Chocolate Avocado Mousse 🥑 🙌🏻 I saw this recipe and couldn’t wait to try it! It’s light and fluffy just like mousse with tons of extra fiber and healthy fat from avocados. The cacao gives it a rich chocolate flavor and a frozen banana makes it super creamy. Will be making this on repeat. ☝🏻

2 T cacao powder
1 frozen banana
1/4 cup plant based yogurt (I didn’t have any so I used cashew cream 👌)
1/2 tsp vanilla
4 T almond milk
Blend in a high speed blender until smooth
I have been talking to a dear, dear friend (someone I ❤️ very much ) who is struggling...like REALLY struggling. While we were talking about her struggles, she mentioned to me that I wouldn’t understand self-esteem issues. It made me realize that I don’t talk enough about how I’ve struggled with self-esteem throughout my life. And because sharing is therapeutic for me and it empowers you to know that you CAN BE that amazing person resting inside of you is part of my mission, I need to share more about the times in my life I hated looking in the mirror. Not necessarily because of how I looked...I just didn’t always like WHO I saw. And if I can get through the struggles (and my dear friend can get through hers) and come out the other side as we are today...so can you.
I talk a lot about struggling to feel like a good mom. I also talk a lot about feeling like a stranger to myself after having the boys. Both of which have negative effects on my self-esteem.
But, what I DON’T talk a lot about is when I was younger. ❤️ Man, I was picked on soooo much for being fat. By “friends”, by relatives, by what seemed like pretty much everybody.
I remember this one time, working in the fields corn detasselling, when I went to eat my lunch, it was gone. Somebody had snuck into the bus, found my lunchbox, and ate my lunch. He literally went through all that trouble at the risk of getting INTO trouble to do it. Today’s me wants to be like...SERIOUSLY, DUDE⁉️ Anyways, when I went to eat lunch, it was gone. So I went over to tell my sister...she happen to be sitting in the popular people circle...I told her my lunch was gone and one the the guys in that circle spoke up and said, in front of everybody...”I did you a favor and ate it. It’s not like you need it anyways.” Yup, that happened.
I was probably around 12 or 13 when this happened. It is one of those memories etched into my brain. 👇👇

Good morning everyone!!!! Today cocoa pancakes!!! 🤗😋❤️ With this mix I made 13 pancakes! Definitely I am going to put them in a ziploc bag and directly to the fridge! Hehe... here is what we need:
1 1/4 cup of flour
1/4 cup of cocoa powder
1/4 teaspoon of salt
2 tablespoons of sugar
I added 1/2 teaspoon of baking powder
Mix everything in a bowl and set aside. In another bowl add 2 eggs, 1 1/4 cup of milk, 1 tablespoon of vanilla extract and 2 tablespoonsnof melted butter or coconot oil, mix it and add to the other mix... once you mix everything tou can add chicolate chips too, but for me, with the cacao powder was enought 🤗 use a 1/4 cup measure to gran the mix and start making your pancakes, don’t forget to add dome butter or oil on the pan! Wait until bubbling to flip it over, and another minute to remove from pan. For toppings I added banana slices, strawberries, blueberries, honey, amaranth and almond!!!!
