We promised a couple more clarified cocktails, so let’s consider this part 2 of the current trilogy. And, while the last milk 🥛 punch used a bourbon, we went more tropical 🌴 with a particular rum this time around. Fitting, considering we are currently traveling around #Taiwan 😬. But that’s not the only reason we went with such a cocktail. #homebarawards is challenging people to up their game on common dive bar cocktails. So we figured that the quick mix #daquiri (and #pinacolada ) was due for a major 🤔 upgrade... and added prep. 😂
▪️1.75oz @plantation.rum 3 Star
▪️1oz Velvet #Falernum
▪️.75oz Coconut 🥥 Water
▪️.75oz Clarified Pineapple 🍍
▪️.25oz Clarified Orange 🍊
Most clarified cocktails are made in larger proportions, so you’d want to multiply the recipe above per ounce of creamer to clarify with. We stirred the ingredients above and poured into jar. We warmed 1oz creamer, pouring the creamer into same jar. You should see it separate immediately. We placed jar in fridge and refrigerated for about 10 hours. We strained the mixture through mesh and a coffee filter. Pour the final clarified mixture on single clear ice. Garnish with lime and pineapple leaf. So, ummm, your typical dive bar drink. 😄
Just lovely. The clarification smooths out the cocktail, which is already smooth to begin with. So try to imagine the level of smooth. Hard, we know. 😁 It’s a daiquiri of sorts, but also so much more than your typical daiquiri. We are actually having a tough time explaining it, and the process of clarification has caused our heads to spin on the best way to clarify. We typically use whole milk, so switched things up by using creamer. And, while we successfully clarified in the past without any heating, we lost mixture this time around when the creamer refused to coagulate. The fix? First was heating the creamer. Second was that instead of adding the mixture to the cream, we added the cream to the mixture. Coagulated instantly

Old fashioned made with Beam 10yrs bourbon from the -60's and Bols bitters from the -50's.
Daquiri with Bacardi Rum from the -80's.
Millionaire cocktail with Bols sloe gin from the -80's and apricot brandy from the -70's.
Sidecar with Camus from the -80's and Grand marnier from the -70's.
All bottles came from the bartender/owner's private collection and not a single drink was above $20. Probably the best hidden gem in Tokyo.
