Last nights leftovers of the yummiest slow cooked cashew nut curry with a homemade sour dough pie crust and a cauliflower crumb.
I usually make dough every week after feeding my sour dough starter and discarding part before feeding. I’ve made pancakes, tortillas, pizza bases, pie crust and even cinnamon scrolls you can honestly make anything and have all turned out great! (I’ll post more on Sour dough soon because it’s a huge thing in itself to write about!)
But try this recipe below for this creamy cashew curry paired with a drizzle of probiotics yogurt .. it was a devine ! 😍
Slow cooked cashew nut and pumpkin probiotic curry ~
2 cups pumpkin
1 whole onion
2 box pure UHT coconut cream
2 cups water or chicken broth
4 tablespoon of curry powder
1 tablespoon curry paste
Cumin - all to taste. Never use measurements - use senses
1 cup cashews
Any other veg you have on hand!
Put on low for 6 hours in slow cooker! Serve on quinoa with drizzle of Filmjölk or other probiotic yogurt 🤤 yummmm x
