Dinner~ hubby wanted spaghetti. I used organic edamame pasta (I’ve had it for a while but haven’t tried till now. Low carb and high protein 👌🏻), no sugar added lucinis Tuscan marinara, and added organic grilled chicken (cooked up with olive oil). I also added 1 tbsp of vital farms butter to noodles after I strained(needed some more fat in here!). I had a little bit of spaghetti left over. . He had regular pasta, with marinara and ground beef rather than chicken. This was so good.. can’t believe it’s healthy 😂 Also, is frank a dr. Zevia :)

Ummm okay...This is my first time ever doing a “Pilates” workout and my legs are dying lol. Do any you do these videos? I didn’t know where to start so I just jumped into @blogilates October calendar. Even if I don’t follow it, I needed some sort of direction as to what to do. I really liked this. I didn’t even think I’d sweat.. HA! Yeah right! And my daughter decided to be an extra weight during my bridges so oh my that was a burn 😅 I think I’m going to have to do Pilates again. And I’m a “heavier” girl. That doesn’t stop me! I really don’t know how it is in person, I would love to try it though. I searched for pop Pilates near me and closet is 116 miles away :( someone needs to become an instructor down here in south Texas. I was torn between this and just strength training.. but I really didn’t feel like strength training and wanted to do this. I’ve learned through my journey that you need to do what you feel like doing or you’ll resent the journey to health.. it shouldn’t be a chore, but a lifestyle! Currently drinking 1.5 scoops of sun warrior chocolate protein while I put groceries away (hubby was nice enough to go pick up curb side 😁 he’s been so supportive 💓)

My breakfast! Have to make due with what’s in the fridge. It is delish though. A big handful of power greens (which shrunk considerably 😂), 2 eggs, half an avocado, and 4 slices of apple! I sprinkled my savory foods with pink salt. I used avocado oil spray to “sauté” my greens and fry my eggs. Didn’t want anything too heavy this morning, the husband want spaghettis later and I have either edamame and chickpea pasta I can try 🤔. I’m playing around with portions to see what satisfies me and keeps me full and what doesn’t. Trial and error. Also drinking another small cup of coffee 😅 didn’t get much sleep with the little one. 💞 Been keeping an eye on my blood sugar and my readings have been great 💓

Someone recently told me, "awareness doesn't change anything". And I thought if that isn't the most narrow minded thing to say. 🙄 
Every single day I go to work, something happens that reminds me why I love my job and I love spreading awareness over all sorts of social and health issues. Why doesn't everyone enjoy being kind, and helping out another human? Its literally the best feeling ever. 
When I was approached about applying for my job, I knew it was from God, our coalition isn't faith based but my goodness, I love getting to be the hands and feet of Jesus, whether that's giving gloves to a homeless person or talking to other adults about ways to help the needy. If your faith isnt moving you to do something, then it's just a religion. God forbid, I ever feel like I know everything and can't take a minute to listen to another human's real needs. #mentalhealth #convoyofhope #nationalwalktoschoolday #childinjuryprevention #communitybabyshower #Chicago #diabetesprevention #latinofestival #awareness #community #faithinaction #iamsecond

Pumpkin smoothie/shake 🎃 I based it off the eatingwell.com recipe I found but changed a few things. It called for yogurt but don’t have any so it didn’t come out thick.  1 cup of unsweetened almond milk, 1/2 cup of pumpkin purée, 1-2 tbsp of sugar free syrup (need to find a healthier alternative to maple syrup), 1 tbsp of pumpkin pie spice (phew, and I really taste it lol), 1/2 a banana, 2 tbsps of flax seed meal, and I also added a little less than 1 tbsp of coconut oil and 2 scoops of vital proteins collagen. Wanted it to be more balanced. I would make it again and play around with the portions.

Did you know that in the 1950s the sugar association realized through studies that it was sugar that was the main cause for heart disease, cancer, obesity, diabetes and most major health conditions ???? This was hidden from us for over 50 years!!! The sugar association paid Harvard professors to do studies on fat and falsify information to make fat the bad guy.

All these years later, the people who were most health conscious are sick. They followed the “fat free” diet and the focus was on carbohydrates! We were told carbohydrates were healthy. Juice was healthy, fat free bread 🥖 was healthy ... 👎🏻👎🏻👎🏻👎🏻

Now studies are proving that sugar is poison. Sugar triggers blood sugar spikes and inflammation leading to heart disease, obesity, diabetes, arthritis, Alzheimer’s and many many more chronic illness’s and diseases. .

As a dietitian for 20 years, I see this, I know this to be true. The healthiest diet includes a plethora of colorful 🌈 vegetables, protein protein protein ( but less red meat), and healthy fats with small amounts of high fiber carbohydrates.

Made up my own workout last night to do today for upper body. Currently dead. Lmao. (Yes, I realize they aren’t the exercises proper names, but it’s how I know them 😂) currently drinking a post workout smoothie. 8 oz of almond milk, handful of power greens, 1.5 scoops of sun warrior chocolate protein, 1/4 a banana, 1 tbsp of no sugar added peanut butter, and 1 tbsp of flax seed meal. I had half and apple + tbsp of peanut butter for my pre-workout. It definitely helped me push through.  I understand it’s not really “keto” but I am trying to be more balanced, and eating my little carbs around my strength training which is beneficial. this is my journey to health. I’ve lost 80 lbs and know exactly how my body Works with what nutrition and when. I’ve realized I don’t need outside influence to do what I know is best. My main goal is to be balanced, control my blood sugar, and eat healthier + plus get my fitness back. Staying lower carb is still a necessity to help me prevent diabetes. I’m not doing this because I’m craving refined carbs. I’m craving whole food carbs.. it’s as if my body is asking me for it. Anyway, tired of explaining myself... I underestimated this workout 😂 my arms are so sore already. Take out for dinner: bowl from local sushi place. Grilled chicken topped with some avocado, jalapeños, and green beans, sitting on stringed zucchini and topped with some spicy mayo. My husband and I shared a ebi shrimp roll that was wrapped in cucumber 🥒 Been busy and out and about all day and so tired. I didn’t even get my intended workout in but I’ve been on my feet and pushed a heavy ass cart at Costco so that counts as cardio right? 😂 I’m going to check my glucose at 1 hour and than 2 to see if the spicy mayo spiked my blood sugar. I know everywhere makes it differently. Feel like I’ve gotten so much green in today 🥗🤩

Starting to share my data (hint: #LCHF + #CGM = 👁🎨, thank you 🥚🥓🥩🍖🥗🥛) Impact on glucose using a continuous gluose monitor after ingestion over a 2 week period of a low-carbohydrate, healthy fat (LCHF) diet in an individual without known pre-diabetes or diabetes. No industrial vegetable bean/seed oils were ingested (meats finished with butter). As the charts shows, the interstitial glucose excursion were minimal in a non-diabetic, probably insulin sensitive person.

There were two moderate carbohydrate ingestions during this period, with mild to moderate glucose excursions, however with little to no effect on average glucose values.

I am not interested in telling other people what to eat. However, I realize that I enjoy and can sustain a real food, healthy fat, low carbohydrate eating pattern quite easily, with good results.

While I am not diabetic or pre-diabetic, I'm awed by the ability of the human body to regulate itself and the ability of humans in which regulation is compromised to achieve their life goals.

In July of this year, My nephew Vince, a 13 year old boy was diagnosed with Type 1 Diabetes, a medical complication where your blood sugar is so high that it becomes acidic and begins to harm your organs. His doctors said he was extremely lucky. Most children with this diagnosis arrive already in a coma, unable to wake up from the night before. They were able to stabilize his blood sugar, and learning to manage Type 1 Diabetes became his new normal. Not all kids are that lucky. Many get misdiagnosed with the flu and never get to go home, but because my sister-in-law, brother and their amazing team of doctors knew the symptoms for diabetes, he would be ok. 
Unfortunately, there is no cure for Type 1 Diabetes. It is an autoimmune disease that attacks the pancreas and causes it to stop functioning. Everyday for the rest of his life, he will have to endure multiple shots and finger pricks to make sure his blood sugar is in the safe range. He will have to calculate every carb he eats to match it with insulin so his blood doesn’t turn too acidic. 
This Sunday, we will be walking in Staten Island to help raise awareness for JDRF. I encourage everyone to please make a small donation or join our team to help fund research to improve the lives of everyone challenged by Type 1 Diabetes.

While I'm participating in my very first poster presentation done completely alone at #isbpa2018 and in my own field, the smart goblins at the kitchen manages my posts for today🦊.

So as promised, here is some blood sugar safe semi-sweet crackers!
For these in the picture I had to use chia seeds in stead of flax, but it works rather nicely too. Good variation😊
.
Makes 32 crackers.
1dl almonds
1dl whole flax seeds
1dl cashew nuts
2 eggs
130g grated carrots (or beets works aswell)
1/2dl water
1ts ceylon cinnamon
A few drops liquid stevia with vanilla flavour, or add a small sprinkle of vanilla powder.

Take half of the flax seeds and mill them in a coffe grinder/seed mill to flour, as fine as you can get it.
Grate and weigh the carrots.
Add cashews and almonds to a blender and pulse them to a coarse grainy powder. Combine all the ingredients (except water) in a bowl and stir well. Be careful with the water at first, the amount you need is approximate - sometimes less is needed. The dough is supposed to be a sticky doughy lump, not a running batter.
Let it rest for 15minutes while your stove heats up to 180C. 
Press the dough out on a cooking sheet to an even shape by placing another cooking sheet on top and pressing down (and if you saw my story from a few days back you saw how its done 😂) and peeling it off.
Bake for 10 min and take it out to cut into 8x4 pieces (use a pizza cutter). Bake for 20 more minutes but keep an eye out they can burn. Flip them over and turn off the oven and leave the crackers inside to crisp, leave the door a bit open to ventilate.
One cracker contains
37 kcal, 1,4g carbs, 2,8g fat and 1,5g protein.
