To be fair if I want my hubby to change the way he eats then I still need to provide him with so yummy snacks 😊 He's been a super star giving this a go so I made him Peanut butter and banana muffins from my Vegan cook book Thug Kitchen 🌱
2 cups whole wheat pastry or whole wheat flour
1 tablespoon baking powder
1/2 teaspoon of salt
1/2 cup creamy peanut butter
1/2 cup packed light brown sugar
3/4 cup plain almond or other non-dairy milk
11/2 cups mashed banana
1 teaspoon vanilla extract
1/2 cup chopped walnuts or peanuts (optional)
Heat oven to 375deg. Grab your muffin tins and grease that bastard or use paper muffin liners.
In a big bowl, mix together the flour, baking powder, and salt. Set the fucker aside.
Now in a smaller bowl, mix together the peanut butter and brown sugar until it looks kinda creamy. Stir in the milk, banana, and vanilla until everything is mixed up.
Pour the wet ingredients into the dry and stir until just combined. If you mix it up to much, your muffins will be to tough. Don't waste all that peanut butter on some fucked up muffins 😂 Fold in the nuts now if you are using them.
Scoop the batter into the muffin cups. This makes a lot of batter, so fill those fuckers to the brim so you get a nice, domed, bakery - style muffin. Bake until a toothpick comes out clean when poked in the center of a muffin, 18 to 22 minutes. Take out let cool for at least 15 minutes before eating 😊
Key lime pie is a delicious and refreshing dessert. Our take on a key lime pie is light, healthy, and good enough to eat for breakfast. The Lime essential oil adds a richness in flavor and helps to support a healthy immune function.
1 cup vanilla Greek yogurt
½ cup granola / muesli
Zest and juice of 2 key limes
2 drops Lime oil
1 tablespoon honey (optional)
Note: Key limes are naturally a lot smaller than regular limes. If you can't find key limes than replace with half of a regular lime.
In a small bowl, add yogurt, lime zest, lime juice, Lime essential oil, and honey for added sweetness.
In a tall cup or bowl, add one-third of the yogurt mixture to the bottom of cup and top with half of granola. Repeat layers until ingredients are gone.
