I am really not a fan of #prawns . Yes I am Portuguese, but these are sourced from Mozambique.. Mozambique and Portugal are on 2 separate continents.. 🙄😏 #historyGeek#travelersLogic I have to empty out my freezer before we close for the holidays so I took these out and made Chicken Prawn stir fry and linguini pasta .. this literally took 10 mins to mix
Recipe below .. Boil your favorite pasta for 2 minutes under al dente - This is @woolworths_sa linguini and I boiled it for exactly 8 minutes.
I used unshelled, headless prawns.. marinated in hot green chilli paste, garlic, ginger, low sodium soy sauce and lemon juice. If you are a huge salt eater, adjust the salt.
Cut chicken fillet into cubes - same weight as the prawns.. In a large pot, heat a swirl of olive oil to smoking point (you can use any other stir fry oil like sesame or peanut)
Add a table spoon of ginger garlic mix of your choice. Fry for 2 minutes until the oil absorbs the flavors. Add chicken and soy sauce. I added coarsely crushed black pepper and @robertsonsspice Crushed red chillies (which is HOT). Once the chicken is half way cooked, add mushrooms of choice. Stir for a few minutes. Add strips of colored peppers, the prawns and the marinade, frozen peas and frozen corn. At this point I added chopped spring onions.
Add pasta, close the lid. Steam for 5 minutes
Remove the lid and stir fry until the bottom of the pan has some stickiness. Add soy or sweet chilli sauce to taste to make it saucier, if you like.
Garnish with chopped coriander and sesame seeds. Serve piping hot (I use a fork #blasphemy 😂😂)
I'm laying on my bed eating chocolate .. recounting the events and random conversations I've had today .. A conversation with an old colleague who reminded me that when I worked in Maputo, until my bank balance was ZERO, I wasn't happy 😂.. and I told her of my current life and the downgrade I have made in order to get to #livingmybestlife that I have today and she was completely gobsmacked that I turned a 360 degree.. Then she reminded that I'm a total #kickass#bossbabe and my ambition has always been the thing that makes me go the extra mile .. I asked her if I should have stayed in insurance and her answer was "nope. You were born to be a #lawyer "
I just realised that at least someone who isn't my family is proud of me .. The other random thing was the incessant heat of today .. it was real feel 40 degrees and I felt like the girl in the pic .. I wanted to pull my skin off
Today I am grateful for a blessing that I had to give up to live my best life.. after I got divorced, I focused solely on my career and my ambition; as well as being my little girl's sole parent.
Between work, university and my little girl, being a woman took a back seat.
My amazing mother actually dished out into my plate on days of extreme fatigue or stress.
This doesn't even count the amount of recipes passed down to me, from the time I was married, that I had forgotten.
Living alone has changed all of that. If I don't cook.. I will starve. I have had to learn everything from scratch. Like this basic mutton akhni. I have memories of making this like a boss when I was married in London.. but cooking for 1 is a different ball game. This is literally 500g of meat and half cup of rice.. and it will give me 5 meals 😂

So I fell off my diet tonight smh... I was craving pasta which meant my body needed a carb lol. I made orecchiette pasta with homemade arrabbiata using chilis from my mini herb garden and fresh burrata cheese...had steak bc protein and roasted bimi bc veggies. My cooking skills keep me fat some days when I make what I feel for.
