Crispy Chilli Beef used to be my favourite Chinese takeaway dish, before becoming intolerant to soy and gluten. I hardly ever have Chinese food anymore because of the obvious challenges - but have this fantastic recipe for my favourite dish which we made tonight. It took forever and the kitchen is an absolute state.... but the end result was soooo worth it!! Accompanied by homemade egg fried rice. Channies chilli beef fried rice
I recently bought a salmon cut joint of beef from morrisons. It was in an offer on their online delivery deals. It was £11.55 from £17.43 and was 1.3kg. I shop from the meat man and fruit and veg man on the market, Lidl, Aldi, Asda and the odd delivery from Morrisons. This was one of them and I decided to use this delivery to optimise on the meat, poultry and fish deals.
This amazing joint of meat made a roast dinner for 4 adults, 4 toddler sized roast dinners for the freezer and this amazing dinner for 2.
It was a real, 'have an idea in your head and create it in the pan as you make it' kind of recipe. Here's what it ended up containing:
1 whole pepper
1 pack of runner beans
Half a pack of bean sprouts
6 sliced button mushrooms
The remaining beef cut into strips
2 bulbs of chopped pak choi
Handful of cashew nuts
2 large chilli's
1 red onion
100g boiled brown rice
Tbs ginger & garlic paste
Salt and pepper
Combine vegetables (exclude the bean sprouts at this stage) and nuts in a pan with Sesame oil and the paste on a medium heat and stir so it doesn't stick. Keep cooking and stiring occasionally until you can tell its all half done and then add a healthy glug of soy sauce. I always say a glug as I personally think this is taste dependent so its entirely down to you how much you think you should use. Add a few dashes of cider vinegar and season with a little salt and pepper. The beef was already seasoned when I roasted it so it didnt need anymore.
Add a little hot water and more soy if you think it needs it. Now add the boiled rice and cooked, stripped beef, bean sprouts, 2 tsp of honey and stir it through. I put the lid on at this point and turned the heat down so it could absorb the flavour.
After approximately 5-7 minutes, take off the lid, give it another stir to combine again and serve. This sort of dish is nice topped with fresh Corriander and raw sliced spring onion. Majorly tasty. We like heat so I used two large chilli's but one will be fine if you're not huge on heat. It will still be delicious 😋 Enjoy!
