Let’s talk about that pressure cooker. I used one for years and it made amazing meals for us and it was old school and I loved it. Then we moved and even organized me couldn’t find it for a while. When I did, I tried to use it and nothing really worked because little did I know, it was tired. So I bought a new one and I tried to find one that looked just like the old one and I’m back in business.

If you want something fast and I mean 15 minutes fast, use a pressure cooker. I got mine at Bed, Bath and Beyond. $60 I think and if you use a 20% off coupon, you’re golden.

You can make soups, stews, beans or whatever your little heart desires in 15-20 minutes and everything turns out amazing. Just put all your ingredients (spices, veggies, liquids) in with water and broth (I use half water half veggie broth) and turn in on high and out the lid on. Once everything is boiling, the knob on top will rock and sing loud to you. Let it sing and rock for about two minutes and then turn it down to a low for 12-15 mins. For example, my stove top says 9 before it says high and that’s what I put it on. Then after two mins I turn it to 2.8 for the duration. When the time is up. Turn off the stove and use something long and far away from you to tilt the knob to release the steam. Boom 💥 you have beans to put over rice or soup or stew or black eyed peas and cabbage.  The options are endless.

{new} Roasted Brussels Sprouts 🌱
{ Roasting Veggies rather than steaming or boiling is an absolute game-changer! 
Have you tried them yet?!! Boiled Brussels sprouts are basically mush, blah, and offensively stinky; whereas a roasted one is a slightly charred and carmelized sweet n' crunchy.

They are phenomenal when prepared this way, and it’s super easy too!

With the high heat, caramelization occurs, and those dark-browned crispy edges are an edible crunchy delight.

I really prefer using a high quality avocado oil because it has a higher smoke point (avocado oil has a smoke point of 500° F. ) This smoke point allows you to safely sear, saute, stir-fry, barbecue and even bake at high temps with out your oil breaking down. It's much more stable, safe, and suitable for high heat cooking.

makes about 6 servings 
Ingredients: 
2 lbs fresh Brussels Sprouts 
2 Tbsps avocado oil, olive oil, or coconut oil
3 Tbsp freshly grated Parmesan 
1/2 tsp. sea salt, or to taste 
Instructions: 
Preheat oven to 400 degrees f.

Trim and halve the Brussels sprouts, and place in a large glass bowl. 
Add the oil and grated Parmesan, and sea salt. 
Toss well to coat well, then place everything on a large, rimmed baking tray. 
Distribute sprouts evenly in a single layer on the tray.

Roast in your preheated oven for 15-20 minutes, turning once in the middle of roasting time, until golden brown with crunchy outer shells, and the center of the sprouts are tender-crisp. ❤Rachel

On the day of cooking, I literally had to open baggies and dump in the slow cooker or throw on the grill. Making it so quick to get dinner on the table. Cauliflower au gratin 🧀 I used @cheartisan  Mozzarella  Recipe ⤵️ 1 Med head of Cauliflower Boiled till tender,  fully covered in salt water 
1 package of Sunflower mozzarella @cheartisan 
1 Jar of Roasted red peppers. ( drained )
1/2 red onion or yellow
1/2 cup vegan mayo 
1/2 teaspoon fresh ground pepper
1 teaspoon garlic powder 
1 tea lemon zest

▪️dereotu ▪️maydanoz ▪️1/2 limon suyu ▪️pul biber ▪️kimyon
▪️tuz ▪️karabiber ⭕️ kinoaların kendine has kokusu olduğunu herkes bilir. O kokuyu hafifletmek için kinoamızı 3 4 su yıkayalım ⭕️20 dakika kadar sıcak suda kinoaları bekletelim ki güzelce şişsin ⭕️ sonrasında 2 bardak kaynak su ile kinoaları pişirelim. Pişirdikten sonra kenara alalım soğumasını bekleyelim. ⭕️soğanları küçük küpler şeklinde keselim zeytinyağı ile kavuralım. Pembeleşince salçamızı ekleyelim ve 3 4 defa da böyle karıştıralım soğumaya bırakalım. ⭕️domatesi sivri biberleri taze soğanı ve yeşillikleri ufak ufak doğrayalım. ⭕️tüm malzemeleri bir kabın içerisinde karıştıralım ve üzerine limonumuzu sıkalım. İsteğe göre nar ekşisi de koyabilirsiniz.

{NEW} Crock Pot Chicken Fajitas 🌮
{ We've got your taco Tuesday covered all. Winter. long. OH MAN...these are tasty! 🤤

about 4 servings

Ingredients:
2 lbs boneless skinless chicken breasts 
15 ounce jar diced tomatoes
a red, orange, yellow and green bell pepper, cut into strips
1 large onion, sliced
5-6 celery stalks, cut into strips
4 cloves fresh garlic, minced
1 jalapeno, sliced
2 tsps ground cumin
1 tsp smoked paprika
1 tsp ground coriander
1 tsp sea salt
1/2 tsp pepper
2 Tbsp fresh squeezed lime juice
1 Tbsp raw honey
3 Tbsps avocado oil, or extra virgin olive oil, divided
a small bunch of fresh parsley or cilantro, to garnish
lime slices, to garnish
6-8 sprouted grain tortillas (optional)
1 cup cooked brown rice (optional)

Instructions:

Place the chicken in a medium ziploc bag, or glass bowl together with 2 Tbsps olive oil, lime juice, honey and all seasonings. Gently combine the contents until the chicken is really well coated.
Refrigerate overnight, if time allows or at least 4 hours.

Lightly brush the bowl of a slow cooker with a teaspoon of oil. Place the marinated chicken breasts inside, then add jarred tomatoes with juice and spread into an even layer as shown.

In a large bowl, combine the sliced bell peppers, celery, onion, garlic, jalapeno and the remaining olive oil. Season with sea salt and pepper to your taste and mix well with your hands to combine flavors.

Place the veggies on top of chicken in the crockpot as shown.

Cover and cook on HIGH for 3 - 4 hours or LOW heat 7 - 8 hours, until chicken has cooked through and veggies are tender. 
I really prefer the low setting if time allows.

Remove chicken, and cut into strips, or shred, depending on your preference. Return to the crock-pot and season with additional sea salt to taste. Gently toss.

Serve in warmed sprouted wheat tortillas or with cooked brown rice and garnish with fresh chopped parsley/cilantro and lime wedges. Enjoy!

Bucket list tick done!!! Had the most amazing time @pajamasandjameatery I wish we could spend the whole day there just enjoying the treats drinking coffee and having endless conversations with my friends! Flying back to Nelspruit today leaving the Franschhoek mountains behind! We had such a tough physical weekend, we climbed almost a 1000m in elevation constantly fighting a front wind blowing us of our feet! It was so cold it felt like the wind cut right through you. We climbed and walked for 13 hours! It’s was mentally challenging and so exhausting but so worth the time with God. We did Arise. Arise is a three-day event at Franschhoek in Cape Town, that challenges character and builds trust and unity. The weekend starts on a Friday night and ends on the following Sunday afternoon. This period of time is viewed as one endless day. During the weekend, women turn over their watches, phones, wallets and car keys. Only the items on the packing list provided are allowed. No extra food. No cigarettes. No alcohol. The women walk considerable distances carrying their backpacks with their equipment. Along the route the spiritual leaders of Arise speak short messages to take women on a discovery (Experiencing God, their Godly Identity and Practical Living), often followed by a practical assignment to build on the Biblical lesson. God is calling you to Arise. Greek Salad Cold Lunch Boxes 🍅🌱
{Prep some for your week ahead! 💪} .
makes 2 servings

Ingredients:
2 sprouted wheat pitas, sliced into triangles 
1/2 cup cherry tomatoes, halved
1/2 cup thin sliced cucumber
1/2 cup chickpeas, rinsed and drained
1/4 cup Kalamata olives, pitted and halved
1/4 red onion, sliced thin
1/4 cup homemade Tzatziki sauce
1 Tbsp fresh chopped parsley leaves 
Instructions:
In 2 separate airtight containers or lunchboxes, add ingredients equally as shown. 
Cover and refrigerate for up to 3 days.
I like to keep my pita bread separate until packing up to go (ready to eat), then I place it in the lunchbox - last minute.
