Chocolate banana cake 🍫🍌This light and fluffy gluten free cake smothered in chocolate icing makes for the perfect afternoon snack or dessert 😍
125g of butter • ¾ cup of caster sugar • 2 eggs • 1 cup of mashed banana • 1 tsp of vanilla essence • 1 tsp of bicarbonate of soda • 2 tablespoons of hot milk • 1 ¾ cup of @orgran_healthandnutrition plain flour • 1 tsp of baking powder
1 cup of icing sugar
2 tablespoons of cocoa 40g of butter (softened) 1 tablespoon of milk
Preheat your oven to 160 fan forced and line your cake tin with baking paper. Beat your butter and sugar together until they are light and fluffy. Now beat in your eggs one at a time and then mix in your bananas and vanilla essence. In a separate bowl mix your milk and baking soda together, and then gradually stir into your banana mixture. Sift in your baking powder and flour mixture and then fold until the mixture is combined. Pour your mixture into your lined baking tin and bake for 40-45 minutes or until cooked (I always check by inserting a clean skewer into the cake, if it comes out clean and is golden on the top, your good to go) Leave your cake in the tin for 5-10 minutes before allowing it to cool completely on a wire rack. To make the icing sift your icing sugar and cocoa together in a medium size bowl then add your butter and milk. Use an electric mixer on a low speed to mix the ingredients until combined, then gradually increase the speed to medium for 1-2 minutes. Then pour over your cake and serve.

☀️🍴🍨🍫🍪🥜 Vegan ice cream sundae (vegan 🌱👍🏼), done with vegan cookie dough ice cream 🍪, a scoop of their Planet Earth 🌎 (blue ice cream, and embedded with matcha cake 🍵 🍰), topped with walnuts, chocolate syrup 🍫, cacao nibs, and sprinkles (since there was no coconut whip 🥥 for my visit). Pick any of your two favorite vegan ice cream flavors (from a list of 10, regular has 15 options), and see their rendition of a classic summertime treat. Does anyone else eat ice cream during winter ❄️🍦, or is it just me, love it being as cold as it is outside? 🤣 Either way, some time off during my day, and made a quick lunch stop at my local Van Leeuwen of West Village for some ice cream, it did feel a bit eerie how I was the only person present for some ice cream 🍦, but nonetheless, it’s been months since I’ve had a sundae here, so ordered some of my favorites, such as chewy chocolate chip cookie dough, and a smooth + plentiful scoop of their Planet Earth blend. Along with the presentation, I was impressed! 😍 Rich chocolate overflowing from this, their signature creamy coconut/cashew milk blend for ice cream felt like a suitable match, and other conventional ice cream toppings were also available (crunchy walnuts, or plenty of sprinkles). A while later, I’ve ate and walked around West Village and led up to Washington Square Park, while enjoying this piece. Either way, loved the ice cream, and hope to do this soon! 🤗
