🍪Single serve cookie dough🍪

You guys know I’m all about healthy alternatives. This is absolutely delicious and SUPER filling! 👌🏻 What you’ll need:
1/2 cup chickpeas 
2tbsp coconut flour 
1tbsp almond butter 
1tbsp pure maple 
2tbsp vanilla protein powder 
6tbsp almond milk 
dash of pink sea salt 
Dark chocolate chips 
Directions: Drain and rinse chick peas and then add all the ingredients (except the chocolate chips) into a blender or food processor. You may have to stop and scrape the sides a few times as youre mixing it up but blend until it forms a thick dough. Top with a few chocolate chips and viola!!! 😍

Here’s a delicious, cheap and easy recipe for a veggie Moroccan couscous 🤤 .
What you need: .
- 2 medium onions, diced
.
- 350g pack of quorn mince
. - 1tsp cinnamon
.
- 1tbsp ground cumin
.
- 2tbsp ground turmeric .
- 100g dried apricots, quartered
.
- 600ml vegetable stock
.
- 280g couscous
.
- 2 lemons, zest grated
.
- 4 tbsp fresh mint
.
- 50g raw cashews, toasted in a pan on the hob .

Method: 
1️⃣ Heat the oil in a pan, fry off onions gently until soft. 
2️⃣ Stir in the quorn mince along with the spices, apricots and stock. Bring to the boil, reduce heat and cook gently for 15-20 mins. 
3️⃣ While that cooks, make up the couscous following the instructions on its packaging.  Mix the lemon zest and mint through.
4️⃣ When serving, scatter toasted cashews over the top and enjoy!

It was made by slowly roasting carrots, butternut squash and beetroot and then mixing them with butter beans, breadcrumbs, polenta, an egg and lots of spices - I’ll post the exact recipe later on.

You could serve it in a bun with cheese and gherkins or simply in s salad like this one. I topped mine with a dollop of creamy full fat cottage cheese and some ginger scented pickled carrots.

Kimchi pancakes. For when kimchi is life.

Koreans looove kimchi (no wonder) and have found ways to make it into nearly everything.
The perfect combination of crunchy, chewy and fluffy, kimchijeon come together in no time, and disappear just as quick!

Stuff:
⅔ cup all-purpose flour
⅓ cup rice flour
2 tbs cornstarch
½ tsp onion powder
½ tsp garlic powder
½ tsp sugar
½ tsp salt
¼ tsp pepper
1 cup (tightly pack) Love Your Guts Kimchi
2 tbs kimchi juice (will add spiciness to the pancake)
3/4 cup cold Love Your Guts Kefir- any flavor, we prefer passionfruit (kefir makes em fluffy!)
1 egg, lightly beaten
6 sliced thin green onions
1 red chili, sliced

Dipping Sauce:
1 tbs soy sauce
1½ tsp rice vinegar
½ – 1 tsp water
⅛ tsp sugar
½ tsp toasted sesame seeds

Easy peasy:
In a bowl, whisk together the all purpose flour, rice flour, cornstarch, onion powder, garlic powder, sugar, salt and pepper. Add the kimchi, kimchi juice, water kefir, egg, and half of the green onions. Using a spoon, mix to combine until there is no visible flour. Pre-heat a frying pan over medium heat. Add 2-3 tbs of oil. When the pan is hot, pour half the batter into the pan. You should hear sizzling (if not the pan is not hot enough and won't be crisp). Spread the batter and kimchi to even thickness. Top the pancake with half the remaining green onions and half the red chilies. Fry the pancake for 3 minutes. Carefully flip and fry for another 3 minutes. Slice the pancakes into squares or wedges. Serve immediately with dipping sauce.

Now, if you know me (or have seen my posts) at all, then you’ll know that these super-but-every-foods feature very heavily in my day. No matter what meal, I’ll always pack in a couple of portions... it because we’re told to by the government but because they taste great and make me feeling amazing!

I never use the whole box/bag of pasta so for this one I mixed whatever was left in different opened packages to make an avo garlic pesto mixed pasta 🙃🙃. I didn't use a mortar this time to make the paste...I used a blender( easy modern lazy way😃). It came out delicious anyway!
