MEXICAN CHILI with VEGAN SOUR CREAM and Tortilla chips...Chili originated from what is now northern #Mexico and southern #Texas . #Vegetarian#Chili acquired wide popularity in the U.S. during the 1960s and 1970s with the rise of vegetarianism. The dish is usually served with toppings like grated cheese, diced onions or sour cream accompanied by saltine crackers, tortilla chips, cornbread or tortillas. Here is my vegan version:
✨Recipe for the Chili✨
1/2 cup each dry black-eyed beans & whole green mung beans, soaked together in water overnight
1/2 cup dry green peas/green vatana, soaked separately in hot water with 1/2 tsp of baking soda overnight
1/2 cup onions, finely chopped
1 tsp minced garlic
1 cup tomato puree
2 cups fleshy tomatoes, quartered
1 Tbsp tamarind, soaked in half cup of water for 30 minutes
1 tsp ground pepper
1 tsp chilli powder
1 tsp roasted and ground cumin
1/2 tsp turmeric powder
1 tsp dried mixed herbs/oregano
1 tsp jaggery/molasses
Salt as per taste
🔸Drain water from both the beans and peas the next morning and wash them once. Place all the three beans together in a pressure cooker with 2 cups of water and cook for one whistle. Make sure they don't turn mushy by overcooking.
🔸In a large pot, place 1/2 tsp of oil. Once heated, add onions & garlic and sauté till the onions turn translucent. 🔸Now add all the powders, herbs and jaggery. Cook for a minute.
🔸Time now to add tomato puree and tomatoes. Cook till the tomatoes lose shape.
🔸 Squeeze the tamarind. Strain and discard any fiber and seed. Add the strained tamarind water to the Chilli in the pot.
🔸Transfer cooked beans along with its water to the simmering Chili. Bring to a boil. Add more water if needed. Finish off with salt.
✨Recipe for Vegan Sour Cream✨
Soak 1/2 cup of cashews overnight and drain. Blend together cashews, 1/8 tsp salt, 1 1/2 Tbsps of lemon juice, 1/2 Tbsp nutritional yeast(optional) and 1/4 cup of water to a fine paste. Sour cream is ready!
