For these fudgy, yummy salted caramel cookies you will need following:
🍪 3cups all purpose flour
🍪 1 1/2 cup Brown sugar
🍪 1/2 cup granulated sugar
🍪 1/2 cup coconut oil, SOLID
🍪 1/2 cup coconut cream+applesauce
🍪 1tsp baking soda
🍪 1tsp baking powder
🍪 1tsp vanilla sugar
🍪 1tsp kosher salt
🍪 200 mg milk chocolate(I used Fazer blueberry) , chopped 🍪 about 24 soft vegan caramels (u can prepare these at home using coconut milk and sugar) .
Preheat the oven to 185*C
1.Combine sugars and oil beating until well combined, adding coconut cream and applesauce.
2.ADD flours mixed with baking soda+baking powder, stir with spatula until combined.
3.Add chopped chocolate, kosher Salt and freeze the dough for 5 minutes.
4.Form small balls out of caramels; enclose in cookie dough and roll into a ball. Freeze the cookie balls for 5 minutes.
5.Bake 9 pieces per sheet, 10 minutes, reduce heat to 130*C, swao sheet positions and bake for 5-10 more minutes.
6.Remove from oven, let cool completely. Cookies can be stored in container at room temperature for 3 days. .
