So, a year ago, @cheflorena opened @chicalasvegas and it was amazing- a 10. We loved it and left raving about it - couldn’t wait to come back and tell others to try it when in Vegas. Upon return, a mere year later, this 10 went to a 6. And that was being generous. It was average. Not bad, but certainly not what it was upon opening. Almost as if they had quickly grown complacent. The grilled octopus with blistered shishito peppers was very good - charred well and not rubbery in texture as some octopus can be - nice and tender. But the calamari was tasteless. Take the aji amarillo sauce from the octopus and add that to the calamari dish and it will elevate it. The empanadas were very good. Good flavor, good texture and not heavy. The pulled pork tacos? This is where I have a big problem. There was some flavor but it was so dry it was difficult to look past the texture. This one really disappointed me. It needed moisture and acid and all the basic things that go along with a dish like this. Now, granted, my palate is not average and my opinions are supremely targeted towards elevating the culinary experience so that average isn’t the best one can do. All that being said, I will say that both the manager and the chef took the time to come speak with us and that is why I would return to seek redemption. I greatly respect any management team and chef who would take the time to speak with their patrons. So, with that, I say, give them a shot and hold them to a higher standard.
