Preparing the sunchoke.
The soil is an aged compost that has been packed with spent coffee grounds, cherry pits and all other vegetable matter from a kitchen. Roasted at 250°c for 3 hours prior to use.
The Artichokes are roasted at 95° for 12 hours. Slightly sweeting and inbeding tones of a smokey campfire.
Always looking a different ways of cooking. This was inspired by the Peruvian Huatia, where a clay is mounded has a fire lit within. Once the fire goes to coals potatoes are place inside and the mound is collapsed. Slowly cooking the potatoes.

A #georgian#master#baker and his Tone, a #clayoven similar to the #tandoor from the #subcontinent or #tunur from #turkey .
He churns out brilliantly fluffy #flatbreads like Tone-s-puri, similar to the #naan from Northern India and Pakistan.
The Tandoor-Tunur-Tonaer-Tone is familiar from Norther Western China through Central and south Asia all the way to the flanks of Eastern Europe.
We were particularly excited to find the Georgian bakery in #lodz#poland and see this baker representing a Polish Georgian tee.
