The best thing about summer is the grillin. A hot day requiresalternative cooking methods and I like to grill as much as the next guy/girl. I am working on reducing the amount of carbs we eat and upping the amount of veggies. So supper was salmon and pork loin, plus carrots and grilled cauliflower with chimichurri sauce. I instantly fell in love with the sauce/seasoning when I had it in Mexico and when I saw the recipe for it with cauliflower I had to try it.
I didn't have fresh ingredients that it normally uses but I made due with what I had. Plus I used oregano oil. Just 2 drops was enough. The whole meal came together great and my first attempt at chimichurri turned out pretty good. I will definitely keep trying new grilling recipes.

PS, can you tell I'm addicted to cauliflower rice? Honestly, I never thought this day would come. You couldn't have paid me to eat cauliflower even three years ago!
