On my way home from the park last Saturday I had dinner on the brain and started to think about what I wanted to eat. I considered going to the grocery store to pick up a piece of salmon or something to make for dinner. Suddenly, though, I stopped that train of thought and considered what I had at home- what felt like a somewhat incomplete set of random veggies, grains, and proteins became a challenge for me - how can I make something just as amazing as a few fresh groceries I picked up at home with what I already have? As someone living in an urban city, I am ripe with abundance of options and choices when it comes to choosing what to eat and when. Tap my finger o my phone and something is delivered to me; walk outside and boom, several dozen restaurants and fast casual joints to choose from. What I feel like I myself have lost along the way is a focus on what I *have*, as opposed to what I *need* to get. And making that mindset shift was so so profound for me. It’s not coming from a mindset of “an hour or two every Sunday can set you ‘up for success for the week’”, but more so, “how can I make the most out of what I have?” - leveraging the quiet moments in my weekend, for example, to quietly cook up some yummy quinoa, roast some sweet potatoes, and scramble some eggs. From there, I’m able to walk away with a feeling of satisfaction that I made something yummy, enjoyed it, and reduced the waste or “over abundance” in my life. Here’s hoping someone read this extraaaaa long caption, and if you did, that you’ve been encouraged to think or rather focus on what you’ve got as opposed to the “moremoremore” mindset that is so easy to fall in to. Cheers to the friggidy friggin’ weekend- these May weeks have been flying by, and there’s been a ton going on for me personally, professionally, and just generally in life. Trying to remember not to solely live for the weekend, but most certainly to savour it- I adore being able to wake up at my own pace, rest up, whip up a delicious breakfast or dinner, and go for a stroll in the middle of the day with no particular destination in mind. These past two weeks haven’t been as workout heavy and as much as I want to feel down and out about it, I’m trying to remember that my body won’t suddenly stop feeling the way it does, and that sometimes life ebbs and flows in ways where you have to focus on other areas of your life! WHATS A TUESDAY WITHOut reminiscing about the stack you made on Sunday???? Ok maaaaaybe the ice and snow and grossness outside is driving me a bit loco and none of the above makes sense but regardless I thought a nice share of this to-die-for, easy as heck to make stack of collagen pancakes would brighten all of my Toronto babes’ mornings. 
Here’s how:
• 1/4 cup oats
• 2 eggs
• 1 scoop @sprooslife marine collagen • 1 tbsp ground flax
• 1/2 tbsp hemp seeds
• 1/4 cup water or nut milk of your choice
• 1 tsp vanilla extract
Cook ‘em up: ✨toss about 1/2 tsp coconut oil onto a medium heat skillet
✨pour 1/8 cup amounts on the pan and let cook until surface bubbles. Flip, cook on other side for about 30 seconds, and continue!
✨stack them up and toss any and all toppings on top for ultimate deliciousness

WHATS A TUESDAY WITHOut reminiscing about the stack you made on Sunday???? Ok maaaaaybe the ice and snow and grossness outside is driving me a bit loco and none of the above makes sense but regardless I thought a nice share of this to-die-for, easy as heck to make stack of collagen pancakes would brighten all of my Toronto babes’ mornings. Here’s how: • 1/4 cup oats • 2 eggs • 1 scoop @sprooslife marine collagen • 1 tbsp ground flax • 1/2 tbsp hemp seeds • 1/4 cup water or nut milk of your choice • 1 tsp vanilla extract Cook ‘em up: ✨toss about 1/2 tsp coconut oil onto a medium heat skillet ✨pour 1/8 cup amounts on the pan and let cook until surface bubbles. Last weekend was a challenging one for me - I spent Saturday reflecting on my current day-to-day. Packed with waking up early, an intense work day, getting to the gym, feeding myself, and then trying to get back into bed at a reasonable enough time so I’m not exhausted the next day. Try to add in some social time to see people I love, and take care of the odd apppintment, and the days are jammed. And there it is- wash, rinse, repeat. And the truth? I’m e x h a u s t e d. I haven’t been taking time for myself - away from the numerous screens around me, away from anyone else, and doing certain things for me: reading a good book, stopping to smell the roses a bit more slowly,  cooking a yummy dish, spending time outside. Truthfully, I feel like everything around me is speeding by and I have to just hop on board and *deal* with it, or otherwise risk being left behind. There’s a lot I want to try to accomplish on a weekly basis but I guess it’s an ongoing project of working to better set boundaries; say no when I don’t want to do something, discover more of what makes me truly happy and relaxed, feel less pressure to “make the most” out of my weekends if all I need is to just lounge in bed all day, and giving myself some darn self-compassion and to feel proud for all that I do manage to squeeze out in a week. So I’m planning to try and take it day by day, hour by hour, and see whether I’m able to shift toward a healthier, less exhausting perspective (but seriously, how is it Wednesday already?)

By now, I’m sure many of you have started to see “green tea lattes” on menus as well as plenty of green drinks on your social feeds, and so I KNOW that this isn’t going to be the most unique post, but I just CANT GET ENOUGH OF MY MATCHA🍵💚. Anyone who knows me, knows that I am o-b-s-e-s-s-e-d with matcha, and have been for years. I love the earthy taste, uninhibited by sugar or sweetener or milks and froths. Give me that stuff straight up, or mixed with a bit of @organictraditions Ayurvedic herbs, @sportsresearch collagen for hair and nail and skin strength (gives it a lil foaminess), and some @artisanaorganics coconut butter (not oil!) for a subtle hint of sweetness. Numerous studies show that expressing gratitude significantly improves your mood and overall happiness, and while I don’t have any quantitative data personally, I can certainly say that working to shift my perspective as a practice of gratitude has made me feel light when the day feels dark, and thankful for what I do have when there are days I feel I have little. Mixed the sauce in with chickpea pasta tubes atop a a bed of greens with a few roasted butternut squash cubes. And just like that, dinner is served and lunch is prepared for tomorrow!

GUYS WHY IS IT SO WET OUTSIDE IT WAS DARK ALL DAY!!!!!!!!! 🙈Thinking I might need a dose of this homemade chicken noodle soup I made when I was reeeeeaalllly sick, and then handily froze in little cup-sized “muffins” in my muffin tin: game-changer for quick, pre-portioned soup that I can heat up in, like, 2 seconds. Made some tweaks to a recipe I found online (aka added 144x more carrots🥕🥕🥕🥕) and lowered the sodium, but this took a grand total of about 30 minutes to prep and simmer up to completion. Feeling super proud of myself because after a hella long day at work, I pulled myself together to do leg day at an insanely packed gym- just waited my turn, took my time, and got a serious burn, followed by a bit of a stretching session (trying to do this more!!!)

Weeks like this, where time drags on as slow as ever, it’s easy to start getting sucked into the winter blues and generally feeling down. Today on the blog- I mean caption😂- let’s talk pre workout snacks!!! So I knew it was good to fuel up for a workout but like didn’t know know it you know what I mean? always been hesitant to fill up only to be tasting what you just ate during a burpee-filled sweat sesh. Enter: trying not to have much to eat an hour or so before working out. Result? Lacklustre workouts, especially after a full day of work where I’m pooped and I’ve got sad bicep curls to show for it. Lately, however, I’ve been trying to focus more and more on small, somewhat easily digestible snacks about 30-45 minutes before getting active to keep me goiiiiinnn and let me tell you it’s been a game changer!!! Had banana the other day before a workout and was like SLAAAAYY workout slay. Pictured is another yummy go-to pre workout snack I downed quickly before an intense lagree reformer workout yesterday, and boy did I NEED this toast topped with protein-packed, super creamy and thick skyr yogurt, almond butter, natural raspberry jam, fresh rasps, and hemp seeds.

Seven whole days into 2018- happpppy new year🎉✨! I’ve been working through the idea of sharing an extensive post about what I learned in 2017 and what I plan to work on this year ahead for a few days now - but then I’ll open my instagram app and am met with a gorgeous feed filled with well-written captions accompanied by beautiful photos, and I’m a little overwhelmed! How do I make my intentions authentic? What really matters to me? are “intentions” just another word for resolutions? What is sustainable? So in other words, it’s kept me from trying any sort of exercise in reflecting for quite some time. I also took the last few weeks of 2017 to enjoy some ultra relaxing vacation time in the sun after realizing I was so dang exhausted from the last few months of work! -
But while I’ve been reflecting on being reflective, I guess I’ve realized a few things. Funny how that works right? -
After sitting with this a few days, I’ve realized that this account and I have a varying relationship, similar to that of real-life relationships- sometimes, I see it everyday, and during other periods of time, life happens and I get carried away and I don’t get to posting here or spending much time with it. But I know for sure that I love having a place to get excited about sharing a recipe or a piece of my mind - for myself, and for anyone who’s listening. It’s an awesome place to say maybe I haven’t methodically worked through my goals for this year, but I’m sure going to try to keep up with what makes me happy: spending time with people who inspire and motivate me and who I love, get hella sweaty, cook up some mouthwatering meals, expand my mind to new experiences, read lots of books, take care of myself, and work hard 👊🏼

Longgggggg post alert🚨Might have eaten this entire pan full of homemade shakshuka for brunch today after a heavy duty arms + stair master day at the gym 🙌🏻- thought I’d share some brain thoughts with you Guys this beautiful snowy Sunday evening❄️ - this morning, I woke up determined to just get going and make the most of my day💁🏻‍♀️. I had it all planned out to go to this class at a workout studio that’s a bit of a hike from my place, and was going to come home and make this shortly after✨. It was a great, solid plan. Only it wasn’t so solid after I hopped on the streetcar and learned that the subway was down and we had to hop on a replacement shuttle bus instead. And so after an hour of that (2x the time it would’ve usually taken🚌), I arrived at the studio to learn that the class was fully booked *womp*. In that moment, I thought - ughhhh just my luck🙄. But what came over me after I went to a different gym across the street, got a solid workout in, and head home as a sardine on a bus back again, was - none of this matters in the big picture. I could spend my afternoon huffing and puffing about the hassle of transit and commuting- but what rush was I in?! In fact, what I love most about Sundays is that I have nowhere. To. Be. And I wouldn’t have it any other way. And a smile just washed over my face and nothing could bother me in that moment and going forward today. I still had an awesome workout, an awesome (newly decorated with the most epic Christmas tree😍🎄) place, and a warm home to come back to to whip up this INSANELY delicious shakshuka🍳🍳. Long story long- there is SO much to be grateful for, and sweating the small stuff is so not my style nor is it worth my energy. So with that, I encourage you to think about what you’re grateful for. Instead of focusing on all the nuisances or frustrating little nagging things in your life, think about what those annoyances actually afford you the opportunity to do, or see, or be. 😍😘

Then these were born- red onion, fresh then frozen parsley I’d thrown into cubes of avocado oil in my freezer, can of chickpeas, lemon juice, garlic, and some seasoning and voila you’ve got yourself some insanely delicious falafel balls. Got a bit fancy with my bunch of kale that I massaged with @chosenfoods avocado oil and some spiralized carrots, quinoa, and toppings that I usually have on hand to add some extra crunch. December! 💥Month of all the holiday get togethers, yummy snacks, baked delights, potlucks, dinners, and all the rest of it. I love how December elicits in people a drive to finalize big projects, reflect on the year passed, and think about their goals for the upcoming year✨ however - it’s also easy to forget to take care of YOURSELF! Giving is important, if not essential, but this month I’m going to try to focus a bit more on giving to myself as well🙋🏻‍♀️. Whether it’s taking the time in the morning to whip up this insanely amazing matcha latte, or saying “no” to an event once in a while so I can do what I want or need to do, or allowing myself a night off, imma do it! Whipped these up tonight for dinner🤤- you can go take a look at the step-by-step details on my story, but here is the finished product in all its glory✨These are the perfect crunch-to creamy ratio, with a little bit of fun coming from the spiral-y noodles! Made even better by the fact that this soup included handmade chicken dumplings from my second half, @daphneswu 🥟 🤤- made this bowl with quinoa + rice noodles, fresh steamed veggies, organic chicken bouillon, and chicken dumplings.  Topped with green onions, rice vinegar, and sesame oil. What’s your favourite keep-warm meal for the colder seasons??

For all of you cuties who guessed what the green tentacle I had in my grocery bag last night- you were right👌🏻🎉✨! It’s none other than aloe!! Found this guy while shopping at a grocer in China town and was so pumped when I saw him👏🏼👏🏼. Seriously- take my hand for context of just how dang large this aloe leaf is!! 🙌🏻While it’s known for its burn-relief magic, Aloe is amazing for so many reasons/uses- it’s packed with vitamins, antioxidants that help with free radical development in your body, it’s wayyyy hydrating, and it’s known to be super anti-inflammatory. Threw a big chunk (peeled!) into my smoothie this AM, and also plan on blending some of the inside with water and using it as a hydrating mask treatment on my face 😍 anyone else have fun aloe uses? -

Thought I’d take the time to (hopefully) brighten your day and share a photo from the time I was in sunny☀️ sunny Cape Town and loving getting back to my roots! ♥️ also, as promised, I said I’d share the seared salmon recipe, roasted turmeric cauliflower, and apple cider vinegar quinoa that I meal prepped a few nights back. So, here goes!!
[For the cauli]
✨chop 1 full head into small florets and lay out on a baking sheet covered in parchment paper (my fav!! Makes cleanup SO easy)
✨top cauli with a spritz of avocado oil, pink salt, cracked pepper, and 1.5 tsp of turmeric- toss florets around in pan so you get everything coated nicely!
✨toss cauliflower in oven and bake for 45-50 minutes, taking out around halfway to mix it up
[For the salmon]
✨preheat oven to 400F
✨ take 2 fresh 6-8oz fillets of fresh salmon and top both sides of salmon with a thin layer of miso paste, about 1 tsp for each filet, then sprinkle with pink salt and a bit of cracked pepper
✨heat a small skillet over medium heat using avocado oil and sear both sides of salmon so that either side is slightly cooked, ~2-4 minutes each side.
✨place filet on a baking sheet and place in oven at 400F for approximately 7-8 minutes, until cooked through. (I chose to leave mine in for slightly less because I heat my lunch up so I didn’t want to over cook it as it cooks a bit more when you heat it up!)
[For the quinoa]
Boil ~3 cups water in a small saucepan; pour 1/2 cup quinoa in, and add in approximately 1-2 tbsp apple cider vinegar. Follow cooking instructions. I like my quinoa a bit on the el dente side, so I usually cook for about 10 mins total.
Combine the ingredients in two containers and away you go! Had the first batch for lunch today and couldn’t finish so I’d argue this recipe could make three total meals for sure. 
Thought it’d also be cool to add up prices for the ingredients so you see what a bit of time and way fewer dollars can get you, as far as a wholesome, nourishing meal (in comments)

CHECK. THAT. FOAM. 🤤Finally got my hands on a nut milk bag to make homemade almond milk 🌰and boy oh boy oh boyyyyy was I not disappointed👏🏼👏🏼. For those of you who haven’t tried this or heard of it before, you typically soak any variety of nuts (in this case, almonds) for a few hours (I did it overnight), alongside with a few other add ins if you like (I throw in a few pitted dates, a pinch of sea salt, or vanilla extract). Blended it on high speed with about 1 liter of water, and strained using my nut milk bag. Et voila - you have yourself a really rich almond-tasting milk, and it’s sooooo damnnnnn good!!!! Give it a try this weekend if you feel up to it! Happy Friday 😘

CHECK. THAT. FOAM. 🤤Finally got my hands on a nut milk bag to make homemade almond milk 🌰and boy oh boy oh boyyyyy was I not disappointed👏🏼👏🏼. For those of you who haven’t tried this or heard of it before, you typically soak any variety of nuts (in this case, almonds) for a few hours (I did it overnight), alongside with a few other add ins if you like (I throw in a few pitted dates, a pinch of sea salt, or vanilla extract). Blended it on high speed with about 1 liter of water, and strained using my nut milk bag. Et voila - you have yourself a really rich almond-tasting milk, and it’s sooooo damnnnnn good!!!! It might even be getting around to that laundry you've been putting off so that you can feel all nice and clean in fresh clothes.

I think that in today's world, we live in a society that celebrates being busy, with non-stop action and jam-packed days filled with being ultra productive and hyper connected. It's easy to get caught up in the daily hustle and bustle and forget to take a second to collect yourself and allow yourself to do something entirely for you - no matter how kooky, off-the-beaten-path it is. For me? Often, it's cooking. It's getting all the ingredients out of my cupboards, my fridge, laying everything out and figuring out in my mind what I'm going to concoct with what I've got in front of me😍. Or it's the whole process from writing the shopping list, going to the store, and then picking up the items to make a dish I've got in mind. The methodical act of chopping or mixing or sauteeing is almost meditative for me. Once I've finally laid down after an evening of prepping, making, and then cleaning up, I'm often taken aback by the fact that my feet are sore or my back is a lil' stiff - my mind just goes somewhere and I get so excited about plating something all pretty or just simply chucking it on a plate and enjoying all of the multiple layers of flavour, or just one flavour.

Tonight was one of those nights for me - put some things on the stove, chopped up some veggies to roast, and made this bowl filled with fresh veggies, turmeric chicken strips inspired by @ihartnutrition , and obviously a bed of massaged kale cuz kaaaalllee💚. -

As promised, sharing with you my go-to green smoothie recipe💚💚! (For those of you who follow my stories, you know!). This smoothie ain’t just your average joe smoothie. It also isn’t just packed with some fruit and yogurt and juice. This smoothie means BUSINESS👔💼. And by that I mean you’re not gonna get some “I’m hungry 45 minutes after eating this” nonsense. You’re gonna get a jam-packed, nutrient dense blend that powers you through the morning and well into lunchtime, with an amazing balance of fibre, protein, and healthy fats. So, without further ado, here’s my go-to recipe:
• 1 cup water (or @lovemysilk unsweetened almond milk, whatever I’ve got on hand!)
• 1 large handful spinach • 1 scoop vanilla protein (I love using @kaizencanada whey!)
• 1/2 frozen banana
• 1/2 cup frozen cauliflower (trust me, it’s good! Adds thickness and creaminess without all the sugars from fruit)
• 1/4 cup oatmeal
• 1 tbsp hemp seed (I love my @manitobaharvest Hemp hearts)
• 1 tsp greens powder (which is a combination of spirulina, chlorella, wheatgrass, and probiotics)
• 1/2 tsp cinnamon
• 1/2 tsp turmeric powder
• optional: 1/2 tsp maca, 1/2 tsp ashwaghanda

Nothing like a colourful Israeli salad to brighten your day and keep your tummy happy🥗🍅🥒! These days, I’ve been trying really hard to draw a good balance between spending time with people who are important to me (which often results in grabbing a bite to eat with them🍝) while at the same time, allowing myself to spend time at home doing the things that make me happy and that are so important for self care, self love, and health (and also giving my bank account a break!💸💸) : cooking wholesome (sometimes SERIOUSLY simple) meals for dinner🥚(sometimes making an elaborate plate is just not what my tummy wants or craves, and a piece of toast with avo will do the trick), prepping a nourishing lunch for work the next day🍴, catching up with household chores🛒, getting enough sleep to be alive the next day😴, and just spending time with myself in my own space - sometimes there’s just not enough time in the day! Couple that with trying to get a sweat in💦 (which keeps me sane!) and all the rest of it, and it can get overwhelming af!🌪 Definitely working on trying to set up some really important time to myself so that I don’t get that waaaaayyyy burnt out ☄️feeling at the end of the week like I’ve been getting these past few weeks! Taking a moment to appreciate this Greek food feast from last weekend in Greek town🇬🇷 horiataki salad with cucumbers🥒, bell peppers, tomatoes🍅, onion, creamy feta, and some of the most fresh tasting olive oil I’ve ever had🌿, pita perfect for dipping, and tzatziki with fresh olives and olive oil drizzle. Whenever people ask me what type of food I could eat for the rest of my life I say Greek - I love the fresh veggies🍆🍅🥒, the even fresher olive oil, the tzatziki, the wholesome ingredients, and that most of what is served is grilled. Hiiiii guys!!!! I am so so sorry to have been so MIA these past few weeks😅. Truth be told, I've been super busy ramping up in this new gig of mine, was in San Francisco for training last week, and haven't really had much time to myself or to cook or to take pretty pictures😭. And I know my friend @sweethealthnut has spoken about this but I am a perfectionist extraordinaire🙈- and that spans as wide as having to have the perfect light to take pics of my food! And that hasn't happened because of two things: (1) I haven't had time to whip up anything that's of noteworthy imagery - read: stir frys with what I have in the fridge, and (2) because I leave my house before the sun comes up and usually get back later in the evening when the sun is coming down. Anyway, thought I'd share with you my go at making @leefromamerica's Fat Balls💜! Whipped up a batch a few weeks ago when I *did* have more time, and I am so glad I did - I pop one of these in my mouth when I'm feeling snacky or I'm craving an indulgent dessert and those fats just kick all sweet tooth craving into their place 😂I added my own collagen peptides into the mix which definitely contributed to them looking a little whiter/paler than expected but these will definitely be a repeat offender. BRUNCH BOWL✨I wanted alllll of the things today, so I made all of the things for brunch- 2 egg and 1 egg white omelet, roasted sweet potatoes, diced colourful tomatoes, avocado, caramelized onions in @chosenfoods avocado oil, a pinch of quinoa, all on a bed of kale, broccoli, and Brussels sprouts slaw💃🏻. Truth be told, I haven't done much of anything today😴 Been super active all week and was really feeling the strain at yesterday's gym session😫. Might go on a light jog because our warm weather days are numbered and my body can only take so much blobbing🤗, but here's a good time to highlight the necessity to slowing down, giving your body the rest it needs, and sometimes just doing *nothing* is everything you should be doing. Helllooooo to this stack of perfect smoothies💚💜🖤 Layer 1 is chia pudding made with chia seeds and unsweetened almond milk, Layer 2 is a blueberry smoothie mixed up with vanilla protein powder and frozen cauliflower, and last but definitely not least is Layer 3, which is a matcha layer made with matcha, spirulina, spinach, cauliflower, and banana. Topped with fresh figs, hemp seeds, mulberries, and goji berries. Been seeing these beautiful layered concoctions all over the gram and had to give it a try myself🤗 I had lots of fun starting with a neutral base of cauliflower and cashews and vanilla protein powder and then adding all the elements to make each layer's colour pop 🎨Transferred this fat, overflowing stack to a larger jar (been looooving my @weckjars jar) to eat with the comfort of a spoon because if you haven't been making smoothies thick enough to use a spoon for you are missing out on a major part of life 😂 Happy Thursday babes😘!

This bowl was de-li-ciouuuus. Make it: 1/3 cup @bobsredmill rolled oats, 1 tbsp @bobsredmill ground flax, 1 tsp @naturoney organic honey, and 2 egg whites, all cooked over the stove on low-medium heat.
