When you ask why handcrafted chocolate is expensive. It’s handcraft as the name suggests. Ask p ‘Took how hard she’s been doing with her sweat and tear. You can ask her even that she finishes the winnowing with the best machine Packint, she isn’t yet happy to and wants to rid as much husk as possible. Don’t mess with her lah!
Moist controlled bean room at Kad KoKoa. This is where the organic Chiangmai award winning beans are stored after we hand sort them. Sorting the beans is important in making good chocolate after we work with Chiangmai farm in the fermenting and drying the beans.
Stay tuned for more varietals and process by Kad KoKoa.
Dropping this Sunday at the Kitsilano Farmers Market is our newest limited release. It's fiery, it's hot, and it'll definitely warm you up on a cold autumn night. Earlier this year, Stefan and @lfitzgerald visited the Mexican city of Oaxaca, where cacao is deeply rooted in the culture. Inspired by the many varieties of spiced drinking chocolates, he decided to bring home some ancho and guajillo chillis, cinnamon bark, sapote seed, and Tabascan cacao beans found while browsing the local markets- just enough to fit in his suitcase to make this single limited release batch of 50 bars. It's the final Kits market of the year, we'd love it if you came by for a chat!
Why do we lead trips to origin? The answer is simple: the foundation of an authentic and genuine relationship with the raw materials you depend on for your chocolate can emerge on these trips. Our goal is to facilitate a deeper understanding of the true interdependence within this global supply chain. It brings our work, connecting makers and farmers, full circle and allows chocolate makers around the globe to meet the farmers of their cacao, deeply understand their work, and build lasting relationships. 📸 @cacaohunters

Have you checked out the new #webseries by Megan Giller @chocolatenoise? The creators and stars of the show say it's a mix of Drunk History and Comedians in Cars Getting Coffee - but with #women . It's full of #culinaryhistory (which I love!) and loads of chocolate cameos (also a fan of those!). Find the links at @whatwomenate or search for the videos on @YouTube.

🧠🍇 Balsamic Beauty Berry Brains🍇🧠 - candied beauty berries folded into white chocolate balsamic ganache; available in deluxe 💀s or basic boo bonbons. The 4th of our 4.5 Hallowed Specials is another envelope pusher; despite its abundance in NOLA and the South, most people have never tasted these more-herbal-than-sweet berries, and the balsamic ganache pairing is to die for! 💀 Special thanks to my forage daddy @breathingwaters.gardens for the first taste and inspiration; my ✨awwwesome✨ customer Linda for the super fresh stash from her backyard; and my friend Megan of @babyt_rexfarms for gettin me more from @laughingbuddhanursery for the photo! 🙏❤️ It takes a village, yeah! ❤️🙏
One more day until our first factory tour! We are so excited to show you how it all goes down. We've got some beautiful new art in the tasting and education room that ties it all together. #chocolatetellsastory

Pure 70% ground chocolate for easy melting is ready for you to take home Single Origin Chocolate to mix at home. Here we mix with hot water, milk and a vegan milk. Feel free to adjust the thickness and sweetness to your like. You can melt in a cup or boil the milk first in a small sauce pan. Enjoy it your way with marshmallow, tangerine, yuzu, orange or lemon peels or zest!
It’s vegan! *n.b: this is not cacao nibs nor Dutch Process cocoa powder that is sold in any supermarket. It is crafted chocolate that is yet to temper as a chocolate bar.
