 ramas de cebolla larga picada (la parte verde)
Aceite de oliva
Peperoncino 🌶️
Sal gruesa 
Pimienta 🔶🔶
PREPARACIÓN
Antes que nada pongan a calentar el horno a 250°C mientras hacen todo lo demás ➡️ Ahora, ponen a calentar una sartén grande u olla con alguna profundidad (no tanta) con un chorrito de aceite de oliva ⛔¿Cómo escoger la olla? Piensen que les deben caber las costillas, una al lado de la otra, no encima; y todos los líquidos que lleva la receta➡️ Posterior a tener muy caliente la olla, ponen a sellar (dorar) las costillas por el lado de la carne, a las cuales antes le ponen sal y pimienta➡️Las voltean y cuando las vean bien doraditas agregan el jengibre, el ajo, el anís y el peperoncino➡️ Ahora, le ponen la miel (video siguiente) , después la soya, el vinagre de arroz y finalmente el fondo de pollo (pongan 2 tazas primero y vayan agregando hasta casi cubrir las 🍖)➡️ Muy importante que vean que todos los ingredientes están bien revueltos, para que prueben cómo sienten la salsa⛔⛔ ¿Qué deben tener en cuenta al probar la salsa? No la deben sentir muy ácida o salada, si es así, NO SE ASUSTEN, le van poniendo más miel (DE A POCO) hasta que el sabor lo sientan delicioso➡️ Acuérdense: PROBAR Y PROBAR, hasta que lleguen al sabor que les gusta➡️Ahora, llevan las costillas en una refractaria con la salsa y le ponen la cebolla por encima ➡️Esto va al horno por 20 minutos a 180 °C cubiertas con aluminio, 20 minutos más sin aluminio y terminan a 250 °C por 10 minutos y ¡listas para comer! ✔♥️🔶🔶🔶

I’m just going to put it out there, I’m a big fan of asparagus. It’s one of my favorite veggies because not only it super versatile, but their shape is fun! They are like the French fries of the veggie world. And if I’m going to eat too much of something, it might as well be healthy veggie right?

I have made my fair share of asparagus, but this was the first time I blanched it and nothing else. I was a little nervous that blanching them wouldn’t get them hot enough (I have a thing for needing food to be the temperature I expect), but it did! They were still warm and delicious when we dug in. Also blanching them allowed them to keep their crispness while not being chewy or soggy. AND it was super easy to blanch them and be done. 45 second cook time? You can’t beat that. And the garlicky and slightly spicy oil on top add a flavor punch to already yummy veggies.

TIPS: Regardless of how you cook your asparagus, there is a woody part at the bottom you need to cut off. To know where take a stalk and hold it on either end. Gently bend it until it snaps. The bottom part is the woody part you don’t want to eat. You can use this one as a guide to easily cut the rest!

RECOMMENDATION: If you’re feeding more than 3 people who like asparagus, double this recipe. I doubled it for 4 and we at almost all of it in one sitting!

NEXT TIME: I want to add more garlic! It was super good but I am a sucker for really garlicky asparagus.

Es conocer TU cuerpo, para entender cual es tu mejor forma para alimentarte ⛔ Lo que no hago es comida fit, para esto hay gente que es increíble y les explica mejor, de quienes a veces incluso hago recetas como los pancakes de avena 😊➡️ Les doy un #MantequillaTip contándoles como cocino en casa: lo hago bajito de sal, dosifico muy bien las grasas si las uso, no se compran nunca embutidos (a menos que alguna receta especial lo pida), uso muy rara vez el azúcar, voy seguido a la plaza de mercado, ¡VAYAN!, les juro que la creatividad les aumenta y el porcentaje de alimentos procesados baja total ➡️ Ahora bien, mi objetivo no es enseñarles a comer, sino que tengan opciones para cocinar y que le pierdan el miedo y vayan o vuelvan a la cocina ♥️♥️♥️➡️Soy muy respetuosa en los procesos y las decisiones alimenticias, esto lo considero algo totalmente PERSONAL, pero siempre que pueda darles tips saludables lo haré y cuando tengan dudas buscaré darles la mejor respuesta ✔♥️

As I was assembling @alisoneroman’s very easy fork and knife romaine #salad from #DiningIn, I thought it was kind of boring and not too fun. Until I hit the instruction to—not chop up the #bacon and sprinkle it on top—but to leave it in slices and place between the leaves like some kind of edible arrangement. As I was assembling @alisoneroman’s very easy fork and knife romaine #salad  from #DiningIn , I thought it was kind of boring and not too fun. Until I hit the instruction to—not chop up the #bacon  and sprinkle it on top—but to leave it in slices and place between the leaves like some kind of edible arrangement. Double-Crust Peach Pie with Honey, Ginger and Lime (pg. 257) 🍑🍯🍈 It may seem like all I make lately is dessert, and that's 100% true 😋 It's too bad I forgot to snap a photo after I sliced into this pie to show off how deliciously tangy, sweet and sour the inside turned out! I need more practice (and patience) making the crust and next time I'll reduce the heat so the top doesn't burn (I'm 99% sure my oven is stronger than Alison's). If watermelon doesn’t scream summer, I don’t know what does. And DC has an amazing farmers market in Eastern Market where vendors have all the delicious fruit cut up for samples. I found the best melon there and snatched it up to try this recipe!

To be honest, I was a little leery of this recipe. I had heard of people putting salt on their melon, but I had never tried it. And although I wasn’t a the biggest fan of the salty and melon combo, I did really enjoy the freshness of the melon and cucumber as well as the smoky and acidic/lemony aspect the Aleppo pepper and sumac added!

TIPS: The recipes really doesn’t specify how to cut the melon. I cut it into large bite size pieces and it worked well for getting a little or everything in each bite. If I were you, I’d do the same!

RECOMMENDATION: I got a melon with seeds and I felt like it really hindered my ability to dig in. I would recommend getting a seedless melon for easy eating!

NEXT TIME: I want to try with a few different kinds of melon. The market I mentioned earlier has yellow and orange varieties of watermelon. I think it would not only be beautiful but add some fun variety in taste!
