Week 2 of my personal challenge not to waste food and get creative in using things I have on hand. Pic #1 - mini spinach pies. Leftover @wewalkausa puff pastry from my pot pies last week (the great thing about this puff pastry is that it is found in refrigerator section so any not used for a recipe keeps well in fridge). I had spinach and feta cheese I needed to use up, so sautéed an onion, garlic, spinach. Added some lemon juice, feta and the couple of tablespoons of grated Parmesan I had left. A two bite appetizer! Also added some @cavenders Greek seasoning. Yummy. Pic #2 - corn chowder. I had frozen some fresh corn from the summer, so sautéed an onion, cooked some potatoes that were ready to go, added the fresh corn, milk and a couple of splashes of half and half. I can’t eat corn, but my Mom said it was yummy. My brother is coming to visit, so will have plenty of things for him to taste.
