Credit to @rawcrush : We made some little Oat Hazelnut Shortbread this morning and had it with a banana, mango and strawberry nicecream. Absolutely delicious combination. The styling inspiration for this pic came from my beautiful friend Olia @ps.ny and all of the accounts that use it too. Not long until Christmas. I hope you are ready. 🥴🎄🙈 Oat Hazelnut Shortbread
100g Oats
100g Hazelnuts (skins removed)
100g Vegetable Butter
100g Rice Flour
100g sugar
A pinch of salt
Ground oats finely and transfer to a bowl. Ground hazelnuts fine and add to bowl.  Add Rice flour, sugar and salt and mix. Rub in cool vegetable butter and knead gently until a dough forms. Cover with cling wrap and refrigerate for 20 minutes.
Preheat oven to 150°C. On baking paper roll out the dough and cut into cookie shapes. Depending on the thickness of your dough, bake for 12 to 20 minutes or until lightly golden. Allow to cool and sore in the fridge in an airtight container.

1 cup frozen mango
1 cup frozen strawberries

MAPLE BALSAMIC NUT & SEED TOPPING
(Makes 2 1/4 cups)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup almonds
1/2 cup cashews
1/2 cup walnuts
1/4 cup pumpkin seeds
2 tablespoons maple syrup
1 tablespoon balsamic vinegar
generous drizzle extra virgin olive oil

1/2 cup dried cranberries
⠀⠀⠀⠀⠀⠀⠀⠀⠀

Made with @pomwonderful and perfect for all your holiday gatherings. A little sweet, a little tart, POM Wonderful 100% Pomegranate Juice adds antioxidants and a unique burst of flavor to this herbaceous mocktail. These festive drinks are a great healthy alternative to all the boozy drinks going around at holiday parties this month. Make a carafe or pitcher of the juice for your bar or drink table then simply add sparkling water and ginger-rosemary syrup to each glass with ice. Give it a stir, top with desired garnishes and enjoy! ❣️
[For the syrup:]
1½ cups water
½ cup honey
3 sprigs fresh rosemary
5 slices fresh ginger ( ¼-inch)
1.) Combine water, honey, rosemary and ginger in a small saucepan. Bring to a boil over medium-high heat. Reduce heat to maintain a lively simmer and simmer until reduced by about half, 15 to 25 minutes.
[For each drink:]
4 oz pomegranate juice
6 oz sparkling water
0.5 oz rosemary-ginger honey syrup, or to taste
Squeeze of lime or lemon
• To garnish: rosemary springs, pomegranate arils, lemon or lime wedge
💠 Serve over ice

I would like you all to know something...I HATE diets and I LOVE food!

A lot of people think that I eat healthy 24/7, eat small amounts and am super strict about what I eat. 🤣  Yeah, okay that is a bunch of BS haha.  There is NO way that I would give up the foods I like or stop from enjoying things just because I am worried about the calories. .
.
I LOVE to splurge and eat cake, ice cream, loads of cheese (I am a cheese head 🧀) and other things.  BUT I make sure I am not doing it ALL the time.  I try to eat healthy as much as I can but that doesn't always happen.  Even when I am eating healthy I am not starving myself or counting calories...who has time for that?

Thankfully, the program I am a part:

🍫 has me eating so much food that I am ALWAYS full and never starving. .
🍫I DON'T count calories. .
🍫I have an easy and DELICIOUS shake that I can have on the go!

Hoy os traemos una rica y saludable propuesta para tomar al mediodía. Una de nuestras ensaladas de quinoa y arroz negro con verduritas, y de postre..., una receta perfecta de powerballs de chocolate, con fresas y coco. ¡Irresistible!
¿Qué os parece? ¿Os atrevéis a preparar este postre en casa? 😋 ¡Seguro que sí! Con lo que os gusta el dulce… 😉. .
Powerballs de fresa, chocolate y coco:
Para 8-10 bolitas:
Ingredientes:
40 gr de fresas deshidratadas
60 gr de higos deshidratado
40 gr de avellanas tostadas
40 gr de almendras tostadas
15-20 gr de cacao puro sin azúcar
5/6 cucharadas de polvo de coco

Ponlo todo en la batidora a velocidad media/alta, de 3 a 5 minutos.
Verás que poco a poco todo se irá triturando, hasta quedar en pequeños trocitos.
Una vez que la mezcla sea polvo grueso, ponla en un tazón y empieza a hacer bolitas con las manos. Éstas tienen que quedar muy compactadas, por lo que no dudes en apretarlas bien.
Finalmente, todo lo que tienes que hacer es rebozarlas con polvo de coco! ¡Y listo! Puedes comerlas directamente, o guardarlas en la nevera (se conservan una semana). 👍

Nutty Pumpkin Pecan Cake🍰 .
~~ INGREDIENTS ~~
Cake:
● 4 cups pecan halves (walnuts, almonds, and other similar nuts would work too)
● 1 tbsp ground flax seeds
● ¼ cup tapioca starch
● Spices: 2 tbsp cinnamon, ½ tsp allspice, ⅛ tsp nutmeg, ⅛ tsp cloves
● ¼ tsp salt1
● ½ cups pumpkin puree
● 1½ cups maple syrup
● ½ cup olive oil (or a cooking oil of your choice)
● 2 tbsp lemon juice
● 1 tbsp pure vanilla extract
● ½ cup raisins

Optional: If you want it even sweeter, add 6 pitted medjool dates

Extra Toppings:
● Optional: extra nuts and seeds of your choice for garnish (I used more pecans, walnut pieces, flax and sesame seeds).

 Frosting:
● Make sure all frosting ingredients are at room temperature prior to starting!
● ¾ cup raw cashews
● 3-4 tbsp non-dairy milk of your choice
● 3 tbsp maple syrup
● 2 tbsp coconut oil, melted
● 2 tbsp lemon juice
● 1 tbsp pure vanilla extract
● ½ tsp salt
. ~~ INSTRUCTIONS ~~
.
1- Preheat oven to 350F. Oil a cake pan and set aside.

2- Place the pecans in a food processor and process into a flour consistency. Add in flax seeds, tapioca, spices, and salt, and pulse a few times to mix the dry ingredients through. Add in all remaining cake ingredients, except raisins, and process the mixture to combine into a batter. Add the raisins (and dates if using) in and pulse to mix and process them into the batter.

3- Transfer the batter into the prepared pan and smooth it out into an even layer with a spatula. Top with extra toppings if using.

4- Bake in a pre-heated oven for approximately 1 hour and 15 mins (or until a skewer inserted in the center comes out dry). Remove from the oven and allow the cake to cool completely.

5- When the cake has cooled completely, prepare the frosting. Place cashews into a glass bowl and cover with boiling water. Allow the cashews to soak for about 15 mins to soften up, then strain and discard the water. Place all frosting ingredients into a blender and process until the mixture is completely smooth. Drizzle the frosting onto the cooled cake, reserving the extra topping for individual slices. Slice, plate, serve, and enjoy! :)
