Tofu and Chickpea Curry 😋🌱
This was so delish and easy to make. Tofu can be a great meat alternative, but tastes the best with strong flavours.

But I changed it up to suit what I had in the cupboard!
▫️1 heaped teaspoon of Raw Organic Extra Virgin Coconut Oil by @coconutmerchant
▫️280g of Tofu by @tofooco
▫️1 red onion
▫️2 bell peppers
▫️1 can of chopped Tomatoes
▫️1 can of drained Chickpeas
▫️2 tablespoons on Curry Paste
▫️1 teaspoon of Chilli Powder
▫️1 teaspoon of Cumin
▫️2 teaspoons of Garlic Powder
▫️A pinch of Turmeric
▫️1 teaspoon of Curry Powder
▫️1 vegetable Stock Cube
1️⃣ Heat the oil in a pan and lightly fry the tofu until it’s slightly turning brown. Remove it from the pan and set aside on kitchen towel.
2️⃣ Fry the onion, then add the curry paste and spices.
3️⃣ Add the peppers, chickpeas and chopped tomatoes along with the stock and simmer for around 10.
4️⃣ Add the tofu back in and cook for another 5 minutes.
5️⃣ Serve with your favourite rice and ENJOY!
Think Indian Chipotle and you wouldn't begin to understand how amazing "Tandoori Bowl" is. It's only minutes from UCF, affordable, and pricelessly delicious. I've never had cafeteria style Indian food and now I don't think I'll ever go back to a basic menu. The staff was great! Friendly, attentive, patient. Overall it was an incredible experience and we definitely will go back
