I won't even LOOK at a salt unless it was harvested by hand in Trapani, Italy. The heat was supplied by a leftover stump from a local oak tree. Some retentive homeowner decided it was time to cut down the beautiful thing and so I figured even in death this flora may live on in making some wonderfully delicious pizzas. Woody would've wanted it this way.

This bread (and having it come from my kitchen) has been in my head since I watched Michael Pollan’s “Cooked” series on Netflix last year. Haven’t had much chance to get out fishing this summer and needed to find something to keep my mind and hands occupied... besides work;) After one failed sourdough starter attempt and a restart... here’s the first batch. Would’ve been so much more difficult without “The Perfect Loaf” website from @maurizio and the massive patience of my wife:  @tashajbaker If you’re local to Knoxville and would like some of my starter let me know... I’ve got loads of it😱

ところで昨夜みんなで行ったステーキハウスで出されたパンが不思議なやつだった。マフィンの形だけれど中空洞ばかりで、外側カリカリ。なんて名前のパンなんだろう…??

Soft and fluffy crumb.  The sweetness of the 25% spelt appearing in more than a cameo role. Texture wise, the insides reminded me of the softness of Hokkaido milk bread I had made a few months ago. Swipe ⬅️. Perhaps this is the result of a long warm proof?  Perhaps the gluten gets quite fermented and unable to support the big pockets of gas but is strong enough for the small pockets?  I was quite delicate with this dough, skipping the preshape and gently shaping into the final loaf. Or perhaps this is simply a function of using all purpose flour (11.5% protein). If anybody has any thoughts please chime in, but don't wait for me, I'll be in the kitchen happily eating this for breakfast 🤓 #jimsbreadpan

Same loaf as previous post.  Starter was hibernating in the fridge for 2 weeks while I was on holidays. Let it bubble up overnight (no feed) and then fed it once 1:2:2 to make my dough.  Specs: 25% sprouted organic whole grain spelt farmed from Taber, Alberta and distributed via @onedegreeorganics, 75% all purpose flour. 76% hydration.  Bulk fermentation for 4 hours at 78-80F.  5 folds in the first 2.5 hours of bulk. Proofed in banneton at 80F for 2.5 hours, followed by 8 hour final cold proof at 37F.  Not surprisingly, the bulk was a bit sluggish due to the lack of feeds- hence the long 2.5 hour warm proof.  Baked for 40 minutes (20 covered at 500 and 20 no cover at 450)

It’s perfectly fine to make bad bread. I’m here to share my wins and losses. Yesterday’s bread was a failure. And there a few lessons to be learned from it. I made my 4 kg of dough early morning and took off on a family road trip. Before I left, I put it in the fridge to preserve it until I came back. But 8 hours later, it had already gone too far. Nevertheless, I shaped my over fermented dough, and 3 loaves later, I realized I’m better off making ciabattas with it. I had to bake them right away and by 11 o’clock at night, my last loaf was in the oven and I was ready to call it a night. So I asked my dear husband to watch the oven - I gave him pretty basic instructions and a stop watch and said good night. Next day, I woke up not only to 3 flattish loaves or pancakes as I would call them but one that was burnt too. Lesson 1: Never leave your dough unattended for long. Lesson 2: You make it, you bake it. 6g salt
2 hours autolyse, one lamination, one air stretch (see my post on 5th July), two coil folds. Intervals were 30 min, 30 min, 45 min, 60 min (because we were running around town looking for dalit durians). Stitched instead of cinched. 12 hours cold proof.
