As a Christian and blogger, I am thrilled to be working with Grace Scripts! I can’t wait to share my story and testament with y’all, along with insights that I find throughout this adventure of life with Christ.
In the meantime, here are a few things about me….. I was born and raised in Florida (and yes still live here). I honestly can’t imagine living further than half an hour from the beach- it is definitely a huge piece of me and I love going, even if it is just to be in awe of God’s amazingness.
I am currently a teacher, but will be switching things up after this school year is over. It is a total trust walk with God (and one I hope to share here and on my blog: polkadotsandphotographs.blogspot.com). I am a history nerd (especially the Tudor England era). I own way too many cardigans (and I’m not sorry about it)! I am an Auburn fan (WAR EAGLE) as is my family. I love making lists, reading, taking photos, scrapbooking, glitter, music of all kinds, spending time with my family and friends, pumpkins, ice cream, and coca-cola. I am a total homebody, but luckily my husband of almost two years can be one too. The biggest love in my life though, is Jesus. He’s my rock. I’ve had a lot of ups and downs in my relationship with Him in my 31 years on this Earth, but He always pulls me back to Him. I am forever grateful. I honestly don’t know where I would be without Him.
I will say that I have been fortunate enough to have been raised by and around God loving, Christ followers and that has shaped my faith walk.
With that being said, I’m curious…. Were you raised in the church? Did you come to be a Christian later in life? Or are you still deciding where you stand? I really want to know more about Y’ALL! (And yea, my entire family is born and bred southern, so you will get a LOT of y’alls from me)!!! Because of His grace,
(see you soon)
I love salad. It's a great vehicle for all kinds of bright, beautiful fruit and veg.
This big, bad, bed of leafy greens is made up of arugula, baby chard, mizuna, tatsoi, red lettuce, spinach, and parsley. A diverse blend of leafies - impacts flavor AND nutrition. The phytonutrients in these babies supports brain health and heart health by oxygenating the blood! Yum!
Those beautiful leafies are topped with a spring -y roasted veg medley, made up of carrots, radish (yes!) and fennel bulb (double yes!). Roasted radishes are divine - if you have never tried them - do! You will be surprised by the way it alters the flavor (more subtle), changes the texture, and creates a beautiful muted color. Swoon!
Same goes for fennel. Fennel isn't always my go - to, which is precisely why I went for it! Finding variety in our meals and the veg we eat supports the bio-diversity of our gut, the nutritional needs of our WHOLE body, and is a great step to bring creativity into our meals (and avoid burn out) by eating the same foods day in and day out. It could be a similar meal, like a salad for example, but trade out the veg and spice used!
With the fennel, roasting drastically knocks back the anise flavor of this bulb - and could turn you into a fennel lover! Definitely give it a try - and roast the whole dang thing! I cut it in quarters and roughly chopped it up, but those leafy fronds were tossed in the oven too! They came out crispy, crunchy - quite tasty.
What's a new and unusual ingredient that you are folding into your meal plan? I love to hear what other foods and spices people are exploring!
