I am 17 days in to my Carnivore Diet, and I’m not going to lie, it is way harder than I thought that it would be. I’ve lost a few pounds, which is nice, though that wasn’t my goal. I have also already discovered 2 food intolerances which makes me sad, as I’ve reacted to both eggs and goat’s dairy and had to eliminate them.
The good thing is, that these are just intolerances, and there is a very good chance that someday, after I’ve gone through this whole healing process, that I might be able to reintroduce them. But, in the meantime, I’ll stick with just meat.
I feel great eating this way by the way, much better than I’ve felt in a long time. It’s not really a long term solution for me, as there are many foods that I’m missing (ahem…..mushrooms and tomatoes) but it’s only 30 days, and then after that, I’m going to start reintroducing foods starting with my favorites.
I’m scheduled for an updated Endoscopy in September, 5 months after my last one, 4 months after my GI doctor insisted that I get on meds and I refused. Here’s to hoping that I’ve done enough work to actually see some improvement!!

I want to lose more weight this summer and hit some of my goals. Even though my summer is busy and stressful, I don’t want to look back and see the weeks I “wasted” in terms of weight loss. If you have taken my Clear Skin Diet free email course (link in bio!😍), you saw that I am not a huge fan of ‘vegetable’ cooking oils 🙄. Some of you have written me that you found them listed on unexpected food items, like store bought non-dairy milks! 😮
Not to mention they also often contain emulsifiers, like soy lecithin or carrageenan, which are disruptive of the gut lining. If the milk contains only nuts/seeds plus water (and maybe salt), that’s fine, but avoid anything much more than that.
I never buy dairy-free milks anymore, but rather make my own. It’s so easy, and tastes way better!👌😋
If you decide to make your own (not that you need them in your diet, but in case you want to), here is a very simple recipe I follow.
1. Soak a handful of nuts and/or seeds overnight in lots of cold water plus 1 tsp of sea salt. I usually use sunflower or pumpkin seeds, less frequently almonds, and hemp seeds which don’t require soaking
2. Rinse them well the morning after, and mix with fresh water in 1:3 ratio in your blender, and blend it all up! You can also add ceylon cinnamon, dash of vanilla powder, sea salt and cardamom to spice up the taste.
3. If you prefer to, you can strain the milk using a nut bag, but when using the seeds, I don’t usually do it, they blend really well.
I keep them in the fridge for a few days. ☺️Do you make your own non-dairy milks, or do you have a fave brand?
Keto-food to break the fast: Avocado with almond cream, sprouts and line caught wild salmon for non-vegans and for vegans substitute the salmon for tempeh or natto. It’s easy as well as satisfying.
Always start the day with good, healthy fats, some protein and complex carbs from veggies.
Try to avoid simple carbs but if you can’t do without, eat fruits and whole grains later in the day so your body gets used to take its fuel from fats and not from glucose!

Dinner out @souplantation : green salad with celery, broccoli stems, red onions, spinach, sunflower seeds, oil and a touch of vinegar plus a drizzle of the juice from some banana peppers. Got the hot and soup and not all that impressed (hot but not particularly sour) so I shredded up my banana peppers and tossed in some green onions. It'll be fine. Regular dairy free yogurt costs way too much and is normally loaded with junk and too much carbs. Trying to re-introduce eggs into my life did not go well, I’m afraid. I had an upsurge of autoimmune pain and brain fog, so I can confirm eggs are now out of my life. So this week, I wracked my brains to figure out how to cook a version of sausage gravy and biscuits without eggs or dairy. It’s rainy and cool today, so comfort food sounded really good. Today, I’m pleased with the results. I cooked Maria Emmerich’s sausage gravy (the dairy free version) and put it with a coconut flatbread recipe from Foodie Fiasco’s blog.
