Spinach or #palak was a huge part of my childhood. We had it as a sautéed side dish #sabzi (dry preparation) with some #parathas (check out my first post below 👇🏼😉) for a weekday lunch, or devoured it as a #vegetarian (with potatoes or #paneer ) Or #nonvegetarian (with meat of your choice) curry with rice!
My Favorite - Palak/saag chicken 😋☺️👌🏼 It’s a #onepot dish with garlic, onions, tomatoes, baby spinach, cooked down with chicken and it’s natural juices, and spices including #cumin#turmeric#paprika and #garammasala Ready in less than an hour!
(psst. Use chopped baby spinach, frozen or fresh)
Serve it hot and fresh with rice and #naan or refrigerate for 1-2 days

Dinner of the Day - Loaded Zucchini Skins
Makes 3 servings
1 Leaner protein
📍3 slices turkey bacon
📍2 pounds zucchinis
📍2 tbsp. extra-virgin olive oil
📍1/2 tsp. chili powder
📍1/4 tsp. cumin
📍¼ tsp kosher salt
📍½ tsp Freshly ground black pepper
📍2 1/3 c. shredded low fat Cheddar
📍1 c. low fat plain Greek yogurt
📍1/2 cup green onions, sliced
1-Preheat oven to 400°. Cook bacon then transfer to a paper towel-lined plate to drain and chop into small pieces.
2-Cut zucchinis in half lengthwise. Using a large metal spoon, scoop out seeds from the insides, then cut each half into three to four pieces.
3-Transfer zucchini to a large baking sheet and toss with olive oil. Season with chili powder, cumin, salt, and pepper.
4-Bake until slightly tender, about 5 minutes. Top each piece of zucchini with cheese and bacon.
5-Return to oven and bake until cheese is bubbly and zucchini is tender, about 10 minutes more. Garnish with sour cream and green onions.
Homemade adobo sauce today. I have red jalapeños ready to smoke with some cherry wood starting tomorrow; they will be chipotles when finished. This is a very simple recipe, so it would be easy to buy some dried chipotles to use instead!
Last nights dinner was by far my favorite🍛! Paneer masala with roti and jeera rice some classic indian food! As much as a love food from around the world, indian food 🇮🇳will aways be my favorite!
This rice will elevate any dish or dinner! Take regular cooked basmati rice, in a pan put a couple spoonfuls of canola oil, when its hot add a spoon of cumin seeds and a green chili. Last add your rice and mix it up! The cumin (or jeera) adds a nice warmth to the rice
