After another attempt at a social media free weekend (for the most part, I picked up my phone and looked at Facebook out of habit but caught myself after I reposted like 4 memories 🤷‍♀️) I was craving a taco salad!🥗 I'm really digging not being on a social media so much on the weekend, I'd rather focus on my husband, friends and family and cherish the moments and make memories! ❤ 😊 My husband @brentstelzer and I did 12 miles on the Bosque bike trail 🚴‍♂️🚴‍♀️ we are going to increase the distance each weekend! 👍It was awesome! I cant wait for next weekend except school starts next week and I'm nervous & excited 😳..new state, new school. 📝 Cooking always relaxes me, its meditative really....

Grilled glazed Salmon on pineapple packets from the amazing @cleanfoodcrush cleanfoodcrush The only thing I changed was that I grilled them instead of baked in oven. The glaze is coconut oil, organic honey, crushed red pepper, s&p, parsley from my garden, lemon juice. Start with wild caught salmon and organic pineapple if you can 🐟 🍍.
Soooooo good! I tossed organic broccoli 🥦 in EVOO, sea salt, and @flavorgodseasoning and grilled at the same time. I also grilled lemon halves to squeeze over broccoli and salmon when we ate. No mess, all real foods, bursting with flavor and Nutrition. Win win and a party in my mouth. Today was a great day to have a great day! ✅ (all of this process is in my story showing just how easy it is. .

makes 4 servings

Ingredients:
4 boneless skinless chicken fillets, about 5 oz each
1 Tbsp avocado oil, or olive oil 
8 packed cups mixed lettuce leaves
1 cup cooked fresh or thawed frozen organic corn kernels
1.5 cups halved cherry tomatoes
1/3 cup chopped pecans
4 hard-boiled eggs, peeled and chopped
1 ripe avocado, diced

Sweet Onion Dressing:
2 fresh garlic cloves, pressed
1 small sweet onion, chopped
4 Tbsps extra virgin olive oil, divided 
1/4 cup apple cider vinegar
1/2 a fresh lemon, juiced
sea salt and freshly ground pepper

Instructions:
Heat a grill pan or an outside grill on medium high heat. Rub chicken with sea salt, pepper and a bit of oil, then add it to the grill. Cook for about 5 minutes per side, or until cooked through and no longer pink in the inside. Set aside on a chopping board, cover and rest for a couple of minutes, then slice thin.
Heat 1 Tbsp oil in a skillet over medium high heat; Saute garlic and onions for 6 minutes, or until soft and golden brown. Place camelized garlic & onions in a small blender together with remaining extra virgin olive oil, cider vinegar and lemon juice; puree until smooth. Season to your taste with sea salt & pepper, then refrigerate until ready to serve.
In a large salad bowl, add lettuce, then cooked chicken, tomatoes, corn, eggs, pecans, and diced avocado as shown.
Once ready to serve drizzle the dressing on top, and gently toss to combine.

Ingredients

16 leaves romaine or butter lettuce
8-10 slices nitrate free turkey cut into thin strips (about 6 ounces)
1/4 cup shredded cheddar cheese
2 hard boiled eggs, chopped
1 cup cherry tomatoes, cut into quarters
1 cup chopped cucumber
1/2 cup sliced celery
1/2 cup organic corn, frozen - thawed, OR use fresh, local sweet corn cut straight from the cob (no cooking required if the corn is super fresh!)
1/4 cup plain Greek yogurt
2 Tbsp chopped fresh parsley leaves, plus more to garnish
2 Tbsp chopped chives
sea salt and freshly ground black pepper, to taste
Instructions

In a large glass bowl place all ingredients except lettuce. Season with sea salt and freshly ground black pepper.
Gently toss to combine.

{NEW} Avocado Corn Chopped Salad 🌽🥑🍅
{ Happy Sunday! Here's a quick recipe for you to take to your bbq's & parties today! Tangy homemade dressing, and all the fresh veggies of the season in a colorful bowl! }

makes about 4 servings 
Ingredients:
4 ears fresh sweet corn, husk removed, cleaned
2 small ripe avocados, diced
1.5 cups cherry tomatoes, halved
2 small cucumbers, sliced 
2 Tbsp fresh basil, or parsley leaves, chopped 
1/2 red onion, sliced

Dressing:
3 Tbsp extra virgin olive oil
1 fresh lemon, juiced
1 tsp raw honey
1 clove fresh garlic, pressed 
1/4 tsp each, sea salt and freshly ground black pepper or to taste 
Instructions:
In a small glass bowl whisk together all of the salad dressing ingredients.
Refrigerate until ready to use.
Bring a large pot with salted water to a boil. Add in corn and cook uncovered for about 5 minutes.
Immediately place corn cobs into a cold ice bath of water. Remove, set on towels to air dry a bit.
Place corn on a cutting board and cut the corn kernals from the cob.
In a large bowl combine corn with avocado, tomatoes, cucumber, red onion, and basil.
Just before serving, drizzle with the dressing and gently toss to combine. Enjoy!

Vegan goulash •Penne pasta made with yellow lentils •Organic corn made separate at first with a tbsp of just mayo, a tbsp of vegan butter and cayenne with pepper, garlic powder and sea salt mixed all together. (That’s how we eat it all the time and so I had some leftover - this was the inspiration)
•green chilis - about 1 tbsp •fresh diced onion and tomatoes sautéed with the green chilis
•tomato sauce •beyond meat crumbles •some garlic and Italian seasoning •some vegetable broth for the consistency I wanted 
I think that’s a wrap!
You can add panko crumbs and vegan cheese if you want. 🌱

Well breakfast is late again 😞I have the flu from my kids! My throat is sore, I’m coughing and I hardly slept.  Despite all this I feel amazing! That sluggish feeling that made me desperate for coffee and a hot breakfast has finally left me 😳When I wake up, I’m up! And it stays that way through out the day! My mums famous green chutney can be served with just about anything. We eat it with our curries, on toast, in sandwiches, with samosas and chaat, with our pakoras, pranthas, and alongside salads. It’s served on our dining table with every meal.  It makes everything and anything taste better. 👌🏾

2 tbsp mint sauce 
1/4 tsp stevia or 1 tsp sugar -
✔️Put everything in a blender and blend till it becomes like a thick chutney paste and enjoy 🏴󠁧󠁢󠁳󠁣󠁴󠁿

Prawn thai curry | serves 1 | easy peasy | 20 mins | 460 calories

150g prawns 
1 tsp olive oil 
70g peppers (Capsicums)
50g mushrooms
1 onion 
Organic light Coconut milk - 200ml
1 tbsp red curry paste 
2 tsp Garlic 
2 tsp ginger
1 tsp green chilli
A few drops of fish sauce 
1 tbsp soy sauce 
Coriander

✔️ Cook the onions in a pan with the oil for a few minutes then add the mushrooms and peppers.
✔️ Add the ginger, green chilli and garlic and cook till the begin to soften slightly but still have a crunch. Add the soy sauce and mix to coat all the veggies.
✔️ Add the prawns and then the Thai sauce.
✔️ When the prawns have cooked mix through the coconut milk and simmer till it begins to thicken.
✔️ Add the fish sauce and finish with a sprinkle of coriander 👌🏾

Turkey Taco Zucchini Boats 🌮🍅🍆🌽 makes about 6 servings

Ingredients:
4 medium zucchini, sliced into halves lengthwise as shown 
2 Tbsps avocado oil, or olive oil, divided
1 medium yellow onion, diced
1 lb. lean ground turkey meat
2 fresh garlic cloves, minced or pressed
sea salt and freshly ground black pepper, to taste
2 tsps chili powder
2 tsps ground cumin 
1/2 cup organic tomato sauce
1 cup prepared drained and rinsed black beans
1/2 cup frozen organic corn 
one handful of fresh cilantro leaves, finely chopped
1 cup shredded mexican cheese blend 
1/2 cup cherry tomatoes, diced
2-3 green onions, finely sliced
lime wedges, to serve 
Instructions:
Preheat oven to 400 degrees f.
Using a spoon, scoop center seeds and such out from zucchini, leaving a little over 1/4-inch rim to create the boats.
Place zucchini in one large baking dish, or two separate smaller baking dishes, brush with 1 Tablespoon of your cooking oil and season with sea salt and pepper.
Roast in your preheated oven until crisp-tender, about 17 minutes.

Meanwhile, heat olive oil in a large skillet over medium-high heat. Add in the onions and saute for 1 minute.
Add ground turkey, garlic, chili powder, cumin, sea salt and pepper, and cook, tossing and breaking up the meat as you go with a wooden spoon. 
Stir in tomato sauce, black beans and corn, and cook until meat is cooked through, about 5-7 minutes.

Remove zucchini from oven once roasted, let cool for just a minute, then lightly pat dry the moisture inside your boats with a paper towel. This helps so much!

Stuff the pre-roasted zucchini with your taco mixture, sprinkle with cheese then return to the hot oven and bake until cheese is melted, about 7-8 minutes longer.

Remove from the oven, and top with cherry tomatoes, green onions and garnish with cilantro and lime wedges. 
Serve immediately.

BLT Avocado Bites

AMAZING + SO SIMPLE! 
These BLT Avocado bites came together super fast in our kitchen tonight while Jason was outside grilling some chicken with the boys.

We had a BBQ for 8 people...okayyy so just our (little) family of eight...butttt...these lil' babies were completely gone in 5 minutes *flat* once I gave the go-ahead to dig in!

Most of our kids are teenagers now, and these were my BIG Mom-Win for the week!  Why is it so hard to impress, and connect with teenagers?! Remember the days our kids were impressed with bubbles, and homemade play dough...and wouldn't leave our side? Sigh... Ingredients:

Sliced, ripe avocado 🥑

Nitrate-free cooked bacon 🥓

Organic, crisp iceburg lettuce 
Quartered vine-ripe tomatoes 🍅

Sea salt + fresh ground pepper

Instructions:

Arrange as shown, hold them together tight with a large toothpick...there is no wrong way to assemble!

This might look like a bowl 🍲 of mush, but it’s my all time favorite #guacamole recipe! Maybe cause it’s my own 😜. After trying SO many different recipes and learning what I like more/less of, this is what remains though loads of trial & error. You will need: 3 avocados 🥑, 1 lime juiced, 1 tsp sea salt (a touch more of you like more salt), 1/4 cup diced onion, 3 tablespoons chopped fresh cilantro, 2 Roma (plum) tomatoes 🍅 diced, 1 clove garlic minced, 1 pinch or more of cayenne pepper (more if you like spicy 🌶). Directions: 1) In a bowl, mash avocados (peeled & pitted) lime juice & salt. 2) Mix in onion, cilantro, tomatoes, garlic. 3) Mix in the cayenne pepper. Serve immediately or refrigerate for 1 hour then serve. Personally, I find it more flavorful when it’s not too cold. My mum made this for me today and it was delish.👌🏾 It’s a dairy free alternative to masala chai which won’t leave you feeling bloated.

Cleansing masala chai | easy peasy | serves 4 | 15 mins -
1 litre of boiling water
2 tbsp fennel seeds
4 cardamom pods (elachi)
3 cloves
1 tsp celery seeds (ajwain)
2 cinnamon sticks -
✔️Add everything to a pan and boil for 15 mins. The colour of the water will change to become slightly brown. Strain and serve. 😉Insider tip, you can use a little manuka honey to sweeten it if you want to.

🍯Honey mustard chicken salad | easy peasy | 20 mins | 450 calories -
2 chicken skinless & boneless chicken thighs, chopped
1 tsp olive oil 
1 tsp Manuka honey
1 tsp French mustard 
A sprinkle of smoked paprika 
Salt and pepper
-
75g herb lettuce
A few sprigs of basil leaves
1/2 red chili 
1/2 yellow pepper (capsicum) 
1/2 red pepper (capsicum)
1/2 red onion 
Dressing:
1 tsp light mayonnaise mixed with 1/2 tsp whole grain mustard
Salt and pepper

✔️Heat the oil in a pan and cook the chicken till it’s slightly brown. Add the salt and pepper and a little paprika. ✔️Add the French mustard and cook for another few minutes till it’s completely coated.
✔️Add the honey and mix through till the chicken is a gorgeous golden brown colour.
✔️Sprinkle the paprika over the chicken.
✔️Meanwhile add all the chopped veg to the lettuce for the salad. ✔️Mix together the mayo and the whole grain mustard and combine with the salad.

I finally, reluctantly, crawled over to where they are in my store and hid them under my handbag because who buys this shit? 💩Right? 🙌🏼 Well anyway, apparently I do! 🌱 
and there is only three on the plate because I ate the other three before I took a picture and obviously before they were cool enough to place in your mouth and bite down- so now I’m going to the hospital for third degree burns - but I can’t say it wasn’t worth it. 🔥💚 .

Here’s how I made it:
Tuna Salad (tuna mixed with mustard, olive oil, pickles, pepperonccini, salt and pepper) 
1/2 avocado with a little lime juice
Bed of quinoa all topped with @traderjoes Everything but the Bagel seasoning
So easy!! Eating healthy doesn’t have to complicated.
Oh, this would also be great with chicken or egg salad too!

Over the next few weeks I’ll be making some suggestions on how to swap a couple of things in your Indian diets that will help you stay on track, by lowering your daily calories whilst still giving you the flexibility to eat the meals you really enjoy.

Let’s start with this - try swapping paneer with tofu when you make saag paneer, chilli paneer or mattar paneer.  Tofu has a similar consistency and texture and is less than half the calories. Make it the same way as you’d make paneer in any other dish and save 250 calories per 100g.

How I USED to eat VS How I eat NOW

I was overworked, over tired and reaching for anything that quick and easy. Restaurant life will do that to you! That led to me eating a lot of processed foods, take out (pizza, subs, sushi, etc.) and sweets (candy, ice cream, cinnamon rolls, brownies, you get the idea). It left me always feeling tired and lethargic.
.
I still enjoy the occasional treat, let's be real, who can live without ice cream and wine! But I make a daily decision to fuel my body with whole, clean, nutrient dense foods. I choose food without a label and as minimally processed as possible and fill my diet with vegetables, lean protein and healthy fats. I feed my body well and in return I have more energy, sleep better, improved digestion and I generally feel good from the inside out.

But this didn't happen overnight. .
Start small, make weekly changes (like replacing soda with sparkling water, trying a new vegetable or having fruit for dessert instead of something sugary) and eventually you'll be feeling your best too. You can do this!

{New} Cilantro Lime Cauliflower "Rice" 🌱

What is it?! Rice or cauliflower? It’s just cauliflower pulsed in a food processor until its about the size of rice. .
When it’s cooked and seasoned well, it IS delicious and you’ll feel great about getting more vegetables into your day!

Try this recipe out tomorrow with your taco Tuesday Dinner plans! 🌮🌮🌮 Cilantro Lime Cauliflower Rice

makes about 4-5 servings as a side 
Ingredients:
1 large cauliflower head or 16 ounces store-bought cauliflower rice
1 Tbsp avocado oil, or ghee 
3 cloves fresh garlic, minced
sea salt and freshly ground black pepper, to your taste
1-2 jalapenos, seeded and chopped
½ cup chopped fresh cilantro
2 limes, juiced

Instructions:
Begin by preparing your cauliflower rice.
Use 1 large head of cauliflower and chop into florets.
Pulse florets for about 10-15 seconds in a food processor – do not over process, or else it will turn mushy. A large grater can also be used instead.
Heat oil + ghee in a large skillet over medium to high heat. Add garlic and cook while stirring until fragrant, about 20 seconds. Add the cauliflower rice, sea salt, and jalapeno, then stir to combine.
Cook, stirring just every minute or so, until the cauliflower rice is hot and turning golden in places, about 5-8 minutes.
Remove the skillet from the heat, season with sea salt and pepper to your taste, then stir in the lime juice and fresh cilantro leaves. Enjoy!

Truth: I don’t have a green thumb. 🌱 I have a difficult time keeping most plants alive. (My husband loves to tell people how I killed an air plant 🤣) But I do enjoy planting herbs to use for cooking. This morning I made pesto with basil from my garden (supplemented with some from a friend). It’s dairy free and fit club friendly!

I made a version of this last night (I added mustard to the marinade #mustardaddict ). It’s sooo good and great for a hot day because it’s all cooked on the grill.

2 tsp . olive oil
2 Tbsp . balsamic vinegar
2 Tbsp . fresh lime juice
2 cloves garlic , chopped
Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
1 lb . green beans , ends removed
2 medium zucchini , sliced
2 medium summer squash, sliced
1 cup halved cherry tomatoes
1 medium green bell pepper , sliced
1 medium red onion , sliced
4 cooked chicken sausages , sliced
2 Tbsp . chopped fresh basil
.
To make marinade, combine oil, vinegar, lime juice, and garlic in a medium bowl; whisk to blend.
Season with salt and pepper, if desired; whisk to blend. Set aside.
Place green beans, zucchini, summer squash, tomatoes, bell pepper, and onion in a re-sealable plastic bag (or large bowl). Add marinade; shake to blend. Let sit for 30 minutes.
Preheat grill or broiler to high.
Place veggie mixture on a large sheet pan (or broiler pan). Add sausages; mix well. Spread out evenly.
Grill or broil for 4 to 8 minutes, turning occasionally, until vegetables begin to soften.
Sprinkle with basil before serving.

1 bell pepper (any color)
3/4 cup taco meat
1/2 cup beans/rice
1/4 cup cheese
Mix meat, rice, beans together. Cut pepper into 8ths, place on sheet pan and top with meat mixture. Cover with cheese and bake at 350 until melty.

I love cheese so anyway I can incorporate it into my meals makes me happy! I also love snack foods but they aren’t always the *most* nutritious choice.... These bell pepper nachos check all the boxes for me: cheesy ✔️ snack food ✔️ nutritious ✔️ . 1 bell pepper (any color) 3/4 cup taco meat 1/2 cup beans/rice 1/4 cup cheese Mix meat, rice, beans together. Cut pepper into 8ths, place on sheet pan and top with meat mixture. Cover with cheese and bake at 350 until melty. . Happy snacking! It’s almost the weekend! For me that means grad school homework, meal prep and sleeping in (yay!).

Meal prep, while KEY for me to stay on track, isn’t always something I like to do. Over the last few months I have been consistently doing it and found ways to make it easier, like whipping up a big batch of these muffins! They are made with a coconut oil, almond flour and a little maple syrup for sweetness. I like to mix up the fruit I add in; pear, apple, berries, really whatever I have on hand. I store them in the freezer so I have a quick on the go snack or breakfast!

They smell so good coming out of the oven that I usually can't resist and sneak one hot and fresh! Yum!

Meal Prep Day!
I started making my own taco mix a few months ago and I love that I know exactly what's in it and there are no fillers or mystery ingredients. I can also control the amount of salt. Lately, I've been on a ranch kick, so I started making my own ranch seasoning mix. I've been adding it to yogurt for a dip, roasting veggies with it (currently obsessed! I love it with carrots), I even mixed it into my pulled pork that I had for lunch today! I like my ranch to have extra dill in it, but feel free to use less if you aren't a dill lover like I am!
Homemade Ranch Seasoning
1 tsp himalayan salt
1.5 Tbsp parsley
3 tsp dill weed
2 tsp garlic powder
2 tsp onion powder
2 tsp dried onion flakes
2 tsp black pepper
Mix all together and store in an airtight jar. 
For reference: 2 Tblsp is roughly equal to one seasoning packet

I like variety in my food, so I make small batches of things that I can mix and match together to make lunches and snacks, with the exception of breakfasts and my daily superfoods shakes, I prep those for the week. 
This week I made Pesto Roasted Carrots, and they were delicious!
Pesto Roasted Carrots
1 lb petit or baby multi colored carrots
2 tsps pesto
1 tsp oil, avocado or olive 
Pinch Salt and Pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cut carrots into halves or quarters depending on size. Place on a sheet pan, top with oil, pesto and salt and pepper. Toss to coat. Bake at 400F for 15 minutes or until tender
